BASIC CHICKEN SALAD



Basic Chicken Salad image

This basic chicken salad is a family favorite. I like to use baked thighs or breasts that have been sprinkled with basil or rosemary.

½ cup mayonnaise
1 tablespoon lemon juice
¼ teaspoon ground black pepper
2 cups chopped, cooked chicken meat
½ cup blanched slivered almonds
1 stalk celery, chopped

Steps:

  • Place almonds in a frying pan. Toast over medium-high heat, shaking frequently. Watch carefully, as they burn easily.
  • In a medium bowl, mix together mayonnaise, lemon juice, and pepper. Toss with chicken, almonds, and celery.

My Mom and I came up with this one day while I was visiting her in Houston...and we about ate the whole thing between the 2 of us! We ate it on a romain leaf as a lettuce roll up but it is equally good in between bread!! Please Note: cooking time is minimum chill time!

2 cups cooked chicken, cubed
1/4 cup light mayonnaise
1/4 cup light sour cream
1 teaspoon paprika, - 3 shakes
1/4 teaspoon garlic powder, -2 shakes
1/2 teaspoon Worcestershire sauce
1/4 cup dried cranberries
1/4 cup celery, chopped
2 green onions, chopped
1/2 cup red seedless grapes
1/2 cup pecans or 1/2 cup walnuts, chopped
1 granny smith apple, chopped
1 lemon, small slice, squeezed
ground black pepper, to taste
1/4 cup cherries, dried

Steps:

  • In a medium bowl, mix together all ingredients.
  • Chill at least 1 hour, preferably 4 hours, or even overnight for better blending of flavors.
