Steps:
- Heat olive oil and minced garlic in medium skillet. (Medium heat).
- Once garlic is slightly browned, add chicken. Season to flavor, and cover.Continue to keep an eye on the chicken, stirring occasionally. Cut off the heat and leave covered once juice runs clear.
- While chicken is browning. in a dry mixing bowl, mix together flour and salt.
- In a separate mixing bowl, stir together milk, eggs, and melted butter.
- Carefully mix the wet mixture into the flour mixture. Blend well.
- Mix in the minced broccoli and cheddar cheese.
- In 2 (6) muffin pans, spray well with non-stick spray (or grease, but do not flour).
- Put around 4-5 cubes of chicken in the bottom of each tin.
- Fill each tin a little more than halfway with batter.
- Place tins in a cool oven. Heat to 400* and bake for 25-30 minutes, or until the tops are a light, golden brown.
- Once done, carefully "pop" the popovers out onto a serving dish or other plate. (I used a small spoon).
- Serve with white or chicken flavored rice.

- Preheat oven to 375˚F.
- Lay the chicken breasts flat in a large baking dish. Sprinkle the garlic powder, salt and pepper over the chicken breasts to season them, then spread the broccoli florets on top.
- Pour the broccoli cheese soup over the broccoli and chicken so that it is evenly covered and then top with the shredded cheddar cheese.
- Bake for 45-55 minutes or until the chicken is cooked through (165˚F internal temperature.)
- Garnish with parsley and serve over rice, mashed potatoes or your with your favorite side!

Steps:
- In a large bowl, mix the warm water, yeast, and sugar. Let sit for 5 minutes, or until the mixture becomes cloudy and slightly foamy.
- Add the flour, salt, and 1 tablespoon of oil to the bowl with the yeast mixture and stir until combined.
- Turn out onto a lightly floured surface and knead for 3-5 minutes.
- Wipe the large bowl clean and lightly coat with remaining oil. Place the dough into the bowl and cover with plastic wrap and a dish towel.
- Set in a warm place for 20 minutes, or until the dough has nearly doubled in size.
- Preheat oven to 450ºF (230ºC), and line a sheet tray with parchment paper.
- Once risen, turn dough out onto a lightly floured surface and stretch the dough into a 12x22-inch (30x56 cm) rectangle.
- Layer the cheddar, broccoli, and chicken in the center of the rectangle, lengthwise, leaving 1-2 inches (2 ½-5 cm) on the top and bottom.
- Slice the dough in half through the center, lengthwise.
- Fold each piece's center edge towards the outer edge and pat down, creating a long roll-up.
- Slice each roll into 4-5 equal pieces. Pinch the edges closed on all the pieces and place on sheet tray.
- Brush the tops with olive oil and sprinkle with remaining cheese.
- Bake for 15-20 minutes, or until light golden brown.
- Serve immediately or allow to cool, then freeze in an airtight container up to 1-2 months.
- To reheat, microwave for 45 seconds to 1 minute.

After the first time I made it, I went on a casserole kick and made it twice a week for 3 months straight! I typically serve this over rice, but it is just as great by itself. Last time I didn't make rice, but served it with bread.

- Boil broccoli and drain.
- Mix mayo,sour cream,and chicken stock.
- Arrange shredded chicken on bottom of casserole dish, then broccoli.
