1 cup chopped pistachios
½ cup bread crumbs
2 tablespoons Dijon mustard
2 tablespoons olive oil
2 tablespoons honey
salt and pepper to taste
2 large skinless, boneless chicken breast halves, cut into 1-inch strips

Steps:

  • Preheat oven to 500 degrees F (260 degrees C). Lightly coat a baking sheet with cooking spray.
  • Mix together pistachios and bread crumbs in a shallow bowl. In a separate bowl, stir together Dijon mustard, olive oil, honey, salt and pepper until smooth. Dip chicken into Dijon mixture to coat, then coat with bread crumbs. Place onto prepared baking sheet.
  • Place into preheated oven and turn the oven down to 375 degrees F (190 degrees C). Bake until the chicken is no longer pink and the pistachio coating is golden brown, about 20 minutes.

These healthy snacks are made for pistachio lovers. A quick pistachio butter is loaded with dates, oats, honey and coconut, then rolled in chopped pistachio for a delicious nutty crunch.

Yield 12 to 15 energy balls

Number Of Ingredients 7

1 heaping cup shelled raw pistachios
1 1/2 teaspoons vegetable oil
Kosher salt
1/3 cup rolled oats
1/3 cup finely chopped pitted dates (4 to 6 dates)
1/4 cup sweetened shredded coconut
1/4 cup honey

Steps:

  • Preheat the oven to 375˚ F. Spread the pistachios on a baking sheet and bake until lightly toasted, 8 to 10 minutes. Immediately transfer to a food processor and pulse until finely chopped. Remove and set aside 2 tablespoons of the chopped pistachios for coating.
  • Add the vegetable oil and a big pinch of salt to the remaining pistachios in the food processor. Process, scraping down the sides as needed, until the pistachios start to clump, then continue processing until creamy and smooth, up to 10 minutes total.
  • Scrape the pistachio mixture into a medium bowl and add the oats, dates, coconut and honey. Beat with a mixer on medium-high speed until combined.
  • Roll the mixture into 3/4- to 1-inch balls (you should get 12 to 15 balls). Roll in the reserved chopped pistachios. Set on a plate and refrigerate until firm, about 30 minutes.

2 chicken breasts or 1 lb chicken, ground
6 tablespoons flour
1 egg, beaten
1 tablespoon coriander seed, ground
1 tablespoon Ras El Hanout Spice Blend
1/2 cup pistachios, seeds removed and lightly crushed
4 -6 tablespoons breadcrumbs
3 tablespoons olive oil
salt

Steps:

  • Grind the chicken and bend it with the flour, beaten egg, spices, salt, and pistachios. Cut away about 1 tablespoon of the mixture to make each meatball.
  • Roll the meatballs in the breadcrumbs.
  • Heat the olive oil in a frying pan, and cook the meatballs about 10 minutes, turning them regularly.
  • Serve with a spicy tomato sauce.

2 lbs boneless skinless chicken, cubed
1 cup flour
2 teaspoons baking powder
1 teaspoon salt
2 eggs
2/3 cup milk
1 tablespoon oil or 1 tablespoon melted shortening
fat, heated to fry

Steps:

  • Sift flour and add baking powder, and salt.
  • In separate bowl, Beat eggs and add milk and oil.
  • Blend liquid mixture into dry, beat well until smooth.
  • Drop diced chicken into batter.
  • Spoon out and place in deep fryer or pot of hot grease over stove burner.
  • Fry until golden brown.
  • Remove and place in bowl lined with paper towel to soak up excess grease.

I had this chicken at an Arizona hotel luncheon, and I loved it so much, I decided to try to re-create it at home.

1/2 cup shelled pistachios
3 tablespoons whole grain mustard (make sure it is gluten free)
1/2 cup white wine
4 whole boneless skinless chicken breasts

Steps:

  • 1. In a food processor, finely grind the pistachios, taking caution to not turn it into pistachio butter. Transfer the pistachios into a shallow bowl or plate.
  • 2. Combine the whole grain mustard with the wine in a shallow bowl or pie plate.
  • 3. Preheat the oven to 350 degrees.
  • 4. Pound the chicken breasts until they are 1/2" evenly. Salt and pepper each side.
  • 5. Dip the chicken into the mustard/wine mixture, then dip into the pistachios to coat.
  • 6. Place the chicken in a shallow baking pan with a rack - this will allow the chicken to get crispy on all sides.
  • 7. Bake for 25-30 minutes.
  • 8. Serve with Mustard Cream Sauce if desired.

4 ounces pistachio nuts, coarsley chopped
48 baby spinach leaves, washed and dried (optional)

Steps:

  • Bring goat cheese to room temperature. Using your hands, roll forty-eight 1/2-inch balls, and place them on a piece of parchment paper. Shake the nuts in a fine mesh sieve to remove dust, then place in a small shallow bowl. roll each cheese ball in the nuts to coat evenly.
  • To serve, arrange the spinach leave on a serving tray, and place each cheese ball on a leaf.

1/2 lb ground chicken or 1/2 lb ground turkey
1/3 cup pistachio nut, chopped
2 tablespoons breadcrumbs
1 tablespoon lemon, zest of, grated
1/2 teaspoon ground coriander
1 tablespoon mint, chopped
1/4 teaspoon salt
2 dashes pepper
1 egg, beaten
1/4 cup flour
1/2 cup low-fat plain yogurt
3 tablespoons mango chutney
1 teaspoon lemon juice
salt
pepper, to taste

Steps:

  • Mix the chicken, nuts, breadcrumbs, lemon zest, coriander, mint, salt and pepper, and egg in a mixing bowl.
  • Form the mixture into balls or patties and dredge in flour to lightly coat.
  • Heat oil in large frypan and gently cook the chicken balls/patties, turning carefully, until golden.
  • (For appetizers: serve on a plate with toothpicks.) For the sauce: Mix together the yogurt, chutney, lemon juice, and salt and pepper to taste; serve on the side as a dipper.
  • You can also make a sauce with the yogurt, 2 Tbsp chopped cilantro, lemon juice, and salt and pepper to taste.
  • Serves 2 as a main course; a nice rice salad or pilaf is a good accompaniment.
