CHICKEN IN TOMATO-BASIL CREAM SAUCE

This recipe was inspired by all our fresh garden tomatoes and herbs. In summer, I grill the chicken with some Italian seasonings and a bit of garlic powder, but on rainy days or in winter, I cook it on the stovetop. -Rachel Kowasic, Connellsville, Pennsylvania

1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
3 teaspoons butter, divided
8 plum tomatoes, seeded and chopped
1 small onion, finely chopped
1 garlic clove, minced
1/2 cup reduced-sodium chicken broth
1 cup uncooked whole wheat orzo pasta
1 cup evaporated milk
1/2 cup loosely packed basil leaves, julienned
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup crumbled feta cheese

Steps:

  • In a large nonstick skillet coated with cooking spray, cook chicken in 2 teaspoons butter until no longer pink. Remove and keep warm. In the same skillet, saute tomatoes and onion in remaining butter until onion is softened. Add garlic; cook 1 minute longer., Stir in broth. Bring to a boil; add orzo. Reduce heat. Cover and simmer for 10-12 minutes or until orzo is tender. Stir in the chicken, milk, basil, salt and pepper; heat through (do not boil). Sprinkle with cheese just before serving.

I LOVE chicken along with tomato and basil.....heck I just love tomato with basil! I whipped this up last night and hubby loved it so I thought I would post it. Hope you enjoy!!

2 lbs ground chicken (or what ever ground meat you prefer)
14 ounces mushrooms
1 large red onion, chopped
3 garlic cloves, chopped
1 teaspoon olive oil
salt, to taste
pepper, to taste
1/2 cup marsala wine
3 (14 1/2 ounce) cans diced tomatoes, with juice
4 cups chicken broth
7 large basil leaves, chopped (~ 1 cup)
3 green onions, chopped
1 tablespoon olive oil
2 tablespoons Worcestershire sauce
2 tablespoons hot sauce (or less if you don't want a "bite")
1 tablespoon oregano
1/2 cup parmesan cheese, grated
1 cup mozzarella cheese, shredded
1 cup cooked penne (or your choice of pasta)

Steps:

  • Combine meat, mushrooms, onion, garlic, oil, salt, pepper and wine in a pan and sautee until meat is just about done and veggies are soft.
  • While the meat+ are cooking add the remainder of the ingredients to a crock pot or regular pot.
  • When meat is done, add it to the pot.
  • Cook on low on the stove for 2 hours or high in the crock pot for 4 hours.
  • An hour before the soup is done, cook pasta.
  • When ready to eat, add pasta to soup and garnish with shredded mozz. cheese.
  • ENJOY!

6 chicken thigh fillets, cut into quarters
1 red onion, sliced into rings
4 bacon, rashers chopped
2 -3 garlic cloves, crushed
1 (13 1/2 ounce) can chopped tomatoes
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 teaspoon sugar
12 kalamata olives
1/4 cup fresh basil, chopped
salt and pepper

Steps:

  • Cook the chicken pieces for 5 minutes over moderate-high heat.Set aside.
  • Fry the onion with bacon and add the garlic.Cook for 5 minutes till bacon is browned.
  • Add tomatoes, dried basil and oregano and sugar.
  • Cook for 5 minutes or until slightly reduced .
  • Add the chicken to the pan,simmer for 10 minutes and add Kalamata olives with fresh basil.
  • Season with salt and pepper.

Italian seasoned chicken cooked in phyllo pastry with spinach, cashews and mozzarella, served with a light tomato basil sauce.... I just couldn't think what to call it, asked DH, and he said "Cyril". (It was 37 degrees and very humid, so this actually struck him as funny.) Hope you try it and enjoy!

2 skinless chicken breast halves
1/3 cup chopped cashews
1 cup baby spinach leaves, firmly packed
4 phyllo pastry sheets
1/3 cup shredded lite mozzarella cheese
1 egg, beaten
1/2 cup seasoned dry bread crumb
2 teaspoons italian seasoning, divided
60 g butter, melted
2 teaspoons minced garlic
2 tablespoons olive oil
1 (400 g) can diced tomatoes
1/4 cup white wine
1/4 cup basil leaves, firmly packed
1/3 cup light cream
1 teaspoon italian seasoning
2 tablespoons garlic flakes
salt and pepper, to taste

Steps:

  • Pre-heat oven to 180C / 375°F
  • Mix seasoned breadcrumbs with Italian seasoning in a shallow bowl; dip chicken into beaten egg, then into breadcrumb mixture, thoroughly coating
  • Heat olive oil in frying pan; cook chicken, around 7 -10 minutes depending on breast thickness; set aside on paper towel
  • Return pan to heat; lightly toast chopped cashews and toss through spinach til wilted; put cashew-spinach mix in a bowl and stir through mozzarella
  • Mix melted butter and minced garlic together
  • Spread out two sheets of phyllo on top of each other, brush with melted butter, fold in half
  • Now place one of the chicken breast halves on phyllo, top with half cashew-spinach-cheese mixture, roll up to form a parcel, brush with butter mixture again
  • Place in greased oven tray; repeat with other breast half, cook in pre-heated oven for 20 minutes or til browned
  • Meanwhile, make the tomato-basil sauce: In same pan (no need to clean!), pour diced tomatoes, white wine, garlic and seasoning, bring to the boil then simmer 15 minutes, stirring occasionally
  • Stir though cream and shredded basil leaves and heat through for 5 minutes; season with salt and pepper as desired
  • Serve over phyllo chicken with a side of veggies!
