1 pound boneless skinless chicken breasts, cut into strips
1 garlic clove, minced
1/4 cup butter, divided
1 small yellow squash, halved lengthwise and sliced
1 small zucchini, halved lengthwise and sliced
1/2 cup julienned sweet red pepper
1/2 cup julienned green pepper
1/4 cup thinly sliced onion
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup chicken broth
1/2 cup half-and-half cream
8 ounces angel hair pasta, cooked and drained
2 tablespoons shredded Parmesan cheese

Steps:

  • In a large skillet, saute chicken and garlic in 2 tablespoons butter for 10-12 minutes or until chicken juices run clear. Add vegetables. Cook until crisp-tender; remove from skillet and set aside. , In the same skillet, melt remaining butter. Add flour, salt and pepper; stir to form a smooth paste. Gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in cream and heat through. Add chicken and vegetables; stir until well mixed. , Place pasta in a greased 2-qt. baking dish. Pour chicken mixture over top. Sprinkle with Parmesan cheese. Cover and bake at 350° for 15 minutes; uncover and bake 5 minutes longer.

3/4 lb Penne Pasta (boiled according to package instructions with 1/2 Tbsp salt)
1 1/2 Tbsp unsalted butter
1 Sweet Bell Pepper (sliced)
1/2 to 3/4 lb Button Mushrooms
1 small onion
1 Tbsp Butter + 1 Tbsp Olive oil
1/8 tsp freshly ground black pepper and 1/2 tsp salt for the veggies
1 lb chicken breast or chicken thigh
Salt (Pepper and Your favorite seasoning to sprinkle on the chicken (i.e. Garlic Mrs. Dash))
1/2 cup Sundried tomatoes (coarsely chopped into small pieces)
2 cups heavy whipping cream
3/4 cup shredded parmesan cheese
1/2 cup Sweet Chili Sauce (optional; if you want a spicy kick (We used Mae Ploy Brand from Cash & Carry))

Steps:

  • Boil pasta according to package instructions (except I only used 1/2 Tbsp salt). Drain cooked pasta and mix in 1 1/2 tbsp butter so the noodles don't stick to each other.
  • Season chicken with salt, pepper and your favorite seasoning such as Mrs. Dash. Grill or saute your seasoned chicken until fully cooked. Let it rest to cool down slightly, then slice it against the grain.
  • Heat a deep/large skillet over medium/high heat. Toss in 1 Tbsp butter and a couple Tbsp olive oil. Sautee sliced bell peppers, sliced mushrooms and finely diced onions until soft (about 8 min).
  • Once the veggies are cooked, stir in the pasta, chopped sun-dried tomatoes and cooked chicken and mix well. Pour in 2 cups heavy whipping cream, 1/4 cup sweet chili sauce (if using) and 3/4 cup shredded parmesan cheese. Stir to combine. Set the pan back over the heat and heat everything thoroughly stirring several times until the sauce is creamy and cheese is melted.

One Pot Creamy Chicken and Vegetable Pasta image

2 tablespoons olive oil
1/2 cup chopped onion
1 tablespoon minced garlic
2½ cups uncooked penne pasta
2 cups chicken broth
1/4 cup water
1 cup coarsely chopped fresh broccoli
3/4 cup chopped red bell pepper
1/2 cup coarsely chopped carrots
1/2 cup frozen peas
4 ounces cream cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
chopped fresh parsley, (for garnish (optional))

Steps:

  • Season the chicken with salt and pepper; set aside.
  • In a 12-inch pan or skillet, heat the olive oil over medium heat. Add the onions and stir until soft, about 3 minutes. Add the chicken to the pan and cook until brown on both sides. Stir in the garlic and cook one additional minute. Add the uncooked pasta, chicken broth, water, broccoli, red bell pepper, carrots and peas. Stir, then bring to a boil. Reduce the heat to low, cover and simmer for 22 minutes.
  • Uncover and cook until almost all of the liquid is absorbed, about 5 additional minutes. Remove from heat, and stir in the cream cheese, mozzarella cheese and Parmesan cheese. Stir until cheese is melted.
  • Divide the pasta and vegetables between four bowls, and garnish with parsley (if using). Serve immediately.

2/3 cup good olive oil
1 cup whole peeled garlic cloves (24 cloves)
2 (28-ounce) cans whole peeled San Marzano tomatoes
2 teaspoons whole fennel seeds, chopped
1 teaspoon crushed red pepper flakes
1/3 cup dry red wine, such as Chianti
Kosher salt and freshly ground black pepper
1/4 cup julienned fresh basil leaves, plus extra for serving
1 pound dry penne rigate, such as DeCecco
Freshly grated Parmesan cheese, for serving

Steps:

  • In a medium (10-inch) pot or Dutch oven, such as Le Creuset, warm the olive oil over medium-low heat. Add the garlic and cook for 10 to 12 minutes, tossing occasionally, until the garlic has softened and is lightly browned.
  • Meanwhile, drain the tomatoes, place them in a food processor fitted with the steel blade, and pulse until they're roughly chopped. With a slotted spoon, transfer the garlic to the food processor and pulse again to chop the garlic. Pour the tomato mixture into the pot with the olive oil, add the fennel, red pepper flakes, red wine, 1 tablespoon salt, and 1 teaspoon black pepper. Bring to a boil, lower the heat, and simmer for 30 minutes. Stir in the basil, taste for seasonings (it will be very spicy!), and keep warm over very low heat.
  • Meanwhile, bring a large pot of water to a full boil. Add 2 tablespoons kosher salt and the penne and cook according to the directions of the package.
  • Two minutes before the pasta is al dente, using a wire or spider strainer, lift the pasta out of the boiling water and add it to the sauce, along with 1/4 cup of the pasta water. Simmer for 2 to 3 minutes, until the pasta is al dente. Spoon the pasta into low shallow bowls, sprinkle with extra basil and Parmesan cheese, and serve hot.

