A serious flavor upgrade for chicken! Made with chicken thighs (or chicken breasts) that have been soaked in a Greek yogurt based marinade that's brimming with earthy spices, and a fresh lemon-herb flavor.

2/3 cup whole milk Greek yogurt
2 Tbsp olive oil
2 Tbsp lemon juice (+ 1 tsp lemon zest)
1 Tbsp minced garlic
1 Tbsp peeled and minced fresh ginger
1 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
1/4 tsp cayenne pepper
1/4 tsp cinnamon
1 tsp salt (and freshly ground black pepper (can adjust to taste))
1/4 cup chopped cilantro, (plus more for serving)
2 1/4 lbs boneless skinless chicken thighs (about 7 thighs), (or chicken breasts (about 5))

Steps:

  • In a mixing bowl whisk together yogurt, olive oil, lemon juice, lemon zest, garlic, ginger, cumin, coriander, paprika, cayenne pepper, cinnamon, salt, pepper and cilantro.
  • Place chicken in a gallon size resealable freezer bag. Pour yogurt marinade over chicken.
  • Seal bag while pressing excess air out. Rub marinade evenly over chicken.
  • Let rest in fridge at least 2 hours (or up to 8 hours for breasts, 24 hours for thighs).
  • Preheat a gas grill to 425 degrees. Clean grill grates and lightly brush with oil (using a balled up oiled paper towel and long tongs).
  • Grill chicken until cooked through (165 on an instant read thermometer in center of thickest portion) about 5 to 7 minutes per side.

Boneless skinless chicken thighs are a reliable choice when it comes to grilling chicken. They're thinner than breasts, so they cook more evenly, and the higher fat content makes them difficult to overcook. In this recipe inspired by Turkish chicken kebabs, a yogurt and herb marinade makes them supremely tender and helps them brown beautifully on the grill. While some citrus-heavy marinades begin to break down chicken after just a few hours, this marinade uses only the zest, saving the juice for a quick squeeze before serving. The result is incredibly tender chicken you can prep up to a day in advance. Oregano and thyme work well together here, but feel free to play around with herbs and use what you have on hand, or substitute dried herbs in a pinch.

1/4 teaspoon black pepper, plus more for serving
1 lemon
2 pounds boneless skinless chicken thighs
Chopped fresh parsley, for serving (optional)

Steps:

  • In a large bowl, combine the yogurt, garlic, oregano, thyme, olive oil, salt and pepper. Zest the lemon over the bowl, reserving the rest of the lemon for serving. Whisk until smooth.
  • Add the chicken thighs, toss to coat, then cover and refrigerate for at least 3 hours, or up to 24. Remove chicken from the refrigerator 30 minutes before cooking.
  • If using a grill, clean and oil the grates. Set the grill to medium-high or heat a grill pan slicked with olive oil on the stovetop over medium-high. Grill the chicken for 6 to 8 minutes on each side (depending on the thickness of the thighs), covering the grill halfway through if necessary to retain heat, until cooked through.
  • Transfer the chicken thighs to a platter and squeeze half the lemon over them. Sprinkle with salt, pepper and parsley, and serve with lemon wedges on the side if desired.

All that chicken in the freezer? Here's an easy weeknight recipe with a satisfying crunch. Fage yogurt is available in many supermarkets, including Trader Joe's. The small (8 oz.) container is just right for this recipe. (This is an original recipe, just so you know.)

4 chicken breasts, boneless and skinless, cut into strips (or 1 1/2 - 2 lbs chicken tenders)
8 ounces Greek yogurt (the thick kind, such as Fage brand)
1/2 cup fresh cilantro, chopped, stems are okay
4 garlic cloves, coarsely chopped
4 green onions, trimmed and chopped
1 lime, zested and juiced
1/2 teaspoon cumin
1 dash cayenne pepper (Or more, if more heat is desired)
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons fresh cilantro (chopped, for serving) (optional)
1 lime (cut into wedges, for serving) (optional)
3 cups breadcrumbs (Panko is preferable, but you can use the regular kind too.)

Steps:

  • In a food processor or blender, thoroughly blend the yogurt, cilantro, chopped garlic, green onion, lime zest and juice, cumin, and cayenne. Season well with salt and pepper.
  • Mix the chicken strips with the marinade and marinate for a few hours in the refrigerator (or overnight), stirring occasionally. In a pinch, you can marinate at room temperature for 1/2 hour, stirring occasionally.
  • Dredge the chicken to coat it thoroughly in the bread-crumbs. Place on a lined, lightly greased baking sheet and roast in a 350 oven until cooked through, about 30 minutes, flipping halfway through. (Note: Since there's little fat here, the chicken won't be golden brown as you might expect. You can spray it with olive oil or cooking spray for a more attractive color.).
  • Serve chicken sprinkled with cilantro with a lime wedge on the side for squeezin'. (Note: I like to serve this dish over my recipe for "Creamed Corn with Bacon and Chipotle").

