DAD'S CHILI CHEESE OMELET



Dad's Chili Cheese Omelet image

This is the most requested breakfast at my house for birthdays!!! I had never heard of one until I married my hubby. So simple, yet so good!

Yield 3-4 omelets

Number Of Ingredients 5

1 (15 ounce) can chili with beans
3 -4 eggs, beaten well (per omelet)
1 cup shredded cheddar cheese
1/4 cup onion, diced
1 jalapeno pepper, diced (optional)

Steps:

  • In a small pan heat chili, and keep warm.
  • Make sure all your ingredients are ready before you begin.
  • Season 3-4 beaten eggs with salt and pepper.
  • Melt a small amount of butter or margarine in a small nonstick skillet.
  • Add in a little onion and jalapeno and saute for a few minutes (this can be skipped if you desire).
  • Add eggs all at once and swirl around pan, scraping and tilting edges to cook evenly.
  • When just slightly moist on top, place about 1/2 cup warm chili along half of the eggs and top with some shredded cheese, and additional onions and jalapenos, if desired.
  • Gently fold omelet over to form semicircle.
  • Slide onto serving plate and top with a spoon of chili and more cheese for presentation.
  • Repeat with ingredients and 3-4 eggs per omelette.

Perfect as an appetizer for entertaining, these fluffy, gooey, cheesy, Green Chile Cheese Squares also fit well for a brunch or buffet, and they're good at room temperature or served warm.

2 cups shredded Monterey or pepper jack cheese
2 cups shredded cheddar cheese
1 (7 ounce) can chopped green chilies, drained
3/4 cup whole milk
1/2 cup all-purpose flour
2 large eggs
Cajun seasoning and chopped parsley, for garnish, optional

Steps:

  • Preheat oven to 350 degrees F.
  • For easier removal, butter or line an 8 x 8 inch baking dish, preferably glass, with a sheet of parchment paper, leaving overhang on edges.
  • Combine the shredded cheeses and add half of them to the baking dish. Top with the green chilies and add the remaining cheese to the top. Gently press into pan.
  • Whisk together the milk and eggs, add flour and whisk well. Drizzle evenly across the top of the cheese.
  • Bake, uncovered, at 350 degrees F for about 30 minutes or until lightly browned on top. Remove and let cool.
  • Garnish with a light sprinkle of Cajun seasoning and parsley if desired. Let cool and cut into bite-sized squares. Best when served slightly warm or at room temperature.

6 beaten eggs
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon cayenne pepper sauce
3 (4 oz) cans with juice diced green chiles
1 1/2 cups grated Monterey Jack cheese
1 1/2 cups grated sharp cheddar cheese

Steps:

  • Preheat the oven to 300 °F.
  • Spray a 12 by 8-inch baking dish with cooking spray.
  • In a bowl, add the eggs, salt, pepper and cayenne pepper sauce. Mix together well.
  • Add the chiles and both cheeses to a large bowl. Pour the liquid ingredients into the cheese mixture and stir well. Pat the mixture down into the prepared baking dish and bake until the center is firm, about 45 minutes. Allow to cool, then cut into small squares and serve.

10 eggs, slightly beaten
1/2 c flour
1 tsp baking powder
1/2 tsp salt
1 c chopped green chile (canned is ok)
1 pt small curd cottage cheese
1 lb shredded cheddar & monterey jack

Steps:

  • 1. Melt butter and cool. Pour into large bowl; add eggs, beating slightly. Add in all other ingredients and mix well.
  • 2. Pour into a buttered 13" x 9" x 2" pan. Bake at 400 degrees for 15 minutes - THEN lower to 350 degrees for 30 minutes.

Steps:

  • 1. Wisk eggs, milk, and salt and pepper in a small bowl. Microwave left over chili for 30 seconds. On medium heat spray a small skillet with non stick cooking spray.
  • 2. Add egg mixture to skillet. When egg is fully cooked add chili and cheese. Fold egg over. Cook for a minute until cheese is melted.
  • 3. Top with more cheese and sour cream...or whatever you like :)

1/2 cup chopped fresh tomato
1 green onion, chopped
1/4 cup kidney beans, rinsed and drained and coarsely chopped
1 garlic clove, minced
1/8 teaspoon celery salt
1/8 teaspoon chili powder
1/8 teaspoon Worcestershire sauce
2 teaspoons canola oil, divided
2 eggs
1/4 teaspoon salt
1/4 cup shredded part-skim mozzarella cheese

Steps:

  • In a large skillet, saute the tomato, onion, beans, garlic, celery salt, chili powder and Worcestershire sauce in 1 teaspoon oil until liquid has evaporated; set aside and keep warm. , In an 8-in. skillet, heat remaining oil over medium-high heat. Whisk the eggs and salt. Add egg mixture to skillet (mixture should set immediately at edges). , As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath. When the eggs are set, spoon vegetable mixture on one side; fold other side over filling. Sprinkle with cheese. Remove from the heat. Cover and let stand for 1-2 minutes or until cheese is melted. 1 spring onion
a few sprigs of fresh coriander
2 large eggs
1 tbsp sunflower oil
½ -1 tsp chopped fresh red chilli , or a generous pinch dried chilli flakes
25g mild grated cheddar

Steps:

  • Chop the spring onion and coriander quite finely and beat the eggs together with salt and pepper. Heat the oil in a small frying pan then tip in the onion, coriander and chilli and stir round the pan for a second or two so they soften a little. Pour in the eggs and keep them moving until two thirds have scrambled.
  • Settle the eggs back down on the base of the pan, scatter over the cheese and cook for about a minute until the omelette is just set and the cheese has melted.
  • Carefully fold the omelette using a palette knife and slide from the pan to a serving plate. Eat while the omelette is hot and the cheese still melted.
