Chicken apple sausage, sweet potatoes, apples...so many wonderful fall flavors packed into one skillet! Super easy to make and tasty! Garnish with more brown sugar if you like.

½ teaspoon vegetable oil
5 links precooked apple chicken sausage, sliced into rounds
2 sweet potatoes, diced
2 apples, diced
¼ cup water
¼ cup brown sugar
½ teaspoon ground cinnamon
¼ teaspoon salt
1 pinch ground black pepper

Steps:

  • Heat oil in a large, deep skillet over medium-high heat. Add sausage slices and cook until browned, about 5 minutes. Remove sausage and set aside.
  • Add sweet potatoes and half the water to the skillet; boil for 5 minutes. Stir in the sausage, apples, remaining water, sugar, and cinnamon. Season with salt and pepper; reduce heat to medium. Cover and cook, stirring occasionally, until potatoes are soft, 10 to 15 minutes. Serve hot.

My sister Mary, an excellent cook, shared this wonderful recipe-I've always loved its tantalizing blend of ingredients. It came to mind immediately when I saw the announcement for CW's Savory Stir-Fry and Skillet Suppers contest. (I didn't tell Mary I entered it. What a nice surprise it will be when she sees her recipe printed in the magazine!)

Number Of Ingredients 12

1 medium onion, thinly sliced
1 medium green pepper, thinly sliced
1 cup sliced fresh mushrooms
1 cup sliced zucchini
2 tablespoons olive oil
1/2 to 3/4 pound boneless skinless chicken breasts, thinly sliced
1/2 to 3/4 pound Italian sausage links, cut into 1/2-inch pieces
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 garlic clove, minced
3/4 teaspoon dried basil
3/4 teaspoon dried oregano
Hot cooked rice

Steps:

  • In a large skillet, saute the onion, green pepper, mushrooms and zucchini in oil until tender. Remove vegetables with a slotted spoon; set aside. , Add chicken and sausage to skillet; cook until meat is no longer pink. Drain. Stir in the tomatoes, garlic, basil and oregano. , Return vegetables to pan. Bring to a boil. Reduce heat; cover and simmer for 10 minutes or until heated through. Serve with rice.

1/2 pound boneless skinless chicken breasts, cubed
1/2 teaspoon dried thyme, divided
1/4 teaspoon pepper, divided
1-1/2 teaspoons canola oil
1/4 pound smoked turkey kielbasa, cut into 1/4-inch slices
1 small onion, finely chopped
1 small green pepper, finely chopped
2 garlic cloves, minced
2 cups water
1 cup uncooked long grain rice
1/2 teaspoon reduced-sodium chicken bouillon granules
1/2 teaspoon hot pepper sauce

Steps:

  • Sprinkle chicken with 1/4 teaspoon thyme and 1/8 teaspoon pepper. In a large nonstick skillet, saute chicken in oil until no longer pink. Remove and keep warm. , In the same skillet, saute the kielbasa, onion and green pepper until vegetables are tender. Add garlic; cook 1 minute longer. Stir in the water, rice, bouillon, hot pepper sauce, and remaining thyme and pepper. Bring to a boil. Reduce heat; cover and simmer for 18-20 minutes or until liquid is absorbed and rice is tender., Return chicken to the pan; heat through.

This is a great weeknight dish. Only one skillet to clean afterwards! I adapted this from a recipe that I found in Southern Living years ago. Of course you can use turkey or chicken sausage and it doesn't change the flavor. If I don't have any left-over chicken then I buy a roasted one from the store.

1 (16 ounce) package Cajun-style sausage, sliced
1 medium sweet onion, chopped
1 red bell pepper, chopped
1 tablespoon olive oil
2 garlic cloves, minced
1 (14 ounce) can low sodium chicken broth
2 cups cooked chicken breasts, shredded
1 cup long-grain rice, uncooked
1 1/2 teaspoons cajun seasoning
2 (10 ounce) cans diced tomatoes with green chilies, undrained
1/3 cup fresh parsley, chopped

Steps:

  • Heat the olive oil to medium heat in a large skillet and saute the sausage, onion and peppers for about 10 minutes or until the vegetables are tender.
  • Add the garlic and cook, stirring constantly, for 30 seconds.
  • Add the chicken broth and bring to a boil.
  • Stir in the rice and Cajun seasoning.
  • Reduce heat to low, cover, and cook, stirring occasionally, for 25 minutes.
  • Stir in tomatoes and cooked shredded chicken; cook, uncovered, 10 minutes, stirring occasionally.
  • Remove from heat and stir in parsley.

A savory burst of flavor in the form of Pasta and Chicken Sausage. Easy and Fast to make. Be sure to make extra because everyone will want seconds :)

Number Of Ingredients 6

8 ounces farfalle pasta
4 links any kind chicken sausage
2 cups Baby Spinach
1/4 cup olive oil
2 minced garlic cloves (optional)
1/4 cup parmesan cheese (optional)

Steps:

  • Cook pasta according to package directions.
  • While pasta is boiling, place olive oil in a medium/large skillet and saute garlic in the olive oil.
  • While garlic is getting golden, slice sausage into bite size pieces (I also remove the casing) and fry that in the olive oil as well.
  • Once the chicken sausage is lightly browned on both sides, add spinach and stir. Drain pasta.
  • Pour the cooked pasta in with the frying spinach, garlic, and chicken and stir, infusing all the flavors together. Cook for about 3-4 minutes in the pan.
  • Sprinkle with parmesan and serve!
