CHILE RELLENO CASSEROLE

Love chile rellenos but can't be bothered with all the prep? Try this no-fry, no-fuss casserole that delivers on all the flavors and gooeyness of this traditional Mexican dish without all the work.

8 poblano peppers
8 Colby Jack cheese sticks (1 ounce each) or 8 ounces Colby Jack cheese, cut into 1-inch pieces
One 10-ounce can enchilada sauce
8 large eggs
1 cup grated Cheddar
1 cup whole milk
3 tablespoons all-purpose flour
1/2 teaspoon baking powder

Steps:

  • Roast the poblanos over an open flame or under the broiler until charred all over, turning as necessary, about 8 minutes. Put in a bowl and cover with plastic wrap to steam and loosen the skin, about 5 minutes. When cooled, remove the stems and run under cold water to peel off the blackened outer skin and remove the seeds.
  • Preheat the oven to 350 degrees F.
  • Put 1 piece Colby Jack cheese in the center of each pepper. Pour half of enchilada sauce into an 8-inch square baking dish. Put half of the cheese-filled peppers on top of the enchilada sauce. Repeat with the remaining sauce and peppers.
  • Beat the eggs in a large bowl until very frothy. Whisk in the Cheddar, milk, flour and baking powder. Gently pour the mixture over the peppers and sauce in the baking dish.
  • Bake until the casserole is set in the center and golden brown all over, about 1 hour. Let rest for 5 minutes. Serve warm.

This recipe comes from Better Home and Gardens Special Interest Publications entitled Low Calorie and Low-Fat Recipes which was published in 1994. When going through some old magazines recently the recipe resurfaced and I decided to post it for safe keeping. Hope you enjoy it as much as we do. It is a good alternative to higher fat, higher cholesterol recipes.

2 (4 ounce) cans chopped green chili peppers, drained
4 -6 ounces longhorn cheddar cheese, shredded
2 cups nonfat milk
1 cup biscuit mix (I use Baking Mix Aka "bisquick".)
1 cup egg substitute, or
4 eggs, lightly beaten
1 cup low fat cottage cheese
salsa (optional)
sour cream (optional)
plain yogurt (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Prepare a 2-quart baking dish by spraying with cooking spray.
  • Sprinkle the chopped chili and cheese over bottom of dish.
  • Combine the milk, biscuit mix, and egg substitute in a medium mixing bowl; using a wire whisk beat till smooth.
  • Stir in the cottage cheese and spoon mixture over the chili and cheese.
  • Bake uncovered approximately 45 minutes or until puffed and a knife insered near center comes out clean.
  • Allow to stand 10 minutes before serving.
  • Top each serving with salsa, sour cream or plain yogurt.

2 poblano chiles, peppers (LARGE or anaheim chile peppers, or green sweet peppers)
1 cup monterey jack cheese, shredded (or Mexican blend cheese)
3 eggs, beaten
1/4 cup milk
1/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon cayenne pepper
1/8 teaspoon salt
1/2 cup monterey jack cheese (with jalapenos, shredded or Mexican blend cheese)
picante sauce
sour cream

Steps:

  • Preheat oven to 450.
  • Quarter the peppers and remove seeds, stems, and veins.
  • Immerse peppers into boiling water for 3 minutes and drain.
  • Invert peppers onto paper towels to drain well.
  • Place the peppers in a well-greased 2-quart square baking dish.
  • Top with 1 cup cheese.
  • In a medium bowl combine eggs and milk.
  • Add flour, baking powder, cayenne pepper, and salt.
  • Beat until smooth with a rotary beater.
  • Pour egg mixture over peppers and cheese.
  • Bake, uncovered, for about 15 minutes or until a knife inserted into the egg mixture comes out clean.
  • Sprinkle with 1/2 cup cheese.
  • Let stand about 5 minutes or until cheese melts.
  • If desired, serve with picante sauce or sour cream.

I had this at a potluck, and I've never eaten a better chile relleno. Jennie said it is an old family recipe on her husband's side. The secret is all the eggs and cheese. DELICIOUS! 28 ounces green chilies, roasted
1 lb cheddar cheese, grated
1 lb monterey jack cheese, grated
8 eggs
1 teaspoon salt
2 tablespoons flour
1 cup milk
8 ounces tomato sauce

Steps:

  • Preheat oven to 400.
  • Layer a 9 x 13" pan with roasted chiles and top with cheddar and monterey jack.
  • Continue to layer chiles and cheese in pan until done.
  • Beat 8 eggs well. Add salt, flour, and milk.
  • Make sure you beat well so there are no clumps of flour.
  • Pour over layers in pan.
  • Bake for 25 to 30 minutes.
  • Take out of oven and top with tomato sauce and bake an additional 10 minutes.

1 (32 ounce) can refried beans (32 oz)
1 teaspoon chili powder
8 ounces diced green chilies
1 lb shredded monterey jack cheese
4 eggs (or sub 1 cup egg beaters)
4 tablespoons flour
1 cup skim milk

Steps:

  • Preheat oven to 350 degrees, spray bottom of 9 x 13 baking dish with cooking spray Mix beans with chili powder and spread on bottom of baking dish.
  • Lay the chilies and cheese on top of the beans.
  • In a mixing bowl, whisk eggs, flour, and milk together well, then spread on top of everything else.
  • Bake 30-45 minutes, or until egg is well set and slightly brown.

My dear friend and former colleague Nancy gave me her recipe back in 1986 and I have making it ever since. It is a true crowd pleaser and so easy to make that I am almost embarrassed to publish it here. However, I have had so many requests for the recipe that I just have to share.

1 large whole green chile, canned (or 12 fresh roasted and peeled)
2 pound(s) cheddar or monterey jack cheese, shredded
3 cup(s) milk
4 - eggs, beaten
1 cup(s) bisquick
1 teaspoon(s) salt

Steps:

  • Lightly oil a 9x13 baking dish. (I like pyrex glass)
  • Lightly oil the bottom and sides of the pan. You will be building alternate layers of chile, cheese, chile, cheese and topping it with the wet ingredients.
  • In a bowl, beat eggs and milk. Add bisquick and salt. Pour over the top of the chile cheese layers.
  • Bake at 350 for 1 hour or until hot and bubbly and center is set.
