- In a large skillet over medium heat, brown chicken in oil. Remove chicken and set aside. To drippings, add mushrooms and garlic; saute 2 minutes. Stir in flour until mushrooms are coated. Gradually add water and bouillon; cook and stir over medium heat until bubbly., Return chicken to the skillet; bring to a boil. Reduce heat; cover and simmer for 30 minutes, stirring occasionally. Meanwhile, slice one cucumber into thin slices; set aside. Peel remaining cucumber; slice in half lengthwise and remove seeds. Cut into 1-in. chunks. Add to skillet and simmer for 20 minutes or until chicken juices run clear. , Stir sour cream into sauce; heat through but do not boil. Garnish with reserved cucumber slices.

- Preheat oven to 350ºF.
- In a medium-size saucepan, melt butter over medium heat.
- Stir in flour and cook, stirring, for 1 minute without browning.
- Whisk in milk, bring to a boil, and cook, stirring, until sauce is thick and smooth, about 3 minutes.
- Stir in horseradish, sour cream, sugar, mustard, and vinegar.
- Season with salt and pepper to taste.
- Arrange chicken breasts, skin side up, in a baking dish.
- Spoon half the horseradish sauce over chicken.
- Bake 45 minutes until chicken is tender.
- Broil chicken for 5 minutes to brown.
- Reheat remaining sauce and serve over chicken.

CHICKEN WITH CUCUMBER HORSERADISH SAUCE
For centuries the Europeans have cooked with cucumbers, this sauce is great with chicken and I serve it with new boiled potatoes, if I can find fingerlings in the grocery store, I'm happy as they are lovely cooked whole. I serve it with dark Danish ryebread.

- Season the chicken with pepper and all but a pinch of the salt. In a skillet, melt the butter over medium-high heat; cook chicken, partially covered and turning once, for 15 to 18 minutes or until juices run clear when chicken is pierced. Transfer to a serving plate; keep warm.
- Drain off all but 1 tablespoons fat from the pan. Add cucumber and onion; cook over medium heat, stirring often, for 5 minutes or until softened.
- Add vinegar and remaining salt; cook until evaporated. Add cream; simmer for 1 more minute. Stir in chives and horseradish; spoon over chiken.

- For the shawarma: Mix the cumin, paprika, allspice, chili powder and garlic together. Place the chicken inside a resealable plastic bag with the olive oil. Add the spice mixture and rub in until fully incorporated. Seal that bag and place it into the refrigerator to marinate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- After marinating, use the skewers to pierce the pieces of chicken through the center. Slide the pieces down leaving enough room for you to hold the skewer, about 3 pieces of chicken per skewer. Continue this process until chicken is all skewered. Sprinkle with salt and place on a hot oiled grill top for 4 minutes per side, or 8 minutes total.
- For the relish: Mix the oil, vinegar, oregano, tomatoes, cucumbers, garlic, lemon juice, onion, parsley and some salt and pepper.
- For the tahini sauce: In a medium bowl, combine the tahini paste, olive oil, lemon juice and 1/4 cup water. Season with salt.
- To serve, fill the pitas with the grilled chicken and serve with the cucumber relish and tahini sauce.

- Combine marinade ingredients and pour over chicken.
- Marinate in the fridge for up to 24 hours.
- Remove chicken from marinade and grill over medium heat for 5 -7 minutes per side.
- Serve with rice, or oven roasted potatoes, and cucumber sauce.
- Makes 4 servings.
- Tip: The marinade can also be used on strips of chicken.
- After marinating, thread the strips onto skewers and grill for 5 - 7 minutes per side.
- CUCUMBER SAUCE:.
- In a strainer mix cucumber and salt and set aside for at least 15 minutes.
- Squeeze excess liquid from cucumber.
- Blend grated cucumber with remaining sauce ingredients and refrigerate until needed.
- Serve with Greek Chicken.
- Tip: If you don't have a strainer put cucumber and salt in a double layer of paper coffee filters.
- Gently squeeze the excess liquid out of the mixture.

- Preheat oven to 350 degrees.
- Using a pastry brush, baste each piece of chicken with the oil.
- Place the chicken in a greased 9X13 baking dish.
- Spread 1/2 tablespoon horseradish on the top of each breast.
- Bake, covered for about 30 minutes.
- While the chicken is baking combine the onion powder, horseradish, wine and apricot preserves in a bowl.
- Mix well.
- After 30 minutes, pour the wine sauce mixture over the chicken and bake, uncovered, another 20 to 30 minutes, until chicken is tender.
- Baste the chicken with the sauce every 10 minutes.

- Put the chicken in a large casserole with the onion, carrot, bay leaves, peppercorns, and salt. Add enough water to cover the chicken, then bring to a boil and simmer for 1 hour, or until the meat is white. Carefully lift the chicken from the broth and let cool. Strain the broth and save 2 1/2 cups for the sauce.
- Make the sauce. Melt the butter in a large pan. Add the sliced artichokes and fennel and cook for 2 minutes. Sprinkle the flour over the vegetables and stir until the flour and butter have combined. Pour in half the reserved chicken broth and stir until smooth. Add the remaining chicken broth and the horseradish and bring to a boil. Add the cream and salt and pepper and return the sauce to a boil, then decrease the heat to a simmer.
- Remove the skin and bones from the chicken. Break the meat into medium-size pieces. Stir the chicken and chervil into the sauce and let it simmer for a couple of minutes, or until the chicken is heated through. Season with salt and pepper and serve with boiled potatoes.
