Chicken Reuben Casserole Recipes

BAKED CHICKEN REUBEN

Steps:

• Preheat oven to 325 degrees F (165 degrees C).
• Place chicken in a lightly greased 9x13 inch baking dish. Sprinkle with salt and pepper. Place sauerkraut over chicken and top with cheese slices. Pour dressing over all and cover dish with aluminum foil.
• Bake in preheated oven for 90 minutes, or until chicken is cooked through (fork can be easily inserted and juices run clear). Sprinkle with chopped parsley and serve.

CHICKEN REUBEN CASSEROLE

Steps:

• Sprinkle chicken with salt and pepper; place in a lightly greased 13- x 9-inch baking dish.
• Layer chicken evenly with sauerkraut, corned beef, and Swiss cheese. Pour dressing over top.
• Combine breadcrumbs, butter, and parsley; sprinkle over casserole.
• Bake casserole at 350 for 35 minutes or until golden and bubbly.

CROCK POT CHICKEN REUBEN CASSEROLE

Steps:

• Place half the sauerkraut in a 3 1/2 quart electric slow cooker. Drizzle on about 1/3 cup of the dressing.
• Top with 3 chicken breast halves and spread the mustard over the chicken. Top with the remaining sauerkraut and chicken breasts.
• Drizzle another 1/3 cup dressing over the casserole. Refrigerate the remaining dressing until serving them.
• Cover and cook on the low heat setting about 3 1/2 to 4 hours, or until the chicken is white throughout and tender.
• To serve, spoon the casserole onto 6 plates. Top each with a slice of cheese and drizzle with a few teaspoons of the Russian dressing.
• Serve immediately, garnished with fresh parsley, if desired.

REUBEN CHICKEN

Steps:

• Pound chicken between two pieces of waxed paper to flatten. Place in a greased 13-in. x 9-in. baking dish. Spoon salad dressing over chicken; cover with sauerkraut. Cover and bake 350° for 30 minutes. Uncover; top with cheese. Bake 20-30 minutes longer or until chicken juices run clear.
