Chicken breasts baked with ham and Swiss cheese, topped with an unusual mixture of sour cream, white wine, creamy soup and spices. This is a bit different than normal Chicken Cordon Bleu, but everyone seems to like it much better!

8 breast half, bone and skin removed (blank)s skinless, boneless chicken breast halves
8 slices ham
8 slices Swiss cheese
1 (10.75 ounce) can condensed cream of chicken soup
1 cup sour cream
½ cup white wine
1 teaspoon garlic powder
1 teaspoon dried parsley
1 teaspoon salt
1 teaspoon ground black pepper
1 (6 ounce) package herb-seasoned dry bread stuffing mix

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken breasts in a lightly greased 9x13 inch baking dish. Lay a ham slice, then a cheese slice on top of each breast.
  • In a medium bowl combine the soup, sour cream, wine, garlic powder, parsley, salt and pepper. Mix well and pour mixture over chicken/ham/cheese pieces. Top all with the dry stuffing mix to cover.
  • Bake at 350 degrees F (175 degrees C) for about 30 minutes, or until chicken is cooked through and juices run clear.

This entree is easy and delicious! It's one of my husband's favorites! Try to use the largest chicken breasts you can find so you'll be able to roll them easier.

4 skinless, boneless chicken breast halves
¼ teaspoon salt
⅛ teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
½ cup seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
  • Pound chicken breasts to 1/4 inch thickness.
  • Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
  • Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

I came up with this recipe while trying to make Cordon Blue. I used a Raspberry Teriyaki sauce by accident. It was what we had on hand. I also choose to use crushed Stove top stuffing but you can use seasoned bread brumbs.

4 boneless skinless chicken breasts
1/4 lb honey-roasted ham
1/4 lb provolone cheese
1/3 cup all-purpose flour
1/2 cup seasoned bread crumbs
1/2 cup raspberry teriyaki sauce

Steps:

  • Preheat oven to 375 degrees.
  • Spray a 12 x 8 inch baking dish pan with cooking spray.
  • Pound chicken breasts until about 1/4-inch thick. Use the flat side of the mallet when hammering.
  • Place a piece and a half of honey ham in center of chicken along with 1 and a half of provolone cheese.
  • I put a few drop of Raspberry Teriyaki sauce on the ham and cheese.
  • Turn sides in first than roll up into a log.
  • Secure with tooth picks.
  • Put the Flour, Raspberry Teriyaki, and Seasoned bread crumbs in 3 separate dishes.
  • Coat the chicken first in the flour. Then coat the chicken in the sauce. And finally coat the chicken with bread crumbs.
  • Place in the pan and bake for 35 to 40 minutes.
  • Serve with a nice salad!

5 boneless skinless chicken breasts, in half
1/2 lb ham, cubed
1/2 lb swiss cheese, cubed
1/4 cup white wine
1 teaspoon parsley
salt
pepper
breadcrumbs
1/2 cup milk

Steps:

  • Take chicken breast and cut a slit in each lengthwise.
  • Mix in a small bowl the swiss cheese, ham cubes, parsley, white wine and spices.
  • Fill in the chicken pockets with ham mixture.
  • Dredge chicken in milk then bread crumbs. Place in baking dish sprayed with non-stick cooking spray.
  • Cook at 350* for 30 to 45 minutes, until chicken reaches 165* and is a nice light golden brown.

1/2 teaspoon pepper, divided
1/4 teaspoon salt
1/3 cup gruyere, or, Swiss cheese
2 tablespoons reduced-fat cream cheese
1/4 cup whole wheat breadcrumbs
1 tablespoon fresh parsley, chopped
4 teaspoons extra virgin olive oil, divided
1/4 cup ham, chopped

Steps:

  • Preheat oven to 400°F.
  • Sprinkle chicken with 1/4 t pepper and salt. Combine cheeses in a bowl. And the remaining 1/4 t pepper, breadcrumbs, parsley and 2 t oil in another bowl.
  • Heat the remaining oil in a large ovenproof nonstick skillet over medium heat. Cook the chicken until browned on both sides, about 2 minutes per side. Move the chicken to the center so all pieces are touching. Spread with cheese mixture, sprinkle with ham, then top with breadcrumb mixture.
  • Bake until the chicken is no longer pink and registers 165F internally, 5-7 minutes.

5 teaspoons butter, melted
1 large garlic clove, minced
1/2 cup Italian seasoned breadcrumbs
1 tablespoon grated fresh parmigiano-reggiano cheese
1 teaspoon paprika
4 boneless skinless chicken breast halves
1/4 teaspoon sea salt
1/4 teaspoon dried oregano
1/4 teaspoon black pepper
4 slices maple honey-roasted ham
4 slices mozzarella cheese

Steps:

  • Preheat oven to 350°.
  • Place the broth in a microwaveable bowl at high 15 seconds.
  • Stir in the butter and garlic.
  • Combine the breadcrumbs, parmigiano cheese and paprika in a shallow bowl; set aside.
  • Place the chicken on a cutting board and pound with a meat mallet to 1/4 inch thick.
  • Sprinkle both sides of chicken with the salt, oregano and pepper.
  • Top each breast with one slice of ham and one slice of cheese.
  • Roll up each breast jelly-roll fashion.
  • Dip each roll in chicken broth mixture; roll in breadcrumbs.
  • Place rolls, seam side down in an 8-inch square pan coated with cooking spray.
  • Pour remaining broth over the chicken.
