Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 12

4 (5-ounce) boneless, skinless chicken breasts
1 cup blackening spice (recommended: Paul Prudhomme's Chicken)
2 tablespoons extra-virgin olive oil
3 tablespoons minced garlic
1 cup roughly chopped marinated sun-dried tomatoes
1/4 cup white wine
3 cups heavy cream
3/4 cup grated Parmesan
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
1 pound cooked fettuccine
1/2 cup sliced scallions

Steps:

  • Preheat the oven to 350 degrees F.
  • Dredge the chicken breasts in the blackening spice and place in a cast iron skillet over very high heat. Blacken both sides of the chicken and place in the oven for 10 minutes, or until internal temperature of chicken reaches 165 degrees F on an instant-read thermometer. Slice in strips on the bias and set aside.
  • In a saute pan over medium heat, add 2 tablespoons of extra-virgin olive oil. Add garlic and lightly caramelize. Then add the sun-dried tomatoes and the chicken slices. Deglaze the pan with the white wine. Add the heavy cream, increase the heat to a simmer, and reduce the cream sauce by half.
  • When the cream sauce is to desired consistency, stir in 1/2 cup Parmesan, salt, pepper, and pasta.
  • Nest the pasta on large rimmed plates, pour sauce over pasta, and garnish with scallions and the remaining 1/4 cup Parmesan.

FIERI'D CHICKEN SALTIMBOCCA

Fieri'd Chicken Saltimbocca image

Provided by Guy Fieri

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 13

2 tablespoons extra-virgin olive oil
8 fresh sage leaves and stems
4 boneless skinless chicken breast halves (6 ounces each)
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 cup all-purpose flour
1/4 cup canola oil
4 thin slices prosciutto
4 ounces thinly sliced provolone
1/2 cup dry white wine
1 cup low-sodium chicken broth
6 tablespoons cold unsalted butter, cut into small cubes
2 tablespoons chopped Italian parsley

Steps:

  • Begin by turning the oven to 350 degrees F.
  • Heat the olive oil in a large nonstick skillet over medium-high heat. Add the sage leaves with stems and let simmer until the sage has crisped and the oil has infused with the sage flavoring, about 2 minutes. Remove the sage and reserve the oil in the skillet.
  • If you have thick chicken breasts, butterfly them in half. Place the chicken between two pieces of plastic wrap and, using the flat side of a meat tenderizer, pound out until an even 1/2-inch-thick. Remove from the plastic and sprinkle each chicken breast with the salt and pepper on both sides. Then dredge in the flour and dust off the excess.
  • Add the canola oil to the same skillet over medium-high heat with the sage infused olive oil. Working in batches, add the chicken breasts to the skillet, searing on both sides. After 2 to 3 minutes, turn the chicken breasts and brown the other side for 2 minutes. Chop the sage that was crisping with the olive oil and sprinkle on the chicken breasts. Place a single slice of prosciutto on top of each chicken breast and press it down firmly so it sticks. Then add the provolone slices on top. Place in the oven for 5 minutes to melt the cheese. Remove from the oven and set aside.
  • Deglaze the pan with the white wine and cook over high heat until reduced slightly. Add the chicken broth and simmer until reduced by half. Remove the pan from the heat and add the cold butter cubes. Swirl until the butter has melted completely and the sauce has a sheen to it. Pour the sauce over the chicken and garnish with the parsley.

