CHICKEN WALDORF SALAD

1 medium apple, unpeeled, chopped
Juice of 1 lemon (about 2 tablespoons)
2 cups diced cooked chicken (about 1 large breast)
1 cup red seedless grapes, halved
1 stalk celery, finely chopped
1/4 cup golden raisins
1/2 cup toasted walnuts, coarsely chopped
3/4 cup yogurt (preferably Greek non-fat)
1/4 cup mayonnaise
Juice of 1/2 orange (about 1/4 cup)
1/4 teaspoon kosher salt

Steps:

  • Serving suggestion: Baby greens, extra grapes, raisins and walnuts for garnish
  • Coat the chopped apple with the lemon juice in a large bowl. Add the chicken, grapes, celery, raisins and walnuts, and gently combine.
  • In a small bowl, combine the yogurt, mayonnaise, orange juice and salt. Gently fold the dressing into the salad. Serve on a bed of greens.

2 slices shortcut bacon, rashers chopped finely
2 eggs
2 slices rye bread, toasted
1 small tomatoes, chopped finely

Steps:

  • Preheat oven to 200°C.
  • Divide bacon between 2 muffin pan holes. Crack an egg into each hole. Bake about 15 minutes, or until egg is set. Loosen edges of pies from pan.
  • Serve pies on toast, sprinkled with tomato.

cooking spray
1/2 cup low fat cottage cheese
3 celery ribs, trimmed and chopped
4 green onions, sliced thinly
2 teaspoons fresh dill, chopped coarsely
1 garlic clove, crushed
6 small iceberg lettuce leaves

Steps:

  • Spray chicken with cooking oil; cook chicken in heated small frying pan. Remove from heat; cool. Shred chicken coarsely; combine in medium bowl with cheese, celery, onion, dill, and garlic.
  • Divide chicken mixture among lettuce leaves.

This is Day 4: Dinner, on the 21 Day Wonder Diet. if you prefer not to use tenderloins, you can use 280g chicken breast, cut into strips, instead.

1/3 cup skim-milk natural yogurt
1/3 cup coriander, coarsley chopped
2 tablespoons lemon juice
2 small pappadams, 20g
280 g chicken tenderloins
2 tablespoons tandoori spice mix
cooking spray
100 g baby spinach leaves
130 g lebanese cucumbers, halved lengthways and sliced thickly
125 g yellow teardrop tomatoes

Steps:

  • Combine yogurt, coriander and juice in small bowl.
  • Cook pappadums in microwave oven on medium (50%) for about 40 seconds; break into pieces.
  • Sprinkle chicken with tandoori owder; spray with cooking oil. Cook chicken on heated grill plate. Slice thickly.
  • Combine spinach, cucumber and tomatoes in medium bowl; add chicken. Serve salad sprinkled with pappadums, then drizzled with coriander yogurt.

1 cup 35% real whipping cream
1/4 cup mayonnaise
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 fresh romaine lettuce or 1/2 lettuce, torn

Steps:

  • Mix together chicken, apples, celery and walnuts in a bowl.
  • Whisk together, dressing ingredients.
  • Season to taste.
  • Pour over chicken mixture in bowl; toss well.
  • Refrigerate at least 2 hours.

The first time I made these, I was unable to buy Rye mountain bread, so I made them with wheat mountain bread instead. This lunch is to be followed by an afternoon snack of 1 apple.

1 teaspoon Dijon mustard
2 rye meal mountain bread wraps
20 g Baby Spinach
1 small tomatoes, sliced thinly
1 small carrot, grated coarsley

Steps:

  • Sray chicken with cooking oil; cook chicken in heated small frying pan. Cool; shred coarsley.
  • Combine chicken in medium bowl with yogurt and mustard.
  • Divide chicken mixture between wraps; top with remaining ingredients. Roll to enclose filling.
