The combination of frozen meatballs and chile verde sauce was a very happy discovery... the results are absolutely delicious! (And they're almost ridiculously easy to prepare, too.) I plan on making these in the future for potlucks and as appetizers. This is another Pantry Challenge recipe, where I use items I already have at home to make meals.

1 large fresh onions, minced or diced or 1/2 cup dried onion flakes
2 -4 cloves minced garlic, to taste
1 (16 ounce) jar la victoria salsa verde
1/2 cup chicken broth or 1/2 cup mexican beer
1 1/2 lbs frozen meatballs
1/2 teaspoon ground cumin
1/2 cup sour cream, for garnish

Steps:

  • Into a large, heavy pot, add the onion, garlic, salsa verde, broth or beer, and the meatballs.
  • Simmer on low for 30 minutes, stirring occasionally; add the ground cumin and simmer for 15 minutes more.
  • Serve with sour cream for garnish, along with rice and beans and tortillas (the sauce goes nicely on other items, too).
  • Note: you can also make this in your crockpot on low for 4 hours, adding in the cumin in the last 30 minutes.

2 packages (22 ounces each) frozen fully cooked angus beef meatballs
1 bottle (12 ounces) chili sauce
1 jar (10 ounces) grape jelly

Steps:

  • Prepare meatballs according to package instructions. , In a large skillet, combine chili sauce and jelly; cook and stir over medium heat until jelly has melted. Add meatballs to pan; heat through.

This is a tangy variation of the traditional Mexican meatball soup.

1 pound ground beef
1 pound ground pork
2 tablespoons uncooked white rice
½ small onion, minced
2 eggs, beaten
¼ pound fresh tomatillos, husks removed
2 jalapenos
1 ½ small white onions, quartered
1 teaspoon minced garlic
½ cup chopped cilantro
8 ounces pitted green olives
1 cup water
1 tablespoon olive oil
3 cups water
salt to taste

Steps:

  • Mix the ground beef, ground pork, white rice, minced onion, and eggs together in a large bowl. Form into 1 inch meatballs; set aside.
  • Place the tomatillos and jalapenos in a saucepan and cover with water. Bring to a boil and simmer until tomatillos have softened and begin to turn a yellow color, about 15 minutes. Drain, then transfer contents of saucepan to a blender along with the quartered onions, garlic, cilantro, green olives, and 1 cup of water. Blend until almost smooth.
  • Heat the oil in the saucepan used to cook the tomatillos. When hot, pour in the tomatillo sauce and bring to a boil, stirring. Pour in 3 cups of water and return to a boil. Season to taste with salt.
  • Stir in the meatballs. Add water, if needed, to cover completely. Simmer, covered, until meatballs are cooked through and the soup is thick, about 30 minutes.

QUICK AND EASY MEATBALL CHILI



Quick and Easy Meatball Chili image

Kind of a "short-cut" chili. It uses premade frozen meatballs, but you can use your own homemade....it just won't be a squick and easy. ;) This can also be made in a crockpot on low for about 6 hours.

24 frozen cooked italian meatballs, partially thawed enough to cut through
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can red kidney beans, drained and rinsed
1 cup chopped onion
1/2 cup chopped celery
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can tomato sauce
1 tablespoon Worcestershire sauce
1/4 cup brown sugar
1 teaspoon cumin
1 -2 tablespoon chili powder
1/4 cup chopped cilantro
shredded cheddar cheese, to sprinkle for garnish

Steps:

  • Cut the meatballs into quarters.
  • Place the cut meatballs in a large pot. Add all the rest of the ingredients (EXCEPT CHEESE). Stir well.
  • Bring to a gentle simmer.
  • Cover and simmer for 30-35 minutes.
  • For the Crockpot: Place the quartered meatballs in the crockpot along with everything else (EXCEPT CHEESE).
  • Cover and cook on low for about 6 hours or on high for about 4 hours. (All crockpots seem to cook a little faster or slower than others.).
  • Serve hot with some cheese on top, if desired.

  • Preheat oven to 400°F. Whisk cheese, tortilla chips, cilantro, salt, cumin, oregano, egg, green chiles, and ¼ cup of the sour cream in a large bowl. Add beef and, using a fork, stir gently until evenly combined. Shape mixture into 16 (1-inch) meatballs and place in a single layer on a parchment-lined baking sheet.
  • Heat oil in a large ovenproof skillet over medium-high. Add meatballs and cook until golden brown on the underside, about 3 minutes. Flip meatballs and add salsa verde, gently shaking skillet to help distribute sauce. Transfer skillet to oven and bake until meatballs are just cooked through, 8 to 10 minutes.
  • Whisk remaining 2 tablespoons sour cream and 1 tablespoon water in a small bowl. Drizzle sour cream mixture over meatballs and top with cheese, cilantro, and jalapeño. Serve with lime wedges.

  • In a saute pan, brown onions in butter over medium high heat until golden brown, about 5 minutes. Allow to cool.
  • To make the meatballs, combine sauteed onions, ground beef, egg, cracker crumbs, and green chile in large bowl. Use hands to thoroughly mix. Form into small balls about the size of a tablespoon and bake in preheated at 400 degree F oven for 20-25 minutes. For easier clean up, line baking sheet with parchment paper.
  • Meanwhile, make the white cheddar sauce by melting the butter in a medium saucepan over medium heat. Add the flour, stir, and allow to cook for 2-3 minutes until it starts to smell toasty. Whisky in the milk and continue to whisk until a smooth gravy forms after about 2 minutes. Turn off heat and stir in grated white cheddar.
  • If serving for dinner, broccoli is a great side dish and cheddar sauce can go on everything. If serving as game day grub, serve cheddar sauce on the side for dipping.