Time 1h45m

Yield 6 serving(s)

Number Of Ingredients 29

6 quarts hot water
1/4 cup vegetable oil
3 tablespoons salt
1 1/2 lbs spaghetti, 1 lb dry (Fresh)
2 teaspoons dried thyme leaves
1 1/4 teaspoons cayenne pepper, Ground
1 teaspoon white pepper
3/4 teaspoon black pepper
1/2 teaspoon dried sweet basil leaves
1 lb unsalted butter
4 tablespoons unsalted butter
1 cup onion, chopped very fine
4 garlic cloves, peeled
2 teaspoons garlic, Minced
3 1/4 cups chicken stock
2 tablespoons Worcestershire sauce
1 tablespoon Tabasco sauce
1 teaspoon Tabasco sauce
2 (14 ounce) cans tomato sauce
2 tablespoons sugar
2 cups green onions, chopped very fine
1 1/2 tablespoons salt
1 1/2 teaspoons white pepper
1 1/2 teaspoons garlic powder
1 1/4 teaspoons cayenne pepper, Ground
1 teaspoon black pepper
1 teaspoon cumin (optional)
1/2 teaspoon dried sweet basil leaves
2 lbs boneless chicken (see notes)

Steps:

  • NOTE: To make a Rich Chicken Stock strain the basic stock, then continue simmering it until evaporation reduces the liquid by half.
  • For example, if the recipe calls for 1 cup Rich Stock, start it with at least 2 cups of strained basic stock.
  • dark meat, cut into 1/2-inch cubes.
  • Directions:.
  • Place in the hot water, oil and salt in a large pot over high heat; and cover and bring to a boil.
  • When water reaches a rolling boil, add small amounts of spaghetti at a time to the pot, breaking up oil patches as you drop the spaghetti inches.
  • Return to boiling and cook to al dente stage, do not over cook.(To test doneness of spaghetti, cut a strand in half near the end of cooking time.
  • When done, there should be only a speck of white in the center, less than one-fourth the diameter of the strand.) Do not overcook.
  • During this cooking time, use a wooden or spaghetti spoon to lift spaghetti out of the water by spoonfuls and shake strands back into the boiling water. (It may be an old wives' tale, but this procedure seems to enhance the spaghetti's texture.) Then immediately drain spaghetti into a collander; stop cooking process by running cold water over strands. (If you used dry spaghetti, first rinse with hot water to wash off starch.) After the pasta has cooled thoroughly, about 2 to 3 minutes, pour a liberal amount of vegetable oil in your hands and toss spaghetti.
  • Set aside still in the colander.
  • Meanwhile, thoroughly combine the seasoning mix ingredients in a small bowl and set aside.
  • In a 4-quart saucepan, combine 1-1/2 sticks of the butter, the onions and garlic cloves; saute over medium heat 5 minutes, stirring occasionally.
  • Add the minced garlic and seasoning mix; continue cooking over medium heat until onions are dark brown, but not burned, about 8 to 10 minutes, stirring often.
  • Add 2-1/2 cups of the stock, the Worcestershire and Tabasco; bring to a fast simmer and cook about 8 minutes, stirring often.
  • Stir in the tomato sauce and bring mixture to a boil.
  • Then stir in the sugar and 1 cup of the green onions; gently simmer uncovered about 40 nminutes, stirring occasionally.
  • Heat the serving plates in a 250F oven.
  • Combine the ingredients of the chicken seasoning mix in a small bowl; mix well.
  • Sprinkle over the chicken, rubbing it in with your hands.
  • In a large skillet melt 1-1/2 sticks of the butter over medium heat.
  • Add the remaining 1 cup green onions and saute over high heat about 3 minutes.
  • Add the chicken and continue cooking 10 minutes, stirring frequently.
  • When the tomato sauce has simmered about 40 minutes, stir in the chicken mixture and heat through.
  • To finish the dish, for each serving melt 2 tablespoons butter in a large skillet over medium heat.
  • Add one-sixth of the cooked spaghetti (a bit less than a 2 cup measure); heat spaghetti 1 minute, stirring constantly.
  • Add 1-1/4 cups chicken and sauce and 2 tablespoons of remaining stock; heat throughly, stirring frequently.
  • Remove from heat.
  • Roll spaghetti on a large fork and lift onto a heated serving plate.
  • Repeat process for remaining servings.

