I made this the other day over the open fire in my Dutch oven. It is very easy to make and has great flavor. Got this out of my Cow Boys Cookbook.

1/2 cup(s) chopped onions
1/4 cup(s) chopped green peppers.
1/2 cup(s) sliced button mushrooms
1/2 stick(s) butter
1/4 cup(s) olive oil, light
6-8 - chicken breast halves, skinless and boneless
1 cup(s) white wine, medium
1 8oz can(s) tomato sauce, italian seasoned
4 tablespoon(s) soy sauce, light
- salt and pepper, totaste.

Steps:

  • In a large cast iron skillet. add 1/4 of buttes and 2/4 of olive oil. Saute onions, sell peppers, and mushroom for 3-4 minutes. Remove and place on a plate. In the skillet add remaning butter and oil. salt and pepper chicken breast.. Brown in skillet on all sides.. Add wine tomato sauce soy sauce onions, peppers, and mushrooms.. Simmer for 1-1 1/2 hours... Serve over hot cooked rice or noodles

This Sicilian-style lasagna bread is part pasta, part pizza. The crust is crunchy and sturdy, but inside the layers are soft and chewy like lasagna. The filling is a classic blend of homemade tomato sauce, salty cheese and fresh basil, but you can add your favorite toppings such as pepperoni or sausage.

2 tablespoons olive oil
1/2 teaspoon red pepper flakes
3 cloves garlic, grated
One 28-ounce can crushed tomatoes
1/2 teaspoon Italian seasoning
1 sprig fresh basil

3 1/4 cups durum semolina flour, plus more for dusting (see Cook's Note)

2 tablespoons olive oil, plus more for brushing
1 1/4 cups shredded provolone (about 5 ounces)
1 1/4 cups grated Parmesan (about 6 ounces), plus more for sprinkling
1/3 cup packed fresh basil leaves, torn
Italian seasoning, for sprinkling
Red pepper flakes, for sprinkling

Steps:

  • For the sauce: Heat the oil in a medium saucepan over medium heat. Add the red pepper flakes and garlic and cook, stirring, until the garlic is slightly softened, about 1 minute. Add the crushed tomatoes, Italian seasoning, basil and 1 teaspoon salt. Bring to a boil, then reduce the heat and simmer, stirring occasionally, until the sauce is slightly thickened and the flavors are melded together, about 15 minutes. Discard the basil and let cool while you make the dough.
  • For the dough: Add the flour and 1 teaspoon salt to a large bowl and whisk to combine. Add the oil and 1 cup of lukewarm water and mix until a sticky dough forms. If the dough doesn't hold together when squeezed, add more water 1 tablespoon at a time. Transfer the dough to a work surface and knead until smooth and springy, 5 to 7 minutes. Wrap tightly in plastic wrap and let sit at room temperature for 30 minutes.
  • Put a pizza stone or large inverted baking sheet on the lowest oven rack and preheat to 400 degrees F.
  • For the filling and topping: On a lightly floured surface, roll out the dough into a 20-by-27-inch rectangle with a long side facing you. (Add more flour as needed to keep the dough from sticking.) Mix together the provolone and Parmesan in a bowl. Spread 1 cup of the sauce over the dough, leaving a 1-inch border all around. Top with 1 1/2 cups of the cheese and 3 tablespoons of the torn basil. Fold the left and right sides of the dough into the center so they meet in the middle like a book (it's ok if they overlap slightly).
  • Spread 1/2 cup of sauce over the dough, leaving a 1-inch border all around. Top with 3/4 cup of cheese and 2 tablespoons torn basil. Fold the top and bottom of the dough into the center. Spread 2 tablespoons of the sauce over the bottom half of the dough. Top with the remaining 1/4 cup cheese and remaining torn basil. Fold the top of the dough over the bottom to so that the top hangs just slightly over the bottom.
  • Carefully transfer the dough to a sheet of parchment and prick the top all over with a fork. Brush with olive oil and sprinkle with Parmesan, Italian seasoning and red pepper flakes. Slide the dough (on the parchment) onto the hot stone. Bake until the bread is deep brown and crusty, about 1 hour. Let cool for 10 minutes.
  • Meanwhile, reheat the remaining tomato sauce. Slice the lasagna bread into wedges and serve with the tomato sauce for dipping.

This traditional Sephardic Passover main course uses leaven-free matzo in place of regular lasagna noodles, and has a delicious meat and spinach/mushroom filling.

8 -10 matzos
1 cup chicken broth or 1 cup stock, warm
3 eggs, beaten with a little broth
1 1/2 lbs ground beef or 1 1/2 lbs lamb
1 onion, chopped
1 -2 garlic clove
1/4 cup fresh parsley, chopped
1/2 teaspoon allspice
1 teaspoon cinnamon
1 cup raisins, soaked in warm water
1 1/2 lbs spinach
1/2 lb button mushroom, sliced
2 medium onions, diced
1/4 cup pine nuts
1/2 teaspoon nutmeg

Steps:

  • Prepare the meat filling. In a medium pan, cook the meat with the onions and a little olive oil until browned, drain off fat. Add the raisins, parsley, allspice and cinnamon, cook for another couple of minutes. Set the meat mixture aside.
  • Now for the vegetable filling! In a little olive oil, cook the onions until translucent, then add the pine nuts and sliced mushrooms, cook for a couple minutes longer. Stir in the spinach (with a bit of water if the spinach isn't frozen) and nutmeg. Cook until the spinach is wilted, set aside.
  • Preheat the oven to 350 degrees, and soak the matzah in the warm broth until slightly softened and flexible.
  • Grease a 9x13" glass pan, and place two soaked matzo in the bottom of the dish, with the edges overlapping slightly.
  • Spread a layer of the meat mixture atop the matzo, followed by more matzo. Add a layer of the vegetables. Continue until the filling runs out, then top the pan with a final soaked matzo layer.
  • Drizzle the beaten egg/chicken broth along the top of the dish.
  • Bake until golden brown on top, about 30-45 minutes. If the top layer of matzo curls up or gets too crispy, you may want to pour a little additional broth over it.

I am not sure of the origin of this recipe. It is a cross between a casserole and a stew: chock-full of chicken, sausage, rice and onion. A really good cold-weather comfort food. When you're feeling 'bogged' down, make Chicken Bog to cheer up! This recipe is what is called 'Low Country cooking.' It is a term used in the coastal regions of South Carolina. Chicken Bog is even served at restaurants in South Carolina along with other local favorites.

6 cups water
1 tablespoon salt
1 onion, chopped
1 (3 pound) whole chicken
3 ½ cups chicken broth
1 cup long-grain white rice
½ pound smoked sausage of your choice, sliced
2 tablespoons Italian-style seasoning
2 cubes chicken bouillon

Steps:

  • Place water, salt and onion in a large pot. Add chicken and bring all to a boil; cook until chicken is tender, about 1 hour.
  • Remove chicken from pot and let cool. Remove skin and bones and chop remaining meat into bite size pieces.
  • Skim off fat from cooking liquid and measure 3 1/2 cups of this chicken broth into a 6-quart saucepan. Add rice, chicken pieces, sausage, herb seasoning and bouillon to this saucepan. Cook all together for 30 minutes; let come to a boil, then reduce heat to low, keeping pan covered the whole time. If mixture is too watery or juicy, cook over medium low heat, uncovered, until it reaches the desired consistency. Stir often while cooking.
