Chilli & ginger nuts image

Spiced with chilli, cayenne and curry powder, these nuts make the perfect snack for a drinks party

Ingredients

1 egg white
½ tsp chilli flakes
½ tsp medium curry powder (or gluten-free alternative)
½ tsp cayenne pepper
½ tsp ground ginger
5 tbsp soft brown sugar
350g mixed nuts

Steps:

Heat oven to 200C/180C fan/gas 6. Whisk the egg white briefly to break it up. Add the spices and sugar, and whisk to combine. Add the nuts and stir or toss to coat.
Line a baking tray with baking parchment, then pour on the nuts. Sprinkle with salt to taste. Roast for 10-15 mins. Use a spatula or spoon to break up and toss the nuts halfway through cooking. Leave to cool completely, then break up to serve.

Ingredients

12 ounces mixed nuts
1 teaspoon Mexican chili powder
1 teaspoon seasoning salt
1 teaspoon curry powder
1 tablespoon Worcestershire sauce
1/4 cup cooking oil

Steps:

Combine chili powder, seasoning, curry powder with the Worcestershire sauce.
Pour over nuts and stir until well coated.
Heat oil in a saucepan until hot, then pour over nuts and mix thoroughly. Spread the nuts on a tray lined with nonstick baking paper and bake in a 350 degree oven F. for 10-15 minutes or until golden brown.
Cool and store in airtight containers.
