Steps:
- In a large pot, cook penne to taste (see packaging for details).
- Add oil to a deep, heavy based frying pan. Chop onion and cook in pan along with garic and chilli on high heat until oninion is soft.
- Add chopped sun dried tomatoes, tuna and pasta sauce.
- Reduce heat to a simmer.
- Add pine nuts.
- When pasta has cooked, drain and add to frying pan along with chopped, fresh basil.
- Stir pasta through sauce until well coated.
- Serve in large, open bowl.
- Top with slices of fresh parmesan cheese.
- You can add pretty much anything to this dish - olives, egg plant, artichoke hearts, capers - even anchovy fillets are lovely.
- You can also remove the tuna from the dish and add 4 or 5 rashers of chopped bacon instead. This is VERY nice.

CHILLI TUNA PASTA SALAD
One of my favourites...for best results be sure to use good quality tuna. I usually use Sirena brand tuna.

Steps:
- Cook the pasta in a large pan of boiling water, uncovered, until it is just tender. Drain the pasta, then rinse it under cold water.
- Meanwhile, boil, steam or microwave the beans until just tender, then drain. Drain the tuna over a small bowl, reserving the oil for the Dressing. Flake the tuna into large chunks with a fork.
- Just before serving, combine the pasta, beans tuna, herbs and capers is a large bowl then drizzle with the Dressing. Serve the salad topped with rocket leaves.
- DRESSING.
- Combine all of the ingredients with the reserved chilli oil in a jar and shake well.

SPICY TUNA PASTA
This is a recipe I tried at a friends house once. The combination is actually really tasty, I have made it unsuccessfully and successfully. The difference being the chilli peppers. The heat works so well with the tuna. It's LOW FAT too!!!! Dairy free if served without sour cream. Just to clarify spring onions/scallions I consider to be the same thing.

Steps:
- Heat olive oil in pan, add garlic and chillis and saute lightly, do not burn.
- Add bell pepper and mushrooms and saute over medium heat, until soft.
- Add tin of tomatoes and oregano and simmer about 5 minutes.
- Add drained tuna chunks and stir in.
- When tuna is heated, take sauce off heat and add spring onions.
- Stir in pasta, season to taste.
- Serve with dollops of sour cream.

- Cook the pasta. Bring a large pot of water to a boil and cook the pasta according to package instructions. Once it's done cooking, drain the hot water then rinse with cold water. Allow the cold water to drain well. Rinsing will stop the pasta from cooking further and reduce the stickiness of the noodles.
- Make the dressing. In a medium bowl, whisk together the Greek yogurt, mayonnaise, relish, hot sauce, apple cider vinegar, salt and pepper.
- Assemble the salad. In large bowl, combine the cooked pasta, tuna, bell pepper, carrot, celery and red onion. Gently mix in the dressing until all ingredients are evenly coated. Cover and chill in the refrigerator for at least an hour before serving. Store any leftovers in a sealed container in the refrigerator and eat within 4 days.
