Chili Crisp Ham and Cheese Omelet image

3 eggs
1 tablespoon water
1 tablespoon spicy chili crisp sauce
1 tablespoon butter
¼ cup diced ham
⅓ cup shredded Cheddar cheese

Steps:

  • Whisk eggs, water, and chili crisp together in a bowl.
  • Melt butter in a large skillet over medium heat. Add egg mixture and cook until egg is completely set, about 6 minutes.
  • Add ham and Cheddar cheese to one end of the cooked egg in the skillet. Flip the other side of the egg over the ham and cheese mixture. Cook until cheese is melted, about 4 minutes.

I love breakfast foods anytime of the day. A friend of mine recently commented that as much as I love breakfast, I didn't have many breakfast recipes posted. So here's my attempt to post more breakfast recipes for both of us to enjoy. lol.

1/2 lb breakfast sausage links
1 15-oz can(s) chili with beans
1 8-oz pkg mexican blend shredded cheese
2 Tbsp unsalted butter
2 large eggs
1/4 c olives, chopped
sour cream, for garnish

Steps:

  • 1. Cut the sausage into 1/4-inch chunks.
  • 2. In a medium skillet over medium-low heat, brown the sausages.
  • 3. When brown, add the chili and heat through 5 minutes.
  • 4. For an extra-cheesy omelet, stir in a handful or 2 of cheese.
  • 5. While this is cooking, heat an 8-inch skillet over medium-low heat and melt the butter.
  • 6. Beat the eggs with half the chives and pour into the pan.
  • 7. Cook until the egg forms a solid yellow circle.
  • 8. Cover half of the omelet with the sausage and chili mixture, reserving 1/4 cup.
  • 9. Add a layer of cheese, reserving 1/4 cup.
  • 10. Fold the omelet and top with the remaining chili and cheese.
  • 11. Slide the omelet onto a plate and garnish with a large dollop of sour cream and the remaining chives.

DAD'S CHILI CHEESE OMELET

This is the most requested breakfast at my house for birthdays!!! I had never heard of one until I married my hubby. So simple, yet so good!

1 (15 ounce) can chili with beans
3 -4 eggs, beaten well (per omelet)
1 cup shredded cheddar cheese
1/4 cup onion, diced
1 jalapeno pepper, diced (optional)

Steps:

  • In a small pan heat chili, and keep warm.
  • Make sure all your ingredients are ready before you begin.
  • Season 3-4 beaten eggs with salt and pepper.
  • Melt a small amount of butter or margarine in a small nonstick skillet.
  • Add in a little onion and jalapeno and saute for a few minutes (this can be skipped if you desire).
  • Add eggs all at once and swirl around pan, scraping and tilting edges to cook evenly.
  • When just slightly moist on top, place about 1/2 cup warm chili along half of the eggs and top with some shredded cheese, and additional onions and jalapenos, if desired.
  • Gently fold omelet over to form semicircle.
  • Slide onto serving plate and top with a spoon of chili and more cheese for presentation.
  • Repeat with ingredients and 3-4 eggs per omelette.

2 tablespoons butter
1 jalapeno pepper, canned (or roasted and peeled fresh)
1 slice monterey jack cheese, 1/4 inch thick, the length of the pepper
1 tablespoon water
3 eggs
1/8 teaspoon oregano
1/8 teaspoon garlic powder
1/8 teaspoon cumin
salt & freshly ground black pepper

Steps:

  • In a small nonstick skillet or omelet pan, heat butter until sizzling over moderately low heat.
  • Meanwhile slit the pepper lengthwise and lay flat, remove seeds if less heat is desired; lay pepper on top of cheese slice; whisk water, eggs and dry seasonings together.
  • Add egg mixture to the sizzling butter and turn heat up to medium-high; stir the eggs with a fork for 15 seconds.
  • As the eggs begin to set, smooth them with the fork while shaking the pan over the heat; place the cheese slice and pepper across the omlette, perpendicular to the pan handle and off-center (closer to the handle).
  • Grab the pan handle from underneath, hold the serving plate next to the front of the pan (opposite the handle) and slide the first half of the omelet onto the plate, folding the second half over it by tilting the omelet pan up and over.
