CHILI MAC CASSEROLE

This cheesy casserole uses several of my family's favorite ingredients, including macaroni, kidney beans, tomatoes and cheese. Just add a leafy salad for a complete meal. -Marlene Wilson, Rolla, North Dakota

1 cup uncooked elbow macaroni
2 pounds lean ground beef (90% lean)
1 medium onion, chopped
2 garlic cloves, minced
1 can (28 ounces) diced tomatoes, undrained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (6 ounces) tomato paste
1 can (4 ounces) chopped green chiles
1-1/4 teaspoons salt
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon pepper
2 cups shredded reduced-fat Mexican cheese blend
Thinly sliced green onions, optional

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large nonstick skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink, breaking meat into crumbles; drain. Stir in the tomatoes, beans, tomato paste, chiles and seasonings. Drain macaroni; add to beef mixture., Transfer to a 13x9-in. baking dish coated with cooking spray. Cover and bake at 375° until bubbly, 25-30 minutes. Uncover; sprinkle with cheese. Bake until cheese is melted, 5-8 minutes longer. If desired, top with sliced green onions.

This is a delicious layered dish of chili and macaroni and cheese, topped with tortilla chips and cheese for a nice crunch. Serve with a dollop of sour cream. My family loves it!

1 (16 ounce) package elbow macaroni
2 pounds lean ground beef
½ cup chopped onion
2 (8 ounce) cans tomato sauce
1 (14.5 ounce) can diced tomatoes
1 (14 ounce) can whole kernel corn, drained
1 (15 ounce) can kidney beans, rinsed and drained
1 (1.25 ounce) package taco seasoning mix
1 (1.25 ounce) package chili seasoning mix
1 (10.75 ounce) can condensed cheddar cheese soup
1 (10.75 ounce) can milk
1 cup shredded Cheddar cheese
½ cup sour cream
1 ½ teaspoons garlic powder
½ teaspoon salt
½ teaspoon black pepper
1 cup shredded Cheddar cheese
1 cup crushed tortilla chips
½ cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  • In a large skillet over medium heat, cook and stir the ground beef with onion until the meat is browned, about 10 minutes. Break the meat up into crumbles as it cooks; drain excess grease. Mix in the tomato sauce, diced tomatoes, corn, kidney beans, taco seasoning, and chili seasoning; bring to a boil, reduce heat to a simmer, and cook, stirring occasionally, for about 20 minutes.
  • Whisk the Cheddar cheese soup and milk in a saucepan until smooth, and bring to a simmer over medium-low heat. Whisk in 1 cup of shredded Cheddar cheese, 1/2 cup of sour cream, and garlic powder; season to taste with salt and black pepper.
  • Arrange the cooked macaroni into the bottom of a 10x15-inch baking dish, and mix with the soup mixture. Pour the ground beef chili over the macaroni, and sprinkle with 1 more cup shredded Cheddar cheese and crushed tortilla chips.
  • Bake in the preheated oven until the casserole is hot and bubbling and the cheese topping has melted, 20 to 30 minutes. Serve topped with dollops of sour cream.

1/2 cup chopped onion
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) tomato sauce
1 can (14-1/2 ounces) stewed tomatoes, undrained
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups cooked noodles

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the beans, tomato sauce, tomatoes, garlic powder, salt and pepper. Simmer, uncovered, for 5 minutes. Stir in noodles; heat through.

1 ½ pounds ground beef
½ cup chopped onion
3 stalks celery, chopped
1 (15 ounce) can chili
1 (14.5 ounce) can peeled and diced tomatoes with juice
¼ cup taco sauce
1 (15 ounce) can corn
1 (8 ounce) package egg noodles
¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium high heat, saute the beef and onion for 5 to 10 minutes, or until meat is browned and onion is tender; drain fat. Add the celery, chili, tomatoes, taco sauce and corn. Heat thoroughly, reduce heat to low and allow to simmer.
  • Meanwhile, prepare the noodles according to package directions. When cooked, place them in a 9x13 inch baking dish. Pour the meat mixture over the noodles, stirring well. Top with the cheese.
  • Bake at 350 degrees F (175 degrees C) for 20 minutes, or until cheese is completely melted and bubbly.

1 package (8 ounces) egg noodles
2 pounds ground beef
1 medium onion, chopped

3 cups uncooked cavatappi or other spiral pasta (8 oz)
1 1/2 lb ground beef
1 medium green bell pepper, chopped (1 cup)
1 package (1 oz) Old El Paso™ chili seasoning mix
1 can (14.5 oz) Muir Glen™ organic diced tomatoes, drained
1 can (10 oz) Old El Paso™ enchilada sauce
1 can (16 oz) chili beans with sauce
1 1/2 cups water
1 can (2.8 oz) French-fried onions
2 cups shredded Cheddar cheese (8 oz)
6 slices bacon, crisply cooked, crumbled

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain pasta as directed on package, using minimum cook time.
  • In 12-inch nonstick skillet, cook beef and bell pepper over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked and bell pepper is crisp-tender; drain.
  • Stir in chili seasoning mix, tomatoes, enchilada sauce, beans and water. Reduce heat to medium; simmer uncovered 10 minutes. Add pasta, two-thirds of the French-fried onions and 1 cup of the cheese; stir gently. Spoon into baking dish.
  • Spray sheet of foil with cooking spray; place foil sprayed side down over baking dish. Bake 25 minutes. Uncover; sprinkle with remaining French-fried onions, the bacon and remaining 1 cup cheese. Bake 8 to 10 minutes longer or until cheese is melted. Garnish with chopped green onions, if desired.

1 12-ounce package egg noodles
1 tablespoon olive oil
1 small onion, chopped
1 pound ground beef
1 8ounce can tomato sauce
1 cup milk
1 1.25 ounce packet taco seasoning
4 slices American cheese
3/4 cup crushed corn chips

Steps:

  • Prep: 15 minutes Cook: 44 minutes Lightly mist a 2-quart casserole dish with cooking spray. In a large pot of boiling water, cook noodles until al dente, 8-10 minutes. Drain and set aside. Preheat oven to 350°. Warm oil in a large skillet over medium heat. Add onion and sauté until just tender, about 3 minutes. Add ground beef and cook, stirring and breaking up into small pieces, until no longer pink, about 10 minutes. Drain beef mixture, then stir in tomato sauce, milk and taco seasoning. Bring to boil and cook 1 minute, stirring once. Stir egg noodles into skillet with beef mixture; mix well. (Combine beef mixture and noodles in a large bowl if both won't fit in skillet.) Pour mixture into casserole dish and spread evenly. Top with cheese slices; sprinkle with crushed corn chips. Bake until cheese is melted and browned and mixture in bubbly, about 20 mintues.

  • Preheat oven to 325°F Begin cooking noodles according to package directions. Have cream cheese and sour cream ready.
  • Remove noodles from heat, drain in collander, and return directly to pot. add cream cheese, sour cream, salt, and black pepper. Stirr thoroughly, mixing well.
  • Lightly grease a 9x9 pan with butter or spray butter. Spread half the noodle mixture into pan. Spread chili over top, then spread remaining noodles. Sprinkle with cheddar cheese and cayenne pepper.
  • Bake for 30-45 minutes or until heated through.
