This quick chicken parm is the marriage of classic Italian and good old American burgers. Homemade, oven roasted chicken patties are on Italian rolls with sauce and cheese. What could be better?

1 pound ground chicken breast
1 pound ground dark meat chicken OR buy packaged ground white and dark meat chicken combined
Salt and pepper
2/3 to 3/4 cup breadcrumbs
About 1/3 cup milk, to moisten
1 egg
1 cup loosely packed finely grated Parmigiano-Reggiano cheese
3 large cloves garlic
1/2 cup parsley leaves
1 teaspoon (1/2 a palm full) fennel seed or pollen or a combo of them
1/8 teaspoon grated nutmeg
A pinch red chili flakes or ground pepperoncini
EVOO
EVOO
2 tablespoons butter
1 small yellow or white onion
3 large cloves garlic
3 tablespoons sundried tomato paste
1/2 cup red vermouth or red wine
1 can (28 ounces) Italian crushed tomatoes
1 teaspoon (about a 1/3 palm full) red chili flakes or ground pepperoncini
1 teaspoon dried oregano
2 cups shredded mozzarella
Parm, for garnish
A few leaves of basil, torn, for garnish
Chopped parsley, for garnish
Salami Salad, recipe follows
1 teaspoon (1/3 palm full) granulated garlic
1 teaspoon granulated onion
1 teaspoon oregano
1 teaspoon dried parsley
1 teaspoon superfine sugar or honey
1/2 teaspoon crushed or ground red pepper or pepperoncini
2 tablespoons wine vinegar, white or red
1 tablespoon Dijon mustard
EVOO
Salt and pepper
3 gem romaine or 1 heart romaine
1/4 pound Genoa salami or finnociono (fennel) salami, deli sliced
1 small bulb fennel
1/2 red onion
Italian hot cherry pepper rings in brine, drained, Cento brand preferred
Peruvian drop peppers or peppadews

Steps:

  • Preheat oven to 500 degrees F with rack at center. Line a baking sheet with parchment paper.
  • Gather your ingredients.
  • For the patties: Place chicken in large mixing bowl, season with salt and pepper and combine. Make a well in center of the meat and fill with breadcrumbs. Moisten them with milk, add egg and cheese. Peel garlic and grate into bowl. Finely chop parsley and add to bowl. Add fennel, nutmeg and chili flakes, then drizzle in about 3 tablespoons EVOO. Combine meat mixture then score with hand, form 4 large thin patties and arrange on the parchment. Place in oven and roast 12 minutes, remove.
  • For the sauce: Meanwhile, heat EVOO, 2 turns of the pan, and butter in a deep skillet or a sauce pot over medium to medium-high heat. Peel and finely chop or grate the onion and let it soften a bit while you peel and chop or thinly slice the garlic. Add garlic to onion, stir a minute. Add paste then vermouth or wine and bring to a bubble. Add tomatoes to sauce and season with chili and oregano. Reduce heat and simmer to thicken a bit.
  • To serve: Top the chicken patties with marinara sauce covering all the way to edges. Top the sauce with mozzarella and Parm and place the patties back in oven to brown the cheese.
  • Top the patties with basil, parsley and Parm and serve with salami salad.
  • Gather your ingredients.
  • For the dressing, combine granulated garlic and onion, oregano, parsley, sugar and crushed pepper in a Mason jar or plastic container. Add vinegar, Dijon, 6 tablespoons EVOO, salt and pepper; shake to combine.
  • Chop the lettuce and add to a bowl. Halve the salami then slice into 1/4-inch strips and separate as you add to salad. Quarter and core the fennel and thinly slice. Thinly slice the onion. Add the fennel and onion to salad along with cherry pepper rings and drop peppers. Toss with dressing to serve.

These pull-apart sandwiches combine two of the most crave-worthy foods: chicken parmesan and garlic bread. The bread slices are slathered with an assertive garlic butter, breaded and fried chicken tenders, tomato sauce and melty mozzarella cheese. Simply bake, then pull apart!

2 tablespoons extra-virgin olive oil, plus more for frying
6 cloves garlic, 4 thinly sliced and 2 finely grated
1 28-ounce can whole peeled San Marzano tomatoes, crushed
1/2 teaspoon dried oregano
Kosher salt and freshly ground pepper
6 chicken tenders (8 ounces each)
1 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs
1 14-inch loaf semolina or other crusty Italian bread
6 tablespoons unsalted butter, at room temperature
3 tablespoons minced fresh parsley
6 slices low-moisture mozzarella cheese
1 cup shredded low-moisture mozzarella cheese
Grated Parmesan cheese, for topping

Steps:

  • Preheat the oven to 425˚ F. Line a baking sheet with parchment paper. Make the sauce: Heat the olive oil in a medium saucepan over medium-high heat. Add the sliced garlic and cook until golden, 1 to 2 minutes. Add the tomatoes, oregano and a big pinch each of salt and pepper. Cook, stirring occasionally, until reduced to about 2 cups, 12 to 15 minutes. Season with salt and pepper and set aside.
  • Meanwhile, flatten the chicken tenders using the base of your hand; season with salt and pepper. Put the flour, eggs and breadcrumbs in three separate shallow bowls. Dip the chicken in the flour, then in the egg, shaking off the excess, then in the breadcrumbs to coat. Heat 1/2 inch of olive oil in a large skillet over medium heat. Add the chicken, in batches if necessary, and cook, turning, until golden brown and crisp, 6 to 8 minutes. Remove to a paper towel-lined plate and season with salt.
  • Trim the ends off the bread loaf. Cut the bread on an angle into 12 slices, leaving the bottom of the loaf intact. (You can position chopsticks along the long sides of the bread to keep from cutting all the way through.) Transfer to the baking sheet.
  • Combine the butter, grated garlic, 2 tablespoons parsley and a pinch each of salt and pepper in a bowl. Spread between the bread slices and on the ends of the loaf.
  • Fill every other bread slice with tomato sauce, starting with the first slice. Stuff each sauce-filled slice with a chicken tender and a mozzarella slice; spoon more tomato sauce around the chicken. Sprinkle the shredded mozzarella over the loaf.
  • Bake until the cheese melts and the bread is toasted, 15 to 18 minutes. Pull apart or slice into individual sandwiches. Sprinkle with Parmesan and the remaining 1 tablespoon parsley. Serve with the remaining tomato sauce.

