CORN BURRITOS WITH RED SAUCE



Corn Burritos with Red Sauce image

These Corn Burritos in Red Sauce were made famous here in my hometown of Ventura. Basically a bean taquito topped with cheese & red sauce.

12 Corn Tortillas (6 inch)
16 oz Refried Beans
1 Tsp Taco Seasoning
1 Cup Canola Oil (for frying)
1 Cup Cheddar Cheese (shredded)
15 oz Tomato Sauce
1/8 Tsp Dried Oregano
1/4 Tsp Cayenne Pepper
1/4 Tsp Garlic Powder
1 Tsp Canola Oil

Steps:

  • In a medium bowl, mix together refried beans and taco seasoning.
  • Spread about 1 to 2 tablespoons of the refried bean mixture down the side of each tortilla.
  • Roll tortillas up tightly, keeping ends open.
  • Heat oil in a large skillet over medium heat.
  • Carefully lay 2-3 burritos in the skillet, seam side down, and cook for 30-60 seconds, or until golden brown. Carefully turn the burritos and cook the other side until golden. Remove from oil and lay on a paper towel lined plate or baking pan.
  • Repeat the frying process until all the burritos are cooked.
  • In a mixing bowl, combine all ingredients and mix well

My husband introduced me to this recipe when we were engaged. It's become our family's favorite dish for birthday meals, informal get-togethers and everyday dinners.

1 pound boneless pork, cut into 3/4-inch cubes
1 tablespoon olive oil
1 can (10 ounces) diced tomatoes and green chilies, undrained
2 garlic cloves, minced
1 cup water
1 cup diced fresh tomato
1/2 cup chopped onion
1/4 cup chopped green pepper
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground cumin
5 teaspoons cornstarch
2 tablespoons cold water
1 can (16 ounces) refried beans
10 flour tortillas (6 inches), warmed

Steps:

  • In a skillet over medium heat, brown pork in oil; drain. Add the next 10 ingredients; bring to a boil. Reduce heat; cover and simmer for 1 hour or until pork is tender. , Combine cornstarch and water until smooth; gradually stir into pork mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. , In a small saucepan, cook refried beans until heated through; spread evenly on tortillas. Spoon pork mixture down the center of each tortilla. Fold sides and ends over filling and roll up.

2 tablespoons olive oil
2 pounds ground beef
3 cloves garlic, minced
2 tablespoons tomato paste
Two 14-ounce cans kidney beans, drained and rinsed
One 14-ounce can tomato sauce
One 10-ounce can diced tomatoes and green chiles
1/4 cup chili powder
Kosher salt and freshly ground black pepper
8 large flour tortillas, lightly warmed
2 cups grated Cheddar
1 yellow onion, diced small
2 cups corn chips
1/2 cup sour cream
Olive oil, for toasting

Steps:

  • For the chili: Place a skillet over medium-high heat and add the oil. When the oil is hot, add the ground beef and brown, crumbling as you go, until cooked through, 7 to 8 minutes. Add the garlic and tomato paste. Stir and cook for 1 minute. Add the kidney beans, tomato sauce, tomatoes and green chiles, chili powder, salt and pepper, then bring to a simmer. Continue to simmer and thicken, stirring occasionally, for 10 minutes.
  • For the burritos: Add about 1 cup chili to a tortilla, then top with grated Cheddar and some diced onion. Add a handful of corn chips and a dollop of sour cream. Tuck the sides of the tortilla and roll tightly, then set aside. Repeat with the remaining tortillas.
  • Heat a large skillet over medium heat. Add a little olive oil. In batches, toast the burritos until golden, about 1 minute per side.

CHICKEN BURRITOS WITH POBLANO CHILES AND CORN

3 tablespoons olive oil
3 medium-size fresh poblano chiles,* seeded, chopped (about 1 1/2 cups)
1 1/2 pounds skinless boneless chicken breast halves or cutlets, cut crosswise into 1/2-inch-thick strips
1 3/4 teaspoons ground cumin
1 3/4 teaspoons chili powder
3/4 cup bottled red taco sauce
2 cups frozen mixed white and yellow corn kernels, thawed, patted dry
6 burrito-size flour tortillas
2 cups (packed) grated four-cheese Mexican blend or queso fresco (about 8 ounces)
1 cup chopped fresh cilantro

Steps:

  • Heat oil in large nonstick skillet over medium-high heat. Add poblano chiles; sauté until beginning to soften, about 3 minutes. Add chicken, cumin, and chili powder; sprinkle with salt and pepper. sauté until chicken is almost cooked through, 2 to 3 minutes. Mix in taco sauce; cook 1 minute. Stir in corn; sauté until heated through, about 1 minute. Season to taste with salt and pepper. Remove from heat; cover to keep warm.
  • Working with 1 tortilla at a time, heat tortillas over open flame or electric burner until beginning to soften and brown in spots, about 15 seconds per side. Spoon chicken mixture in strip down center of each tortilla; top with cheese and cilantro. Fold in sides of tortilla over filling; roll up, enclosing filling.
  • *Often called pasillas; available at some supermarkets and at specialty foods stores and Latin markets.

