These classic chicken salad sandwiches are open for interpretation. Depending on your level of prep, you can create them using either home-cooked chicken or a rotisserie chicken from the store. From there, the creativity is all up to you. Make them yours, make them delicious, make them again!

1 1/2 cups chopped cooked chicken or turkey
1 medium stalk celery, chopped (1/2 cup)
1 small onion, finely chopped (1/3 cup)
1/2 cup mayonnaise or salad dressing
1/4 teaspoon salt
1/4 teaspoon pepper
8 slices bread

Steps:

  • In medium bowl, mix all ingredients except bread. Spread mixture on 4 bread slices. Top with remaining bread.

Sandwich Night will become something super special when you top creamy chicken salad with bacon in this Chicken Salad Club Sandwich.

3 cup chicken (cooked and cubed)
1/3 to 1/2 cup mayonnaise (plus additional for spreading)
salt
black pepper
8 slices bacon
12 slices whole grain bread
2 tomato (sliced)
2 cup baby greens

Steps:

  • In a large bowl, combine the chicken and mayonnaise. Season to taste with salt and pepper. Chill the chicken salad until ready to serve.
  • Cook the bacon until crisp. Drain on paper toweling.
  • Assemble the sandwiches by spreading mayonnaise thinly over the first slice of bread. Top with tomatoes, bacon, and some baby greens. Add a second slice of bread.
  • Divide the chicken salad over this second slice of bread. Top with more baby greens and the third slice of bread. Serve immediately.
  • If packing for take-away, wrap each sandwich carefully and consume within 8 hours. Toasting and cooling the bread before assembly will help it hold up longer.

1/3 cup mayonnaise
1 teaspoon honey mustard
2 cups shredded cooked chicken breast
1/3 cup finely chopped celery
6 slices whole grain bread, toasted
8 slices tomato
4 slices bacon, cooked, drained
4 leaves Romaine or leaf lettuce
4 tiny dill or sweet gherkins

Steps:

  • In medium bowl, mix mayonnaise and mustard well. Stir in chicken and celery until well mixed.
  • Spread 1/2 cup chicken mixture on one side of 2 bread slices. Layer each with 2 tomato slices, 2 half slices of bacon and 1 lettuce leaf. Top each with another bread slice. Repeat layers, starting with chicken mixture. Top each with third bread slice.
  • Place pickle on each of 4 toothpicks; insert 2 into each sandwich. Cut sandwiches into halves.

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain. Place lettuce on four slices of bread; layer each with chicken salad, two bacon strips, one cheese slice and two tomato slices. Spread salad dressing on one side of remaining bread; place over tomatoes.

1/2 cup mayonnaise or salad dressing
18 slices bread, toasted
12 lettuce leaves
6 slices (3 ounces each) cooked chicken
18 slices tomato (3 medium)
12 slices bacon, crisply cooked and drained
Salt and pepper, if desired

Steps:

  • Spread mayonnaise over 1 side of each slice of toast. Place 1 lettuce leaf and 1 chicken slice on each of 6 toast slices.
  • Cover with second toast slice, mayonnaise side up. Top with lettuce leaf, 3 slices tomato and 2 slices bacon. Sprinkle with salt and pepper.

1 whole chicken breast (1 1/2 pounds), on the bone
1 tablespoon olive oil
Coarse salt and freshly ground black pepper
1 1/2 cups mayonnaise, homemade or best-quality
3 tablespoon capers, rinsed
1/2 lemon, juiced
6 slices crusty white bread

Steps:

  • Heat oven to 450 degrees. Place chicken in a small roasting pan. Rub with olive oil, and season with salt and pepper. Bake until a meat thermometer inserted into the thickest part of the breast reads 180 degrees, about 25 minutes. Remove from oven, and cool slightly. Remove chicken from bones, and discard bones. Finely chop chicken (there should be about 2 cups).
  • In a medium bowl, combine chicken, mayonnaise, capers, and lemon juice. Stir to combine. Season with salt and pepper.
  • Toast four slices bread. Spread a thin layer of chicken salad over one slice untoasted bread. Top with a slice of toasted bread. Spread a second thin layer of chicken salad over toasted bread. Top with a slice of untoasted bread. Repeat with remaining bread and chicken salad.

My mother-in-law made this salad for a shower she was hosting and shared the recipe with me. I've made it many times, and now I get asked for the recipe. Cooking has always been an enjoyable part of my life. Ever since I can remember, I loved to watch or help my mother in the kitchen. These days, my 3-year-old son likes to help me. Hopefully he'll grow up to enjoy cooking as much as I do.

1 cup mayonnaise
1/4 cup ketchup
1 tablespoon chopped green onion
Salt and pepper to taste
1 large head iceberg lettuce, torn

2 hard-boiled large eggs, chopped
10 bacon strips, cooked and crumbled
2 cups cubed cooked turkey or chicken
Croutons, optional

Steps:

  • In a small bowl, combine mayonnaise, ketchup, onion, salt and pepper. Cover and refrigerate. , Just before serving, toss lettuce, tomatoes, eggs, bacon and turkey in a large bowl. Add croutons if desired. Serve with dressing.
