BEER-BRAISED CHICKEN

1/4 pound slab or thick-cut bacon, cut into 1/2-inch pieces
8 skinless, boneless chicken thighs (about 2 1/2 pounds)
Kosher salt and freshly ground pepper
All-purpose flour, for dredging
1 tablespoon extra-virgin olive oil
1 (12-ounce) bottle beer (preferably brown ale)
1 cup frozen pearl onions, thawed
1/2 pound small red-skinned new potatoes, halved
2 tablespoons whole-grain mustard
2 tablespoons packed dark brown sugar
4 sprigs fresh thyme
3 tablespoons chopped fresh parsley

Steps:

  • Heat a large pot over medium-high heat. Add the bacon and cook until browned, about 5 minutes. Remove with a slotted spoon and transfer to a paper-towel-lined plate. Season the chicken with salt and pepper and dredge in flour, shaking off the excess. Add the olive oil to the drippings in the pot. Add the chicken in batches and cook over medium-high heat until golden on the bottom, 6 to 7 minutes, then flip and sear the other side, about 1 minute.
  • Add the beer, onions, potatoes, mustard, sugar, thyme and 1 cup water to the pot and stir, making sure the chicken is fully submerged. Simmer until the chicken is cooked through, about 15 minutes. Discard the thyme and stir in the bacon and parsley.

This is a great recipe if you are entertaining. It was given to me by my great friend in the UK - Mark aka MGB. It is a really rich dish and the presentation is fantastic. Everyone loves it, and is amazed that there is no stock in the sauce.

1 (3 lb) chicken, quartered
4 ounces butter
oil
4 shallots, finely chopped
7 ounces mushrooms, sliced
12 ounces lager beer (not Budweiser!) or 12 ounces premium beer (not Budweiser!)
1 ounce gin
salt and pepper
10 ounces single cream
2 tablespoons Guinness stout
fresh parsley (finely chopped)

Steps:

  • Sauté the chicken pieces in 2 oz of butter and a little oil.
  • Add the shallots and the mushrooms and continue to cook.
  • When they are well browned, pour over the beer and the gin, season with salt and pepper and simmer on a gentle heat for about an hour, or until the chicken is tender.
  • Shortly before serving, arrange the chicken pieces in separate a deep dish and keep hot.
  • On a high heat, reduce the sauce by about half, then add the cream to thicken sauce, with the rest of the butter, whisking all the while.
  • Whisk in the Guinness (it really makes a lot of difference), then pour back over the chicken and sprinkle the parsley.
  • Serve with fresh pasta (I use shells, as they hold the sauce).

6 skinless, boneless chicken breast halves
salt and ground black pepper to taste
2 tablespoons olive oil
1 (15 ounce) jar mild picante salsa
1 (14 ounce) can chicken broth

Steps:

  • Season chicken breasts all over with salt and black pepper.
  • Heat oil in a large skillet over medium-high heat. Cook chicken breasts in hot oil until browned, 4 to 6 minutes per side. Pour salsa and chicken broth over chicken, bring mixture to a boil, reduce heat to medium-low, and simmer for 15 minutes. Turn chicken over, stir salsa mixture, and continue to simmer until chicken is tender and sauce is slightly thickened, about 15 minutes more. An instant-read thermometer inserted into the center of the chicken should read at least 165 degrees F (74 degrees C).

2 tablespoons butter
1 (3 lb) broiler-fryer chickens, cut in pieces
1 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
1/2 cup chicken broth
1/2 cup dry white wine (or more broth)
1 1/2 tablespoons flour
1/2 lb medium egg noodles
parsley

Steps:

  • Melt butter in vegetable oil in a large skillet. Brown chicken on all sides.
  • Add 1 tsp salt, pepper, oregano, thyme, broth and wine. Cover and cook 30 min or until chicken is tender. Remove chicken and set aside.
  • Bring to a boil. Mix flour with 2 tbsp cold water until smooth; stir into boiling sauce and cook 1 minute, stirring constantly.
  • Cook egg noodles in 4 qt boiling salted water. When cooked, drain and pour noodles into a serving dish. Top with chicken and sauce. Garnish with parsley.

1 (12 -15 lb) uncooked country ham (such as Smithfield or Edwards)
20 cups brewed chilled black tea
6 (12 ounce) bottles beer (lager or bock)
1/2 cup blackstrap molasses
1/2 cup packed dark brown sugar
1/4 cup Dijon mustard

Steps:

  • 2 Days in Advance:.
  • Rinse ham and use a firm kitchen brush to scrub the meat's surface. Transfer ham to a 5-gallon stockpot and cover with cold water. Refrigerate ham in water for 24 hours, changing water every 8 hours.
  • 1 Day in Advance:.
  • Drain ham and return to stockpot. Add tea and enough water to cover. Soak for 24 hours.
  • 4 Hours Before Serving:.
  • Drain ham; return to stockpot. Add beer and enough water to cover; bring to a boil over high heat. Reduce heat to medium and simmer until a small knife inserted in the thickest part of the ham slides easily in and out, about 3 1/2 hours.
  • Heat oven to 400°F.
  • Drain ham, reserving 1/4 cup of the cooking liquid.
  • Trim skin and fat; transfer ham to a rack set inside a roasting pan. Whisk together reserved cooking liquid, molasses, brown sugar, and mustard to make a glaze; brush ham with some glaze. Bake ham, occasionally brushing with glaze, until glossy, 15-20 minutes. Let rest for 20 minutes before carving.
