Looking for a fast Italian meal? Toss grilled chicken breasts with penne pasta, tomatoes and two cheeses, and dinner's served in 35 minutes!

3 tablespoons olive oil
1 1/2 teaspoons Italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1 lb boneless skinless chicken breasts
2 1/4 cups uncooked penne pasta (8 oz)
1 pint (2 cups) grape tomatoes, cut in half
8 oz fresh mozzarella cheese, cut into 1/2-inch cubes
1/2 cup shredded Parmesan cheese (2 oz)
1/2 cup chopped fresh Italian (flat-leaf) parsley

Steps:

  • Heat gas or charcoal grill. In small bowl, mix 1 tablespoon of the oil, the Italian seasoning, salt and pepper. Brush on both sides of chicken.
  • Place chicken on grill over medium heat. Cover grill; cook 12 to 15 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (at least 165°F). Remove chicken from grill to cutting board; cover to keep warm.
  • Meanwhile, cook and drain pasta as directed on package. In large bowl, toss pasta and remaining 2 tablespoons oil. Cut chicken into thin strips. Add chicken and remaining ingredients to pasta; toss to combine.

Ready in 15 minutes, this Italian-inspired salad relies on refrigerated grilled chicken and creamy fresh mozzarella.

1 container (8 oz) small fresh mozzarella cheese balls, drained
1 pint (2 cups) cherry tomatoes, cut in half
1 package (10 oz) refrigerated grilled chicken breast strips
1/2 cup balsamic vinaigrette dressing
12 leaves romaine lettuce
Chopped fresh basil leaves, if desired

Steps:

  • In medium bowl, gently stir mozzarella, tomatoes and chicken. Drizzle with dressing; toss lightly.
  • Line each of 4 plates with 3 lettuce leaves; spoon salad onto lettuce-lined plates. Garnish with basil.

Fresh Mozzarella Pasta Salad image

A take on a traditional Caprese, but modified into a light summer pasta salad that goes great with anything off the grill, or just on its own. When I eat it on its own, I sometimes add about a cup of any chunked, cold sausage (I suggest pepperoni or a lighter summer sausage). Any pasta is fine, but I like the orzo's size.

1 cup uncooked orzo pasta
1 ½ cups cubed fresh mozzarella cheese
2 fresh plum tomatoes, seeded and cut into bite-size pieces
¼ cup chopped fresh basil
1 teaspoon crushed red pepper flakes
salt to taste
1 tablespoon olive oil, or as needed

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the orzo, and return to a boil. Cook the pasta uncovered, stirring occasionally, until cooked through, but still firm to the bite, about 10 minutes. Drain well, and let cool.
  • Mix the mozzarella cheese cubes, tomatoes, basil, crushed red pepper flakes, and salt with olive oil in a salad bowl. Gently mix in the orzo pasta, and toss lightly to coat the ingredients with oil.

1/4 cup chopped parsley
6 ounces fresh mozzarella cheese, cubed

Steps:

  • In a small bowl, whisk together dressing ingredients; set aside.
  • Cook pasta according to package directions, omitting salt. Drain pasta and run under cold water until pasta is cooled. In large bowl, toss cooled pasta with remaining salad ingredients.
  • Drizzle dressing over salad and toss well to coat.
