EASY CHICKEN LIVER PATE



Easy Chicken Liver Pate image

1 cup butter, divided
1 onion, quartered
1 tart apple - peeled, cored, and quartered
1 pound chicken livers, rinsed and trimmed
¼ cup brandy
2 tablespoons heavy whipping cream
1 teaspoon lemon juice
1 ½ teaspoons salt
¼ teaspoon ground black pepper
1 tablespoon butter, melted

Steps:

  • Set aside 1/2 cup butter to soften slightly.
  • Place onion and apple in a food processor with the steel knife blade; process until coarsely chopped.
  • Melt 3 tablespoons butter in a large skillet over medium heat. Add onion and apple; cook and stir until lightly browned, 5 to 10 minutes. Return onion and apple to food processor.
  • Melt 5 tablespoons butter in the same skillet over high heat; cook chicken livers until browned and just done inside, about 5 minutes. Reduce heat to low and pour in brandy; allow to warm up without stirring. Carefully light the liquid; let flames subside.
  • Transfer chicken liver mixture to the food processor with onion and apple. Add cream and process until very smooth. Transfer mixture into a bowl and refrigerate until cool, at least 30 minutes.
  • Cut the softened 1/2 cup butter into pieces and process in the food processor; add about 1/3 of the liver mixture and blend about 5 seconds. Repeat 2 more times with remaining liver mixture. Add lemon juice, salt, and pepper and blend well.
  • Transfer pate to a serving dish or several small dishes; top with 1 tablespoon melted butter. Cover loosely with plastic wrap; refrigerate until chilled and set, about 3 hours.

1 tablespoon butter
1 clove garlic, peeled and chopped
1 tablespoon chopped onion
¼ pound chicken livers, trimmed and chopped
2 tablespoons dry sherry
⅓ (8 ounce) package cream cheese, softened
hot sauce to taste
salt and pepper to taste

Steps:

  • Melt butter in a medium saucepan over medium heat. Stir in garlic, onion and chicken livers. Reduce heat to low, and simmer approximately 10 minutes, until chicken livers are tender and no longer pink.
  • Place chicken liver mixture in a blender with dry sherry, cream cheese, hot sauce, salt and pepper. Blend until smooth. Transfer to a medium bowl, cover and chill in the refrigerator approximately 2 hours before serving.

James Martin's luxuriously rich dinner party starter can be made up to two days in advance for fuss-free entertaining - serve with toasted brioche, cornichons and chutney.

375g unsalted butter
400g chicken livers, trimmed
2 large garlic cloves, 1 crushed, 1 finely sliced
3 thyme sprigs, leaves only
3 tbsp madeira
4 slices brioche
1 Bramley apple, cored and diced
onion chutney, to serve
cornichons, to serve

Steps:

  • Heat 1 tbsp of the butter in a non-stick frying pan over a medium heat. When the butter is foaming, add the chicken livers and fry for 2 mins each side.
  • Stir the crushed garlic, some of the thyme and Madeira into the pan with the livers. Fry for 2 mins, letting the Madeira simmer. Transfer the mixture to a food processor, reserve 200g of the butter and add the rest to the processor. Blend everything to a smooth paste. Season to taste, then spoon into 4 x 70ml clip-top jars.
  • Melt the reserved butter in a medium frying pan and add the sliced garlic. Turn the garlic in the butter until slightly golden. Pour into the 4 jars of pâté, ensuring a few slices of garlic and the remaining thyme leaves go in each jar, and chill in the fridge for at least 4 hrs, or until set. Can be made up to 2 days in advance.
  • Before serving, toast the brioche, then cut into triangular quarters for serving. Stir the diced apple through the chutney. Serve the pâté on small wooden boards with the toasted brioche, cornichons and chutney.

500g chicken livers
100g butter
100g unsmoked lardons or chopped streaky bacon
1 garlic clove , crushed or finely chopped
1 tbsp fresh thyme leaves or 1 tsp dried
5 tbsp pineau or sherry
herb sprigs to garnish, rosemary, thyme or bay
toasted brioche or raisin bread and cornichons, to serve

Steps:

  • Rinse the chicken livers and cut away any dark patches and small stringy threads. Pat dry with kitchen paper. Heat 25g of the butter in a frying pan until foaming, then add the lardons or bacon and fry until crisp. Add the garlic, chicken livers and thyme and fry briskly for about 5 mins, until they are evenly browned. They should be nicely browned on the outside, but pink inside and should feel squashy when pressed.
  • Add the pineau, salt and pepper, then bubble for a few mins. Remove from the heat. Blitz the mixture in a food processor until smooth, then spoon into a jar or dish. Smooth the top.
  • Melt the remaining butter, put a herb sprig or bay leaf on top of the pâté and pour over the butter, leaving the sediment behind. Leave to cool, then chill until set.4 Serve spooned from the dish with toasted brioche, a bowl of cornichons and a little sea salt.

Pineau, is a sweet aperitif and is the star of this dish! Pineau de Charentes is a combination of cognac and freshly pressed juice from very ripe grapes. This product is very common in the Cognac region of France.. But really, it should be more well known because it has some great qualities and it differentiates itself from other wine based aperitifs. The production of Pineau des Charentes is relatively simple. Very ripe grapes are harvested and pressed to produce a sweet must. This is then blended, within a few hours, with cognac to halt any fermentation of the must. The cognac must be aged at least one year to be used in the production. Since, I love chicken livers - when I got this in the mail, I had to try it. However, we used sherry. There is one hour chilling time :( sorry! Recipe from Good Food Magazine, October 2005 edition.

100 g butter (3 1/2 oz)
100 g unsmoked lardons (3 1/2 ozs) or 100 g chopped streaky bacon (3 1/2 ozs)

1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme
5 tablespoons pineau des charentes wine or 5 tablespoons sherry wine
herbs, sprigs rosemary, thyme (to garnish) or bay leaf

raisin bread, to serve
cornichon, to serve

Steps:

  • Rinse the chicken livers and cut away any dark patches and small stringy threads.
  • Pat dry with kitchen towelling.
  • Heat 25g (7/8 oz) of the butter in a frying pan until foaming, then add the lardons or bacon and fry until crisp.
  • Add the garlic, chicken livers and thyme and fry briskly for about 5 mins, until they are evenly browned.
  • They should be nicely browned on the outside, but pink inside
  • and should feel squashy when pressed.
  • Add the pineau, salt and pepper, then bubble for a few minutes
  • Remove from the heat.
  • Blitz the mixture in a food processor until smooth, then spoon into a jar or dish.
  • Smooth the top.
  • Melt the remaining butter, put an herb swig or bay leaf on top of the pâté and pour over the butter, leaving the sediment behind.
  • Leave to cool, then chill until set.
  • Serve spooned from the dish with toasted brioche a bowl of cornichons and a little sea salt.

  • In a medium saucepan, combine the chicken livers, onion, garlic, bay leaf, thyme and 1/2 teaspoon of salt. Add the water and bring to a simmer. Cover, reduce the heat to low and cook, stirring occasionally, until the livers are barely pink inside, about 3 minutes. Remove from the heat and let stand, covered, for 5 minutes.
  • Discard the bay leaf. Using a slotted spoon, transfer the livers, onion and garlic to a food processor; process until coarsely pureed. With the machine on, add the butter, 2 tablespoons at a time, until incorporated. Add the Cognac, season with salt and pepper and process until completely smooth. Scrape the pâté into 2 or 3 large ramekins. Press a piece of plastic wrap directly onto the surface of the pâté and refrigerate until firm. Serve chilled.