BASIC ROASTED CHICKEN

Basic Roasted Chicken image

Provided by Guy Fieri

Categories     main-dish

Time 1h40m

Yield 4 servings

Number Of Ingredients 7

Two 4-to-5 pound chickens (organic and free range if possible)
Kosher salt and freshly cracked black pepper
6 sprigs fresh thyme
4 cloves garlic
2 bay leaves
1 small onion, sliced
1 lemon, quartered

Steps:

  • Preheat the oven to 425 degrees F.
  • Sprinkle the inside of the chickens liberally with salt and pepper. Stuff each bird with 3 sprigs thyme, 2 cloves garlic, the bay leaf, onion and lemon. As the chickens cook, this will help keep them moist and also flavor the bird from the inside.
  • Using kitchen twine, tie the legs together of each bird, and then tuck the wing tips underneath each body so it cooks evenly. Place the birds on a roasting rack over a roasting tray then sprinkle them with salt and pepper.
  • Place in the oven and roast for 15 minutes. Then reduce the temperature to 375 degrees F and cook until an instant-read thermometer inserted into the joint between the leg and thigh registers 165 degrees F, approximately 1 hour more. When the chicken is done, the skin will be crispy and golden and the juices of the chicken will run clear. Remove from the oven and allow to rest for 15 minutes before serving.

1 tablespoon toasted sesame oil
2 tablespoons Ginger-Garlic Paste
1/2 cup chicken stock
1/2 cup low-sodium soy sauce
2 tablespoons orange juice
2 tablespoons light brown sugar
2 tablespoons rice wine vinegar
4 teaspoons mirin
2 teaspoons grated orange zest
1 teaspoon red pepper flakes
1 tablespoon cornstarch, mixed with 2 teaspoons water
4 chicken breasts, boneless, skinless
1 cup low-sodium soy sauce
2 tablespoons Ginger-Garlic Paste, recipe follows
3 eggs
1 cup all-purpose flour
1 tablespoon granulated garlic
1 tablespoon ground ginger
2 cups panko breadcrumbs
1/4 cup sesame seeds
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
Peanut oil
Sesame seeds, toasted, for garnish
1/4 cup chopped scallions, for garnish
1/2 cup garlic cloves, peeled
1/2 cup fresh ginger, broken into broken pieces
2 tablespoons canola oil

Steps:

  • For the sauce: Heat the sesame oil in a large saute pan over medium heat. Add the ginger-garlic paste and cook until fragrant, 1 to 2 minutes. Raise the heat to medium-high and add the chicken stock, soy sauce, orange juice, brown sugar, vinegar, mirin, orange zest and pepper flakes. Simmer for 8 to 10 minutes, stirring occasionally. Add the cornstarch slurry and stir until the sauce is thickened. Keep warm.
  • For the chicken: With a mallet or a heavy pan, pound the chicken to an even 1/4-inch thickness. Add the chicken to a large resealable bag along with the soy sauce and ginger-garlic paste. Seal the bag and leave the chicken to marinate at room temperature for 30 minutes.
  • Preheat the oven to 200 degrees F.
  • Beat the eggs in a wide, shallow bowl. In a large plate mix together the flour, granulated garlic and ground ginger. In another plate, mix together the panko and sesame seeds. Sprinkle all three dishes with salt and pepper. Dredge the chicken first in the flour, then in the egg and lastly in the panko.
  • Slick a large skillet with peanut oil and set over medium-high heat. In batches, fry the chicken until golden brown and cooked through, 3 to 4 minutes per side. As you go, keep cooked chicken warm in the oven on a wire rack set over a baking sheet.
  • Slice the chicken into thick strips and arrange on a serving platter. Drizzle chicken with the sauce and garnish with sesame seeds and scallions.
  • Pulse the garlic and ginger in a food processor. With the processor running, stream in the canola oil and process to a paste. (You'll need 4 tablespoons of the paste for the present recipe. Refrigerate remaining paste for up to a week.)