1 zucchini, cut lengthwise in half, then crosswise into thin slices
1 small red pepper, chopped
2 tsp. minced garlic
2 Tbsp. butter
1 Tbsp. flour
1-1/2 cups milk
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1/4 cup POLLY-O Grated Romano Cheese
1 Tbsp. finely chopped fresh parsley

Steps:

  • Cook pasta as directed on package, omitting salt. Meanwhile, heat oil in large skillet on medium heat. Add chicken and onions; cook 5 min. or until chicken is done, stirring frequently. Add asparagus, zucchini, peppers and garlic; cook and stir 2 to 3 min. or until vegetables are crisp-tender. Remove from heat; cover to keep warm.
  • Melt butter in medium saucepan on medium heat. Stir in flour until blended. Gradually stir in milk. Bring to boil; cook 2 min. or until thickened, stirring constantly. Add cream cheese and Romano; cook and stir 1 to 2 min. or until cream cheese is completely melted and sauce is well blended.
  • Drain pasta; place in large bowl. Add chicken mixture and cream cheese sauce; mix lightly. Sprinkle with parsley.

1 lb penne pasta, cooked

1/4 cup frozen sweet corn
2 teaspoons fresh basil, chopped
2 teaspoons fresh parmesan cheese, grated

Steps:

  • Mix together the juice of 1 lime, 1 teaspoon of lime zest, 1 garlic clove, crushed, 2 Tablespoons salad oil, 2 teaspoons fresh cilantro, chopped and salt and pepper to taste.
  • Marinate chicken breast for two hours in the refrigerator.
  • Place the chicken breast in a pan and cook over medium-high heat for 3 minutes on each side.
  • Remove from pan, cool and slice.

  • In a seperate bowl, combine 3 Tablespoons of olive oil, juice of one lime, 2 teaspoons of cilantro, 2 teaspoons of red wine vinegar, and salt and pepper to taste.
  • Pour over penne mixture and toss.
  • Sprinkle with the basil, parmesan cheese and pine nuts to finish.

1 medium sweet pepper, red or yellow
1 small eggplant
1 clove garlic, coarsely chopped
1/2 cup extra-virgin olive oil
2 small or 1 medium zucchini
3 tablespoons minced fresh green herbs, like flat-leaf parsley, basil, chives or a combination
Sea salt to taste
1 pound penne, or other short, stubby pasta
3/4 to 1 cup tomato sauce (like the recipe above, without the added basil, or a good-quality canned tomato sauce)

Steps:

  • Core and seed peppers and cut them into 1/4-inch strips. Cut eggplant into cubes 1/2-inch or smaller.
  • In large frying pan, saute garlic and peppers in 2 tablespoons olive oil over medium-low heat until they are very soft. Remove and set aside in medium bowl. Add remaining oil to pan, and raise heat to medium-high. Add eggplant, and brown quickly, removing cubes as they brown and adding them to peppers.
  • While vegetables cook, cut zucchini in half lengthwise, and then slice about 1/2-inch thick. Add zucchini pieces to pan, brown quickly on both sides, and add them to eggplant and peppers.
  • Remove pan from heat, and immediately stir minced herbs into hot oil. Pour over vegetables and keep warm.
  • Bring 5 to 6 quarts water to rolling boil. Add at least 2 tablespoons salt and then the pasta.
  • While pasta is cooking, warm the tomato sauce in separate pan.
  • Start testing pasta at 6 minutes. When pasta is done, drain it and turn it immediately into preheated bowl. Mix rapidly with hot tomato sauce. (Or drain pasta when it is not quite done, and finish cooking in sauce.) When sauce is thoroughly mixed in, add sauteed vegetables, and mix lightly. Serve immediately.

3 tablespoons all-purpose flour
3 tablespoons butter
2 cups skim milk
1 pinch white pepper
1 1/2 teaspoons italian seasoning

7 ounces penne pasta (whole wheat is good!)
2 yellow bell peppers, chopped or 2 orange bell peppers
1 zucchini, chopped
12 ounces fresh broccoli, chopped
6 ounces fresh mushrooms, sliced (optional)

1 cup monterey jack cheese

Steps:

  • Preheat oven to 350 degrees.
  • In a pan cook chopped chicken with garlic and other seasonings you like. (I used a little Jamaican Jerk seasoning.).
  • Prepare the white sauce. Place butter in small saucepan (preheated) over medium heat. Once the butter foams, add flour and stir for 1 minute (try not to let it turn brown). Add milk to the mix and continue stirring until it starts to bubble. Reduce heat; simmer for 10 minutes. Add and stir in pepper, Italian seasoning, and parmesan cheese.
  • While white sauce is simmering, boil water for penne. Cook penne about 8-9 minutes and for the last minute add the chopped broccoli.
  • In a large bowl, combine pasta, broccoli, chicken and chopped veggies. Stir white sauce inches Pour all into a large casserole dish. Sprinkle on cheese. Cover with foil or lid. Bake for 20-30 minutes.
