CHILLED TOMATO CONSOMME

4 pounds fresh tomatoes, roughly chopped
4 green onions, chopped
1/2 lemon, juiced
1/2 cup fresh basil leaves
2 garlic cloves, peeled
Kosher salt and freshly ground black pepper
1/2 beet root, peeled and sliced
Fresh chives, for garnish
Special equipment: Butcher's twine, 3 to 4 large pieces cheesecloth (about 2 by 2 feet)

Steps:

  • Put the tomatoes, green onions, lemon juice, basil, garlic and salt and pepper, to taste, into a food processor and run until blended and slushy. Put 4 layers of clean cheesecloth in a deep bowl. Pour the tomato mixture into the cheesecloth. Tie up the corners of the fabric. Add the slices of peeled beet root to the bowl to color the liquid. Hang the bag from a shelf in the refrigerator with the bowl underneath for a couple hours (or longer). Discard the beetroot. Ladle the consomme into chilled clear or white bowls and garnish each with a single piece of chive.

1 1/2 lbs peeled and chopped beetroots
10 spring onions
1 sprig thyme
1 garlic clove (crushed)
2 parsley sprigs
1 bay leaf
orange rind
2 1/2 pints water
1 cucumber
1 tablespoon red wine vinegar
1 tablespoon lemon juice
salt and pepper
5 fluid ounces natural yoghurt
2 tablespoons chives (chopped)

Steps:

  • put the prepared beetroot into a large pan with the spring onions,thyme,garlic,parsley,bay leaf and orange rind,.
  • pour in the water and bring to the boil then simmer for 1 hour.
  • peel and chop the cucumber and add to the soup and cook for a further 10 mins,.
  • pour the soup into a large bowl through a sieve and leave to fully drain through
  • serve with plain yoghurt and chives.

Lycopene is part of the carotenoid family and gives tomatoes, bell peppers, watermelon and other red vegetables and fruits their color. It's much heralded for its antioxidant properties in the body, meaning it can search for and stabilize damaging free radicals. The body best absorbs lycopene when combined with a little fat, so toss fresh tomatoes with olive oil or add grated Parmesan to your spaghetti with tomato sauce. Betalain is also one of nature's red pigments and is found primarily in red beets and red Swiss chard. Studies have indicated that it also has antioxidant properties and suggest that betalain is better absorbed when paired with vitamin C (the red bell pepper in this soup will help on that front).

3 tablespoons extra-virgin olive oil
6 sun-dried tomatoes, plus 1 tablespoon finely diced
Large pinch hot paprika
1/2 cup jarred sliced pickled beets, plus 1/3 cup pickled beet juice
1/2 cup drained roasted red peppers, plus 1 tablespoon finely diced
1 small clove garlic
Kosher salt
1 medium ripe tomato, chopped
Store-bought beet chips, for garnish, optional
Sour cream or yogurt, for garnish, optional

Steps:

  • Combine the oil, sun-dried tomatoes and paprika in a small skillet. Bring to a low simmer over medium-low heat and swirl until the tomatoes soften, 2 to 3 minutes. Set aside to cool completely.
  • Combine the sun-dried tomatoes and oil with the beets and beet juice, peppers, garlic and 3/4 teaspoon salt in a medium bowl. Let sit at room temperature for at least 30 minutes for the flavors to meld. Puree in a blender with 1 cup cold water until very smooth. Transfer to a bowl or large liquid measuring cup and refrigerate until chilled, at least 1 hour.
  • Divide the soup evenly among four bowls. Sprinkle the chopped sun-dried tomatoes and peppers in each bowl. Garnish with beets chips and a dollop of sour cream, if using.

3 lb medium beets without greens (8 medium; about 4 lb with greens), scrubbed well and trimmed, leaving 1 inch of stems attached
4 qt water
1 1/4 to 1 1/2 lb smoked turkey legs or wings
2 carrots, cut into 1/2-inch pieces
2 celery ribs, cut into 1/2-inch pieces
1 large onion, cut into 1/2-inch pieces
1 garlic clove, smashed
4 sprigs fresh dill plus 2 tablespoons chopped fresh dill
1 Turkish or 1/2 California bay leaf
1 teaspoon salt
1/4 teaspoon whole black peppercorns
2 teaspoons fresh lemon juice
2 teaspoons sugar
Accompaniment: liver and mushroom pirozhki LINK

heavy-duty (sometimes labeled "fine") cheesecloth

Steps:

  • Boil beets, covered, in water (4 quarts) in a 6- to 8-quart pot over moderate heat until tender, about 40 minutes. Transfer beets with a slotted spoon to a plate to cool slightly, reserving cooking water. When beets are cool enough to handle, slip off skins. Cut 1 beet into 1/4-inch dice and reserve for garnish. Cut remaining beets into 1/2-inch pieces and return to cooking liquid in pot. Add turkey, carrots, celery, onion, garlic, dill sprigs, bay leaf, salt, and peppercorns and simmer, partially covered, 1 1/2 to 2 hours. Pour soup through a dampened cheesecloth-lined sieve set into a 3-quart heavy saucepan, discarding solids. Measure soup: If there is more than 6 cups, boil in cleaned pot until reduced; if there is less, add enough water to total 6 cups.
  • Skim fat from consommé, then add lemon juice and sugar and heat until hot.
  • Divide diced beet and chopped dill among 8 shallow soup plates and ladle consomm on top.

2 teaspoons grated fresh ginger
1 tablespoon dark jamaica rum
1 lemon, juice of
lemon peel (to garnish)

Steps:

  • Mix the first three in a saucepan
  • Then heat for five minutes.
  • Add the fresh squeezed juice and chill for 30 minutes.
  • Serve Chilled over ice in stemmed glasses and garnish with peel.

10 large or 20 small precooked (canned or vacuum-packed) beets
1 onion, peeled and mostly quartered, root end attached
2 1/2 teaspoons salt, or to taste
2 tablespoons sugar, or to taste
1/4 cup lemon juice, or to taste
Chilled boiled potatoes, for serving, optional
Sour cream or yogurt, for serving

Steps:

  • Using a food processor, pulse beets until finely chopped. Transfer to a large saucepan and add onion, salt and 2 1/2 quarts (10 cups) water. Place over high heat to bring to a boil, then reduce heat to low and simmer until onion is tender, about 40 minutes. Add sugar and lemon juice, and simmer for 10 minutes.
  • Remove onion and discard. Pour soup into a heatproof container and allow to cool to room temperature. Adjust salt, sugar and lemon juice to taste. Cover and refrigerate overnight. Serve chilled, with chilled boiled potatoes added to soup, if desired. Garnish with a dollop of sour cream or yogurt.

1/2 pound fresh beets
1/4 small red onion
3 tablespoons balsamic vinegar
1 tablespoon canola oil

Steps:

  • Scrub beets and trim tops to 1 in. Place in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 30-60 minutes or until tender. 2 cups shredded fresh beets
1 cup shredded carrots
1 cup chopped onion
2 cups water
1/2 teaspoon salt
2 cans (14-1/2 ounces each) beef broth
1 cup shredded cabbage
1 tablespoon butter
1 tablespoon lemon juice
Optional: Sour cream and chopped chives or fresh dill sprigs

Steps:

  • In a saucepan, bring the beets, carrots, onion, water and salt to a boil. Reduce heat; cover and simmer for 20 minutes. Add broth, cabbage and butter; simmer, uncovered, for 15 minutes. Just before serving, stir in lemon juice. If desired, top each serving with sour cream and chives or dill.