ROASTED CHICKEN WITH LEMON BUTTER

Roasted Chicken with Lemon Butter image

Provided by Guy Fieri

Categories     main-dish

Time 1h35m

Yield 4 servings

Number Of Ingredients 12

6 tablespoons butter, at room temperature
2 lemons, zested and sliced into 1/4-inch rounds
Kosher salt and freshly cracked black pepper
One 4 to 5-pound chicken (organic and free range, if possible)
Extra-virgin olive oil, for drizzling
1/2 fennel, bulb sliced and fronds cut into 2-inch lengths
1/2 fennel, bulb sliced and fronds cut into 2-inch lengths
1 onion, sliced
4 cloves garlic
3 sprigs fresh thyme
2 to 3 sprigs fresh oregano
3/4 cup dry white wine

Steps:

  • Preheat the oven to 425 degrees F. Place a large skillet or roasting pan in the oven to preheat while you prepare the chicken.
  • Begin by preparing a lemon butter. Place 4 tablespoons of the butter in a mixing bowl and add about 1 teaspoon of zest from the lemons. Season with salt and pepper and mix well.
  • Flatten the chicken by cutting out the backbone and flattening the breast by firmly pressing with the heel of your hand. Sprinkle both sides of the chicken with salt and pepper. Using your fingers, loosely separate the skin from the breast and thighs. Smear the lemon butter evenly in the cavity between the skin and meat, ensuring it is worked evenly over the bird. With the skin side facing up, drizzle olive oil over the chicken.
  • Remove the preheated pan from the oven and place the chicken in the pan, skin-side down.
  • Place the lemon slices over the bird along with fennel, onions, garlic, thyme and oregano. As it cooks, this will flavor the bird.
  • Place in the oven and roast for 30 minutes. Remove from the oven, flip the chicken to skin-side up and add half the wine to the pan. Return to the oven and roast until an instant-read thermometer inserted into the joint between the leg and thigh registers 165 degrees F, approximately 30 minutes longer. When the chicken is done, remove from the pan to a serving platter and allow to rest for 15 minutes before carving and plating.
  • Meanwhile, make a pan sauce. Place the chicken pan over medium-high heat and add the remaining butter and wine. Stir until the butter is melted and the sauce thickens slightly. Pour the pan sauce over the platter of chicken. Serve immediately.

CLASSIC TOMATO SAUCE

Classic Tomato Sauce image

Since everyone has his or her version of this sauce, we spent a lot of time getting this one right. No surprise, the best results came from using the best ingredients. When it comes to tomato sauce, using poor quality canned tomatoes can leave an acidic or tinny taste in your mouth. So while it is a bit more expensive, we like to use Pomi brand chopped tomatoes (you know, the ones that come in a box). The sauce starts with a careful "sweating" of onions (cooking them slowly, until translucent but not brown, to extract as much flavor as possible), and the flavor continues to build from a nice, long, low-heat simmering after the tomatoes are added.

Provided by Daniel Holzman

Categories     Sauce     Tomato

Yield Makes 7 cups

Number Of Ingredients 8

1/4 cup olive oil
1 onion, finely diced
1 bay leaf
1 teaspoon chopped fresh oregano or 1/2 teaspoon dried
2 garlic cloves, roughly chopped
2 teaspoons salt or to taste
2 tablespoons tomato paste
Two 26-ounce boxes Pomi Chopped Tomatoes or two 28-ounce cans whole plum tomatoes, chopped with their liquid

Steps:

  • Heat the olive oil in a large pot over medium heat. Add the onions, bay leaf, oregano, garlic, and salt and cook, stirring often, until the onions are soft and translucent, about 10 minutes.
  • Add the tomato paste and continue cooking for 5 minutes. Add the tomatoes and stir constantly until the sauce begins to boil. Lower the heat and simmer for 1 hour, stirring every 5 minutes or so to prevent the sauce on the bottom of the pot from burning. Taste and season with additional salt, if desired. Remove the bay leaf before serving.
