CREOLE BURGERS WITH A BAYOU MAYO
A burger with Creole spice and flavorful mayo.

Steps:
- Lightly spray a sauté pan with a non stick cooking spray. In the prepared pan, sauté the onion, garlic and bell pepper until tender. Set aside and allow to cool completely.
- In a large bowl, combine the chicken and cooled mixture. Add the egg, breadcrumbs and 2 teaspoons Creole seasoning. Mix all together well, and form into 8 patties. Salt and pepper each patty.
- Spray a large skillet with non stick cooking spray and cook burgers until done, about 5 minutes on each side.
- While burgers are cooking, prepare Bayou Mayo.
- Bayou Mayo
- In a small mixing bowl, combine mayonnaise, 1 teaspoon Creole seasoning, lemon juice and chives and stir.
- To assemble burgers, place patty on bun half, top with generous dollop of Bayou Mayo. Put top bun over chicken burger and serve!

- 1. Heat the oil in a large skillet over medium-high heat. Add the onion, mushrooms, bell pepper, celery, and garlic. Cook, stirring occasionally, until the vegetables are very tender, about 8 min. Remove from heat; transfer to a large bowl. Let cool 5 minutes. 2. Add the ground chicken and creole seasoning to the onion/mushroom mixture, stirring well to combine. Shape into 4 patties. 3. Spray a grill pan (or griddle) with nonstick spray and heat to medium heat. Add the patties and cook, turning occasionally, until cooked...about 6 - 7 minutes per side. 4. - In a large skillet, saute onion in oil until tender. Add andouille sausage; cook 1 minute longer. Transfer to a large bowl. Stir in the Creole seasoning, 1/4 teaspoon garlic powder, salt and pepper. Crumble turkey and turkey sausage over mixture and mix well. Shape into four patties., In a large skillet over medium heat, cook burgers for 5-7 minutes on each side or until a thermometer reads 165° and juices run clear. Top with cheese; cover and cook for 1-2 minutes or until cheese is melted., For remoulade, in a small bowl, combine the Miracle Whip, lemon juice, pepper sauce, relish and capers. - Sprinkle chicken with 1/4 teaspoon salt and pepper. In a large skillet over medium heat, brown chicken in oil; remove and set aside. In the same skillet, saute onion, celery, green pepper and garlic until tender. Stir in tomatoes, water, paprika, remaining 1/4 teaspoon salt, cayenne pepper and bay leaf; bring to a boil. - Melt butter in a small skillet over medium heat. Add chopped red onion, garlic, and tomato paste. Cook for 5 minutes to soften and sweeten. Sprinkle the sugar into the pan and remove from heat. - Heat grill to high. Put the chicken breasts between 2 pieces of cling film and bash with a rolling pin until they're about half their original thickness. Whizz the toast in a food processor to rough breadcrumbs, then tip out onto a plate.
- Beat the egg and mustard together in a bowl and season. Dip the chicken into the egg, let the excess drip back into the bowl, then press into the toasty breadcrumbs. Put under the grill on a flat baking sheet and grill for about 10 mins, turning once, until golden and crisp on both sides and the chicken is cooked through.

- Season chicken thighs with Creole seasoning.
- Melt butter in a skillet over medium heat; cook chicken in the melted butter until browned, 3 to 4 minutes per side. Transfer chicken to a plate. Add tomatoes with green chile peppers, water, tomato sauce, and Spanish-style rice mix to the same skillet; stir well. Return chicken to the rice mixture and bring to a boil.
