1 pound extra-lean ground beef (95% lean)
2 cans (8 ounces each) no-salt-added tomato sauce
1 can (15 ounces) black beans, rinsed and drained
1 cup frozen corn
1 can (4 ounces) chopped green chilies
2 tablespoons dried minced onion
2 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
6 whole wheat tortillas (8 inches)
1 cup shredded reduced-fat cheddar cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink. Stir in the tomato sauce, beans, corn, green chilies, onion, chili powder, cumin, garlic powder and oregano; heat through., In an 11x7-in. baking dish coated with cooking spray, layer half of the tortillas, beef mixture and cheese. Repeat layers. Bake, uncovered, at 350° for 25-30 minutes or until bubbly. Freeze option: Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

This flavoursome casserole layers tortilla wraps filled with pork, beef, red wine, beans and chilli sauce and topped with a creamy cheese sauce.

1 tablespoon olive oil
1 onion, finely chopped
1 garlic clove, finely chopped
8 ounces ground beef
8 ounces ground pork
1 (14 ounce) can chopped tomatoes
2 (14 ounce) cans kidney beans in chili sauce
7/8 cup red wine
1 bunch fresh cilantro, roughly chopped
8 flour tortillas
1 1/4 cups sour cream
2/3 cup heavy cream
4 ounces sharp cheddar cheese, grated

Steps:

  • Heat the oil in a large pan, add the onion and garlic and cook for 5 minutes.
  • Increase the heat, add the ground meats in batches and cook for 3 minutes or until browned.
  • Stir in the tomatoes, chili beans and red wine and bring to the boil. Simmer for 25-30 minutes.
  • Stir the cilantro into the chili and season to taste.
  • Preheat the oven to 400°F
  • To assemble the wraps: spoon the chilli mixture down the centre of each tortilla. Fold over 1 side of the tortilla, then fold over the remaining side. Place seam side down in a large shallow ovenproof dish.
  • Spoon over the soured cream and heavy cream and sprinkle over the cheese.
  • Bake in the oven for 15 to 20 minutes until bubbling hot and golden brown.
  • Serve with a large dressed salad.

1 (1 1/4 ounce) package tex mex chili seasoning mix
1 (14 1/2 ounce) can diced tomatoes, undrained
1 (15 -16 ounce) can kidney beans, undrained
1 (8 3/4 ounce) can whole kernel corn, drained
1 (4 1/2 ounce) can chopped green chilies
6 flour tortillas (8-inch)
2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350°F. Brown meat in large skillet on medium-high heat. Drain fat. Stir in Seasoning Mix, tomatoes, beans, corn and green chiles. Bring to boil. Reduce heat to low; cover and simmer 10 minutes, stirring occasionally.
  • Cover bottom of greased 11x7-inch baking dish with 3 tortillas, overlapping as needed. Layer with 1/2 of the chili mixture and 1 cup of the cheese. Repeat tortilla, chili and cheese layers.
  • Bake 30 minutes or until heated through.

My family loves this recipe. I usually do not add the green chiles. Frequently we have this as a vegatarian meal with out the meat. I found it on a McCormick recipe card many years ago.

1 lb ground beef or 1 lb ground turkey
2 (8 ounce) cans tomato sauce
1 (14 1/2 ounce) can black beans, drained and rinsed
8 3/4 cups whole kernel corn, undrained (1 can)
1 can chopped green chili, undrained
2 tablespoons chili powder
2 tablespoons of minced onions
1 teaspoon ground cumin
1 teaspoon garlic salt
1/2 teaspoon oregano leaves
6 (8 inch) flour tortillas, divided
2 cups shredded cheddar cheese, divided

Steps:

  • Preheat oven to 350°F In a large skillet, brown ground beef over medium high heat, drain. Add tomato sauce, beans, corn and green chiles. Stir in next 5 seasonings. Bring to a boil and reduce heat. Simmer, uncovered for 15 minutes. In a 2 quart baking dish, coated with cooking spray, place 3 flour tortillas to cover bottom. Overlap as needed. Layer with half of chili mixture and half of cheese. Top with remaining tortillas, meat mixture and cheese. Bake for 30 minutes. Serves 8.
