TOMATO BASIL SOUP
Steps:
- In a stockpot, add olive oil, garlic and onions and cook on medium heat for about 5 minutes.
- Stir in stock of choice, tomatoes and diced tomatoes.
- Brig to a boil.
- Cover pot and simmer for about 15 minutes.
- In small batches, add the soup to a blender and blend until smooth.
- Return the soup to pot and add basil pesto and shredded chicken.
- Simmer for an additional 5-10 minutes.
- Top with parmesan cheese if desired
- ENJOY!!

- In a Dutch oven, combine the water, broccoli, onion and garlic. Bring to a boil; boil for 8-10 minutes, stirring frequently., Meanwhile, in a nonstick skillet, cook chicken until no longer pink, about 6 minutes. Sprinkle with seasoned salt and pepper. Add to broccoli mixture. stir in the tomato juice, beans, corn, ketchup and brown sugar; bring to a boil. Reduce heat; cover and simmer for 10-15 minutes, stirring occasionally. Garnish with bacon and cheese if desired.

Steps:
- In blender or food processor, place Pesto ingredients.
- Cover and process on medium speed about 3 minutes, stopping occasionally to scrape down sides with rubber spatula, until smooth. Set aside.
- In 4-quart saucepan, heat penne and broth just to boiling over high heat. Reduce heat to medium; cover and cook 8 to 10 minutes, stirring frequently, until al dente and liquid is almost absorbed. Remove from heat. Add pesto; stir in chicken and tomatoes; cook over medium 2 to 3 minutes or until thoroughly heated.
- Garnish with basil and 3 tablespoons Parmesan cheese.

Steps:
- Combine meat, mushrooms, onion, garlic, oil, salt, pepper and wine in a pan and sautee until meat is just about done and veggies are soft.
- While the meat+ are cooking add the remainder of the ingredients to a crock pot or regular pot.
- When meat is done, add it to the pot.
- Cook on low on the stove for 2 hours or high in the crock pot for 4 hours.
- An hour before the soup is done, cook pasta.
- When ready to eat, add pasta to soup and garnish with shredded mozz. cheese.

BASIL CHICKEN SOUP
Low fat and low calorie in this wonderful tasting soup. I have been making it in my slow cooker adding 2 chicken drumsticks on high for 4 hours. Remove the chicken to debone; omit the flour and it is excellent. I add my frozen bail last 1/2 hour.

- In a 2 to 3 quart pan, combine butter, onion, and garlic.
- Stir occasionally over medium heat until onion is limp and slightly tinged with brown, about 10 minutes.
- Stir in flour to coat onion.
- Gradually stir in broth, and bring to a boil on high heat.
- Add potato and carrots; cover and simmer over low heat until potato is tender when pierced, 15 to 20 minutes.