4 chicken cutlets, each 4 to 5 ounces and 1/4-inch thick
Indian Yogurt Marinade
1/4 cup all-purpose flour
Coarse salt and freshly ground pepper
2 cups panko, lightly crushed by hand
2 large eggs
Sunflower or other neutral-tasting oil, for frying
Lime wedges, for serving
Fresh cilantro, for serving
Thinly sliced onion, for serving

Steps:

  • Marinate cutlets: Place cutlets in a shallow dish and pour marinade over, turning the chicken to thoroughly coat. Cover and marinate overnight in the refrigerator. Remove cutlets from the marinade and wipe with paper towels to remove any marinade that might be clinging to them (you want them to be dry before dredging).
  • Bread cutlets: Heat oven to 200 degrees while you prepare the three components of the breading. Place flour in a shallow dish and whisk to combine with 1 teaspoon salt and 1/2 teaspoon pepper. In another shallow dish, whisk to combine panko with 1 teaspoon salt. Lightly beat eggs in a wide, shallow bowl. Dredge one cutlet at a time in the seasoned flour, turning to coat, then shake off excess. Next dip in the eggs, again making sure to coat completely and to allow the excess to drip back into bowl. Then coat with panko, patting the cutlets firmly so the coating adheres but being careful not to coat too thickly. Place coated cutlets on piece of parchment paper or a large baking sheet.
  • Pan-fry: Heat 1/4 inch oil in a large skillet on medium heat until it reaches 350 degrees. Working in batches to avoid crowding the pan, cook cutlets until golden brown on the bottom, 1 to 2 minutes. Flip with a flexible thin spatula and fry until the other side is golden brown and cutlets are cooked through, 1 to 2 minutes more, monitoring temperature of oil to maintain 350 degrees. Transfer to a baking sheet lined with a double layer of paper towels and keep warm in the oven.
  • Serve: Arrange cutlets on a platter. Garnish with lime wedges, cilantro, and onion.

This has become a quick and easy favorite that we frequently make on the grill. Despite the ease of prep, it is bursting with flavor. It is from the Black Dog Tavern's Summer on the Vineyard Cookbook.

4 boneless skinless chicken breasts
1 -2 tablespoon chopped fresh cilantro
1 garlic clove, minced (I use more)
1 lime, zest of
2 -3 tablespoons fresh lime juice
1/4 cup extra virgin olive oil
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Mix together the marinade ingredients in a deep bowl. Add the chicken breasts and turn to coat completely. Cover the bowl and refrigerate.
  • Marinade for about 1 hour. You can leave the chicken in the marinade longer, but because the mixture is very acidic, the chicken will begin to appear poached.
  • Preheat your grill. Cook the chicken over medium hot coals for about 3-5 mins per side.
  • Serve and enjoy.

BAKED CHICKEN WITH CHILE-YOGURT MARINADE

Chile-Yogurt Marinade
3 garlic cloves
1 jalapeño, halved lengthwise and seeded
1 large onion, cut into large chunks
1/4 cup packed fresh cilantro, basil, or parsley leaves
One 16-ounce container plain low-fat yogurt
Grated zest of 2 limes
1/4 cup fresh lime juice
2 tablespoons chili powder or pure ground mild chile, such as ancho
1 teaspoon salt
4 large (8 to 9 ounces each) chicken breast halves, each cut in half crosswise to make 8 pieces total
6 chicken drumsticks
6 chicken thighs

Steps:

  • 1. To make the marinade, with the machine running, drop the garlic and jalapeño through the feed tube of a food processor. Add the onion and cilantro, and pulse until the onion is finely chopped. Add the yogurt, lime zest and juice, chili powder, and salt, and process into a purée. (Or place all of the ingredients, but only 1 cup of the yogurt, in a blender and process until smooth. Transfer the marinade to a bowl and stir in the remaining yogurt.)
  • 2. Divide the chicken pieces between two 1-gallon self-sealing plastic bags. Pour in the marinade and seal the bags. Refrigerate for at least 2 and up to 8 hours.
  • 3. Position two racks in the top third and center of the oven and preheat to 400°F. Line two large baking sheets with aluminum foil and lightly oil the foil. (This makes for easy cleanup.)
  • 4. Remove the chicken from the marinade. Arrange on the baking sheets. Bake for 20 minutes. Turn the chicken and switch the positions of the baking sheets from top to bottom. Continue baking until a drumstick shows no sign of pink when pierced at the bone, about 25 minutes more. Transfer to a serving dish. Serve the chicken hot.

GRILLED ZA'ATAR CHICKEN WITH GARLIC YOGURT AND CILANTRO

This garlicky, herby chicken is full-flavored and very tender, thanks to its piquant yogurt marinade. It's flexible, too - marinate the meat for as little as a couple of hours, or as long as overnight. And the chicken is just as good cooked under the broiler as it is on the grill (see Tip). You can serve this dish with almost anything, but it's especially nice with pita or other flatbread and a big cucumber and tomato salad. And if you're looking to substitute chicken breasts for the thighs, you can. Just watch them carefully; they're likely to cook faster than the dark meat.

Steps:

  • In a large bowl or container, stir together 5 of the grated garlic cloves, half the lemon zest, 1/3 cup yogurt, the cilantro, oil, za'atar, oregano or marjoram, salt and black pepper. Add chicken and toss until well coated. Cover and refrigerate for at least 2 hours or overnight.
  • When ready to cook, light the grill to medium or heat your broiler with the rack 3 inches from the heat source. Remove chicken from bowl, shaking off any excess marinade, and grill or broil on one side until charred in spots, 5 to 8 minutes. Flip the chicken and grill or broil for another 5 to 8 minutes, until just cooked through.
  • While the chicken is cooking, place remaining 2/3 cup yogurt in a small bowl. Stir in the reserve grated garlic clove and lemon zest, and season to taste with salt and pepper. Cut one zested lemon in half and set aside for serving (save the other zested lemon for another use).
  • To serve, place chicken on a serving platter and drizzle with olive oil and a large squeeze of the zested lemon. Top with cilantro and oregano or marjoram sprigs and serve with yogurt sauce.
