Spinach Salad with Chicken, Avocado, and Goat Cheese image

Great salad with chicken, avocado, and goat cheese.

¼ cup pine nuts
8 cups chopped spinach
1 cup halved cherry tomatoes
1 ½ cups chopped cooked chicken
1 large avocado - peeled, pitted, and sliced
½ cup corn kernels
⅓ cup crumbled goat cheese
3 tablespoons white wine vinegar
2 tablespoons extra-virgin olive oil
1 tablespoon Dijon mustard
1 pinch salt and ground black pepper to taste

Steps:

  • Heat a small skillet over medium-high heat. Toast pine nuts in hot skillet until lightly browned and fragrant, 3 to 5 minutes.
  • Put spinach into a large salad bowl; top with pine nuts, tomatoes, chicken, avocado, corn kernels, and goat cheese.
  • Beat white wine vinegar, olive oil, and Dijon mustard together in a small bowl until smooth; season with salt and pepper. Drizzle dressing over the salad and toss lightly to coat.

1 cup arugula or 1 cup spinach
1 grilled chicken breast, sliced
4 strawberries, sliced
1 ounce goat cheese, crumbled
1 tablespoon honey-roasted pecans, chopped
2 tablespoons balsamic vinaigrette

Steps:

  • Place a bed of arugula in a bowl. Top with remaining ingredients in order. Drizzle with vinegrette.

  • Preheat grill to medium-high. (No grill? See Tip.) Brush chicken with 1 Tbsp. oil and sprinkle with 1/4 tsp. each salt and pepper. Grill, turning once, until cooked through, 2 to 3 minutes per side. When cool enough to handle, slice the chicken.
  • Meanwhile, whisk vinegar, shallot, honey, and the remaining 5 Tbsp. oil, 1/2 tsp. salt, and 1/4 tsp. pepper in a large bowl. Finely chop 1/4 cup mint; add to the dressing in the bowl, whisking to combine. Reserve 2 Tbsp. of the dressing.
  • Tear or coarsely chop the remaining 3/4 cup mint leaves; add to the bowl along with mixed greens. Toss gently to combine. Divide the salad among 4 dinner bowls. Combine the chicken and the reserved 2 Tbsp. dressing in the large bowl; stir to coat. Divide the chicken, strawberries, snap peas, goat cheese, and almonds among the 4 dinner bowls.   • Bring a large pot of salted water to a boil and cook the farro according to package directions. I recommend finding a “quick-cook” farro, which will take about 10-15 minutes to cook. Once cooked to al dente, drain the farro and rinse with cool water. Set aside, or store in an airtight container in the refrigerator for up to 1 week. As the farro cooks, get started on prepping the rest of the salad.
  • Meanwhile, as the farro cooks, grill the chicken. Preheat your grill or a grill pan to medium-high heat. If you’re using a grill pan, add in 1 tablespoon of olive oil. Season both sides of the chicken breasts with the salt, pepper, thyme and rosemary. Once the grill is nice and hot, place the chicken on the grates. Grill the chicken for 6-8 minutes per side, or until the chicken has beautifully charred grill marks and is cooked all the way through. Transfer the chicken to a plate to rest for a few minutes before slicing it into bite-sized pieces.
  • In a large serving dish or bowl, arrange the arugula and spring green mix. Top with the strawberries, blueberries, farro, crumbled goat cheese, & chopped almonds. Arrange the sliced grilled chicken over top. Finish with a generous drizzle of maple balsamic vinaigrette. Toss to combine. Enjoy!
