BASIL SHRIMP
This was given to me by my friend, Elaine. It is one of the most delicious shrimp recipes for the BBQ I have ever had, and it is so easy. My son would eat the whole recipe if I didn't watch him.

Steps:
- In a shallow, non-porous dish or bowl, mix together olive oil and melted butter. Stir in lemon juice, mustard, basil, and garlic, and season with salt and white pepper. Add shrimp, and toss to coat. Cover, and refrigerate for 1 hour.
- Preheat grill to high heat. Remove shrimp from marinade, and thread onto skewers. Discard marinade.
- Lightly oil grill grate, and arrange skewers on preheated grill. Cook for 4 minutes, turning once, or until opaque.

SHRIMP-AND-JICAMA SALAD

Steps:
- In a large bowl, combine the jicama, minced coriander leaves, mint, salt, sugar and lime juice and toss. Split the shrimp in half and add them to the salad. Cover and refrigerate from 1 to 4 hours. Garnish with the peanuts, shallots and coriander and serve.

Steps:
- Mix rice vinegar, sugar, jalapeno pepper, and cilantro in a bowl; stir until sugar has dissolved.
- Place jicama and 1/3 of the vinegar dressing in a resealable plastic bag; seal and refrigerate for 1 hour.
- Place shrimp in a separate resealable plastic bag with 1/3 of the dressing; seal and refrigerate for 1 hour. Refrigerate remaining vinegar dressing.
- Arrange alternate slices of tomatillo and tomato around the edge of a salad plate.
- Mound marinated jicama in the center of the plate and top with marinated shrimp.
- Pour remaining 1/3 of the dressing over salad.

- Slice the jicama halfway through from pole-to-pole to create a slit, being careful not to pierce any farther than its center. Spiralize with Blade D on The Inspiralizer (or whichever blade makes spaghetti noodles on your spiralizer.) Briefly set aside.
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. When the oil is shimmering, add the onion and cook for 3-5 minutes until soft and translucent. Add the garlic and jalapeño and cook for 30 seconds or until fragrant. Add the chili powder, oregano, cumin, and paprika and cook for 1 minute to toast the spices.
- Stir in the tomatoes, beans, and broth. Increase the heat to high and bring to a boil, then lower to a simmer.
- Add the shrimp and lime juice and cook for 5 minutes until the shrimp are bright pink and opaque.
