CHICKEN TETRAZZINI, NO WHIPPING CREAM REQUIRED
I found this recipe in my very loved Better Homes and Gardens Cook Book and just had to share it with you. I hope you enjoy it as much as we do!

Steps:
- Cook spaghetti or linquine according to package directions; drain.
- Meanwhile, in a large saucepan cook mushrooms and green onions in hot butter or EVOO until tender.
- Stir in flour, pepper and nutmeg. Add broth and milk all at once. Cook and stir until thickened and bubbly.
- Stir in chicken, sherry (if using), and half of Parmesan cheese. Add cooked spaghetti; stir gently to coat.
- Transfer pasta mixture to a 2-quart rectangular baking dish. Sprinkle with the remaining Parmesan cheese and the almonds.
- Bake in a 350 degree oven, uncovered, for 15 minutes. If desired, sprinkle with parsley before serving.

CHICKEN TETRAZZINI
This was one of my favorites growing up, and I always get compliments whenever I make it. I love parmesan cheese so I use a full cup of it on top.

Steps:
- Melt butter in saucepan; blend in flour, salt and pepper.
- Cook until smooth and bubbly.
- Stir in broth and cream, bring to a boil and let boil for one minute, stirring constantly.
- Stir in sherry, chicken, mushrooms and spaghetti.
- Pour into casserole dish and sprinkle cheese evenly over the top.
- Bake uncovered at 350 degrees for 30 minutes, then turn on broiler and brown for 3-5 minutes--watch carefully.

- While the pasta water is coming to a boil and the pasta cooks, saute the mushrooms in a skillet over medium heat. Add the peas and cook until the peas are heated through. Toast the almonds by placing them on a baking sheet in a heated oven for just a couple of minutes until they begin to turn brown. Watch closely so they don't burn.
- Add the mushrooms, peas and almonds to the drained pasta. Add the chopped tomato and sliced chicken.
- Make a sauce by melting the butter, then adding the flour. Cook for 2 minutes, stirring constantly, then add the chicken broth. Cook for 5 minutes. Remove the sauce from the heat and add the whipping cream and wine plus half of the Parmesan cheese.