I grew up with chicken cutlets being the norm once a week. One of the first recipes I taught my nephew Blake was how to make this crispy chicken with cheese. It's one of his favorites - and auntie's, too!

4 boneless, skinless chicken breasts (4 ounces each)
1/2 cup olive oil
4 tablespoons unsalted butter
2 cups panko
1/2 bunch basil, leaves only
1/2 cup freshly grated Parmigiano-Reggiano
Kosher salt and freshly ground black pepper
1 cup all-purpose flour
2 large eggs
2 tablespoons Dijon mustard
2 cups passata (tomato puree)
1 clove garlic, grated
2 fresh basil leaves
Four 6- to 8-inch Italian rolls, preferably crusty, split in half
8-ounce ball fresh mozzarella, thinly sliced

Steps:

  • Preheat the broiler. Place wire racks over 2 sheet pans. Cut two 12-inch sheets of plastic wrap.
  • Place one sheet of plastic on a clean cutting board. Put one chicken piece in the center of the plastic and top with the other sheet of plastic. Pound the chicken with the flat side of a meat mallet, starting in the center and working your way to the edges, until the chicken is 1/4-inch thick.
  • Heat the oil and butter in a large nonstick skillet over medium-low heat.
  • Meanwhile, combine the panko, all but 2 of the basil leaves and Parmigiano-Reggiano in a food processor and pulse until combined. Season with salt and pepper. Transfer the mixture to a small sheet pan or plate. Place the flour on a second small sheet pan or plate and season with salt and pepper. Whisk the eggs, mustard and 2 tablespoons of water together in a shallow bowl until combined. Season with salt and pepper.
  • Begin by dipping one piece of chicken into the flour, then into the egg mixture, then into the breadcrumb mixture to coat completely. Set the breaded cutlet on one of the wire racks. Repeat with the remaining chicken.
  • Raise the heat under the skillet to medium-high. Cook the cutlets in two batches until golden brown, 3 to 4 minutes per side. Transfer to the second wire rack and sprinkle with salt.
  • While the chicken is frying, prepare the sauce.
  • Combine the passata, garlic and reserved 2 leaves of basil in a medium saucepan over medium heat. Season with salt and pepper. Cook until warmed through, about 5 minutes. Remove from the heat.
  • Place the sliced rolls on a sheet pan. Broil the rolls until just toasted, 30 seconds to 1 minute.
  • Top each fried chicken cutlet with the sauce and a few slices of mozzarella. Broil until the cheese is brown and bubbly, 3 to 4 minutes.
  • Place each chicken parm cutlet onto the bottom half of a roll. (If chicken is too wide, cut lengthwise and stack the chicken so it all fits.) Top with more sauce and the top buns. Slice in half and take a crunchy bite!

1 large egg, lightly beaten
3/4 cup seasoned bread crumbs
3 tablespoons grated Parmesan cheese
2 boneless skinless chicken breast halves (5 ounces each)

2 Italian rolls, split
2 slices provolone cheese
1/3 cup marinara or other meatless pasta sauce, warmed

Steps:

  • Place flour and egg in separate shallow bowls. In another bowl, toss bread crumbs with Parmesan cheese., Pound chicken with a meat mallet to 1/2-in. thickness; sprinkle with salt and pepper. Dip chicken in flour to coat both sides; shake off excess. Dip in egg, then in crumb mixture., In a large skillet, heat oil over medium heat. Add chicken; cook until golden brown and chicken is no longer pink, 4-5 minutes per side. Serve in rolls with provolone cheese and sauce.

  • Cut the chicken breasts in half, by slicing in half from the long sides and across. (Tip!! This is easier if the chicken is still slightly frozen). Pound the chicken a bit until it is evenly thick. Don't pound so much that it becomes mushy. I find it is better to pound the outside surface, rather than the cut side. Pat dry with a paper towel.
  • Set up 3 bowls. To the first bowl, add the flour and some salt and pepper. Add the eggs to the 2nd bowl, and whisk with a fork. To the 3rd bowl, add the dried Italian bread crumbs and the Parmesan and stir together. Take one piece of chicken and coat in the flour, shaking off the excess. Dip into the egg and let the excess drip off. Place into the bread crumb mixture and press the crumbs onto the chicken until you have an even coating. Place onto a plate. Repeat with remaining chicken, placing onto plate without over-lapping. Place plate, uncovered, into the refrigerator and chill for 1 hour.
  • Preheat oven to 400F. and line a baking sheet with aluminum foil. Set aside. Heat marinara sauce in a small saucepan and keep warm.
  • When chicken has chilled, add enough oil in a large skillet to come up about half the height of the chicken (1/2-3/4-inch-ish). Heat over medium-high heat. Add a small piece of breading to the oil to test. It should sizzle. Add chicken to the skillet and cook, turning several times, until evenly golden. Remove to a cooling rack to rest for a few minutes. (*Can be done ahead to this point, then covered loosely and refrigerated. Re-heat/re-crisp later in a 350F oven for 10-15 minutes or until warmed through. Add toppings, increase oven temperature to 425F, add toppings and finish.)
