BEEF OR CHICKEN SATAY WITH PEANUT SAUCE



Beef or Chicken Satay With Peanut Sauce image

Thai style chicken or beef kabobs. These are very flavorful when marinated overnight. The recipe listed is for a large group. Perfect for potlucks. (Prep time is marinade time).

4 lbs flank steaks or 4 lbs boneless chicken breasts
4 fluid ounces peanut oil
1 stalk lemongrass, minced
1 tablespoon minced garlic
1 1/2 teaspoons crushed chili peppers
1 tablespoon curry powder
1 tablespoon honey
1 fluid ounce Thai fish sauce or 1 fluid ounce vietnamese fish sauce
1 3/4 cloves garlic, minced
1/2 ounce cilantro, minced
13 1/2 ounces peanut butter
12 ounces soy sauce
7 1/2 ounces sugar
1 tablespoon rice wine or 1 tablespoon dry sherry
1 1/2-4 1/2 tablespoons chilies, hot

Steps:

  • Method for meat and marinade: Trim the meat and cut into long thin strips.
  • Combine all of the marinade ingredients, add the meat, and let marinate under refrigeration for at least 2 hours and up to 12 hours.
  • Soak bamboo skewers in water for a least 10 minutes before you are ready to grill the satays.
  • Thread the meat on the skewers, one strip per skewer.
  • Skewer meat can be returned to the marinade to hold until cooking time.
  • Place the skewered meat on the grill or boiler rods.
  • Grill or broil undisturbed for about 1 minute, turn and grill 1 minute more for medium rare, or as needed for the desired doneness.
  • Server the satays with the spicy peanut sauce.
  • Method for Spicy Peanut Sauce: Process all ingredients in food processor until smooth.
  • Cover and set aside at room temperature for 1 hour or overnight in the refrigerator.
  • Bring to room temperature before using, and stir briskly or reprocess to mix.

4 boneless skinless chicken breasts
1 small onion, finely chopped
1 garlic clove, crushed
1 inch gingerroot, peeled and grated
2 tablespoons soy sauce
2 teaspoons chili powder
1 teaspoon ground coriander
2 teaspoons dark brown sugar
1 tablespoon lemon juice or 1 tablespoon lime juice
1 tablespoon vegetable oil
1 1/4 cups coconut milk
1/3 cup crunchy peanut butter
1 tablespoon fish sauce
1 teaspoon lemon juice or 1 teaspoon lime juice
salt
pepper

Steps:

  • Using a sharp knife, trim any fat from chicken, then cut into 3" strips.
  • For marinade, place onion, garlic, ginger, soy, shili powder, coriander, brown sugar lemon juice and vegetable oil in a zip top bag and mix well. Add chicken strips and mix in marinade until well coated. Put in refrigerator for 2 hours and up to overnight.
  • Remove meat from marinade and thread the strips accordion style onto pre-soaked wooden skewers.
  • Broil the skewers for 8-10 minutes, turning and brushing occasionally with the marinade until cooked through.
  • Meanwhile, make sauce.
  • Mix coconut milk with peanut butter, fish sauce, and lemon juice in saucepan. Bring to a boil and cook for 3 minutes.
  • Season to taste with salt and pepper.
  • Transfer sauce to serving bowl and serve with cooked satays.

Every country or region has at least one dish that becomes symbolic. For SE Asia, symbolic foods would have to include satay. Popular in Malaysia, Singapore and Indonesia, it's a great treat when served hot from a charcoal grill. There are numerous ways of preparing this dish; the recipe below is only one of them.

1 lb beef, thinly sliced
1 lb chicken, sliced
3 tablespoons curry powder
1/2 teaspoon chile, Ground
2 garlic cloves, minced
2 large onions, minced
4 tablespoons lemon juice
1 tablespoon honey
1 dozen bamboo skewer
1 cup peanut butter
1 cup coconut milk (thick) or 1 cup coconut cream (thick)
1 tablespoon lemon juice
1/4 cup soy sauce
1 tablespoon Worcestershire sauce
1/2 teaspoon chili sauce
1/4 teaspoon salt

Steps:

  • Slice the meat into thin strips, no more than 1/4" thick and about 1/2" wide for both the beef and chicken.
  • Combine the curry powder, chilies, garlic, onions, salt, lemon juice, and honey in a large bowl.
  • Add the meat strips and toss well to marinate for about fifteen minutes.
  • Thread meat strips onto bamboo skewers, 3 or 4 pieces per skewer.
  • Arrange the finished skewers in a glass casserole; cover with the remaining marinade, and refrigerate while making the sauce. Brown under a broiler or grill the meat skewers.
  • Serve with a peanut butter sauce for dipping (see below). Sauce: Blend all ingredients together well to make a smooth sauce. Keep refrigerated until needed, but warm before serving.

I find that RZ has made me much more aware of simple recipe opportunities, esp those found right on the cans of products. I guess you expect them to be so commonly used that you discount them at once. Here is the easiest recipe I have ever seen for satay (beef or chicken). All you really have to do is open a can. I love an easy prep, so this caught my eye. (Time does not include time for skewers to soak or satays to marinate)

1 (400 ml) can coconut milk (Thai-Choice)
750 g beef or 750 g chicken, strips
1 teaspoon turmeric powder
1 (290 g) can satay sauce (Thai-Choice)

Steps:

  • Soak bamboo skewers in water for 2 hours.
  • Pierce meat strips onto bamboo skewers. Combine turmeric powder w/350 ml of the coconut milk & marinate for at least 60 min (or longer for more flavor).
  • Grill satays & use the remaining 50 ml of coconut milk & turmeric mixture to baste during grilling. Serve w/heated satay sauce.
  • NOTE: I've entered this recipe as an appy w/1 skewer per person. As an entree to serve 2 persons, I'd increase the amt of meat to get 10 skewers to marinate & keep all other ingredients the same.

To make satays, you'll need bamboo skewers; soak them in water for two to three hours so they don't burn on the grill.

Number Of Ingredients 11

1 1/2 pounds fillet of beef, or 4 whole chicken breasts
1 tablespoon chopped fresh ginger
1 onion, cut into chunks
4 cloves garlic
1 cup low-sodium soy sauce
1 teaspoon sambal (Indonesian chile paste), or 1 hot red chile
Juice of 1 lemon
2 tablespoons sugar
1/2 teaspoon ground cumin
2 tablespoons toasted sesame oil
Peanut Sauce

Steps:

  • Trim fat from beef or chicken. Cut into strips about 3 inches long and 1/2 inch thick. Refrigerate until needed.
  • Combine remaining ingredients in blender, and puree until smooth. Pour over meat, and mix to coat evenly. Marinate at least 1 hour or overnight.
  • Preheat grill or grill pan until hot. Thread a piece of meat lengthwise on each skewer, and grill until done, 2 to 3 minutes on each side. Baste occasionally with marinade during cooking. Serve immediately with peanut sauce.