For those of you who live in a place where Taco Bell does not sell their classic Chilito (and judging from Net, this includes alot of places), you can simply make them at home! This recipe is something I developed through trial and error. It is VERY close to the taste of the original. It also has that perfect "chilito" texture. Enjoy!! flour tortilla
1/2 lb hamburger
1 tablespoon flour
8 ounces refried beans
shredded cheddar cheese
hot sauce

Steps:

  • Brown the hamburger and crumble into very small pieces; drain, but reserve some of the fat.
  • Place hamburger back onto heat and add flour and mix until it is thick.
  • Add the beans and heat through.
  • Add the hot or mild sauce 1 packet at a time until you achieve that 'chilito' taste (usually 8 packets will do).
  • Add the cheese, enough to make a big gooey mess, under medium heat.
  • Taste, and you might need to add a little more sauce.
  • Now here is the trick for that 'chilito' texture:.
  • Take a tortilla and run warm water all over it to soften. The pop it in the microwave for 20 seconds to "steam" it.
  • Fill tortilla with hot chilito filling, fold, and eat it. There will be a smile on your face.

I'm addicted to Tex Mex, and it's slowly but surely clogging my arteries. I'm told these are called "wet burritos," although I have yet to find a Tex Mex restaurant that calls them that. Anyhow, here's my lower in fat version of a dish I simply can't live without. You can use pre-prepared beans and rice or give it your own flair by making them from scratch. Add or omit ingredients as you like to create your own perfect burrito!

3 tablespoons canola oil
2 tablespoons all-purpose flour
2 tablespoons chili powder
1 teaspoon ground cumin
1 (14 ounce) can fat-free chicken broth
1 (8 ounce) can tomato sauce
1 teaspoon salt
1/4 teaspoon garlic powder
1 1/2 cups fat-free refried beans
1 1/2 cups Spanish rice
1 1/4 cups low-fat cheddar cheese (separated) or 1 1/4 cups Mexican blend cheese (separated)
2 large flour tortillas (12-inch or larger)
diced onion (optional)
shredded lettuce (optional)
diced tomatoes (optional)
canned jalapeno, sliced (optional)
low-fat sour cream (optional)
diced avocado (optional)

Steps:

  • Preheat oven to 350F.
  • Prepare sauce: Heat canola oil in saucepan; stir in flour and chili powder to form thick paste; cook 30-60 seconds.
  • Add chili powder, cumin, broth, tomato sauce, salt, & garlic powder. Bring to a boil, reduce heat, & simmer 8-10 minutes. Set aside.
  • Assemble burritos: Lay out one tortilla. Spoon 3/4 c refried beans, 3/4 c spanish rice, and 1/2 c cheese down center of tortilla.
  • To roll , fold one side over filling, parallel to filling. Fold up bottom & top then fold over other side to make a wide burrito.
  • Place seam side down in large baking dish. Repeat steps 3 & 4 for second burrito.
  • Pour sauce over burritos and top with 1/4 c cheese.
  • Bake 25-30 minutes.
  • Remove from oven and pile on the desired toppings.
  • Burritos can be cut in half and serve 4 people, or can be served whole to two *really* hungry people.
  • And don't forget the forks!

1/4 cup minced yellow onion

freshly ground black pepper
3 cups fresh sweet corn kernels (from 3 medium-size ears)
1 teaspoon minced garlic
1 fresh jalapeno, seeded and minced
2 cups heavy cream

Steps:

  • Heat the olive oil in a medium-size saucepan over medium heat.
  • Add the onion, season with salt and pepper, and cook, stirring, for 1 minute.
  • Add the corn, garlic, and jalapeno and season with salt and pepper.
  • Cook, stirring, for 2 minutes.
  • Add the heavy cream, bring to gentle boil, and cook until the cream reduces by one fourth, 6 to 8 minutes.
  • In a blender or using a handheld blender, puree the sauce until smooth.
  • Season again with salt and pepper.
  • Serve the sauce hot with the burritos.
