CHICKEN BREASTS AND BALSAMIC VINEGAR
I needed a fast recipe for some boneless chicken, and this was it. Adapted a bit from a recipe I had, it was delicious. Suitable for just family, or company, too.

Steps:
- Mix the flour, salt and pepper in a shallow dish, and dredge the chicken in it.
- Heat oil in large skillet and cook the chicken until brown on one side (about 3-4 min).
- Turn the chicken and add the garlic.
- Cook 3 minutes more, while stirring the garlic around.
- Add the broth, vinegar, bay leaves, and herbs.
- Cover tightly, reduce heat to med-low, cook for about 10 minutes, turning chicken a couple of times. (When you get to the end of this step, you have a choice...you can proceed and reduce the sauce, or you can stop now after ADDING THE TBSP OF BUTTER. This way, you have more sauce, which is the way my husband likes it.)
- When chicken is done, remove from pan.
- Bring heat back up to med.
- ,and cook the pan juices for 7 minutes, uncovered.
- Stir in butter and remove bay leaves.
- Spoon sauce over the chicken.
- I served white rice on the side, and spooned a bit of sauce over that, too.
- Yum.

- Season the chicken with salt and pepper. Rinse the mushrooms and pat dry. Season the flour with salt and pepper and dredge the chicken breasts in the flour mixture. Heat oil in a skillet over medium high heat and saute the chicken until it is nicely browned on one side (about 3 minutes).
- Add the garlic. Turn the chicken breasts and scatter the mushrooms over them. Continue frying, shaking the skillet and stirring the mushrooms. Cook for about 3 minutes, then add the vinegar, broth, bay leaf and thyme. Cover tightly and simmer over medium low heat for 10 minutes, turning occasionally.
- Transfer the chicken to a warm serving platter and cover with foil. Set aside. Continue simmering the sauce, uncovered, over medium high heat for about 7 minutes. Swirl in the butter or margarine and discard the bay leaf. Pour this mushroom sauce mixture over the chicken and serve.

BALSAMIC CHICKEN BREASTS

Steps:
- Place a chicken breast into a large Ziploc bag, close the bag almost all the way, then pound the chicken to a thickness to 1/2-inch thick; repeat with remaining breasts.
- Mix together salt, pepper, flour, and sage.
- Dredge flattened breasts in a mixture; shake off excess flour.
- Melt together the olive oil and butter in a large wide sauté pan or large electric griddle (one with a cover) and brown the chicken over medium-high heat for 3 minutes on one side.
- Add the garlic and shallot then turn the chicken over and sprinkle with the mushrooms.
- Saute for an additional 3 minutes, stirring the mushrooms so that they will cook evenly.
- (You may need to cook the chicken one or two at a time if you don't have a large pan; if so, cook them all then add them all back into the pan for the final steps.) Stir in the balsamic vinegar, chicken broth, and wine.
- Cover and simmer over medium-low heat for 10 minutes, basting with the sauce and turning the chicken once or twice.
- Season with salt and pepper to taste and serve.
- Makes 4 servings.
- You can also cook the breasts without flattening them first.

CHICKEN BREASTS WITH SAGE
Steps:
- Put the oil in a deep skillet or flameproof casserole, preferably nonstick, with a lid. Turn the heat to medium-high and wait a minute or so, until the oil is hot. Add the garlic and half the sage, then the chicken, skin side down, and brown it well, rotating the pieces as necessary (you don't really have to brown the bone side); the process will take 5 to 10 minutes. Turn the meat browned side up and sprinkle it with salt and pepper.
- Add the remaining sage, along with the 1/4 cup vinegar and the stock. Turn the heat down to low and cover; cook until the chicken is tender and no trace of blood remains near the bone, 15 minutes or so.
- Transfer the chicken to a warm platter and, if the sauce is thin, raise the heat to high, stirring and reducing the sauce as necessary until it is thick and glossy, just a few minutes. Stir in the remaining tablespoon of vinegar or lemon juice. Taste the sauce and add salt and pepper. Spoon the sauce over the chicken, garnish, and serve.
- Boneless Chicken Breasts with Sage
- Start with 4 pieces of boneless breast, about 1 1/2 pounds. Add the garlic and sage (all at once) and brown the breasts well on both sides, adjusting the heat and rotating and turning the pieces as necessary until done, about 10 minutes. Transfer to a platter and add the 1/4 cup vinegar or lemon juice along with 1/4 cup water. Cook, stirring and scraping with a wooden spoon to incorporate any solids into the sauce. If you like, stir in 1 tablespoon butter at this point to enrich the sauce. Add the remaining vinegar or lemon juice, taste and adjust the seasoning, and serve.
- Chicken Breasts with Mint
- You can use this variation with either bone-in or boneless breasts. Substitute 1 cup chopped fresh mint leaves for the sage. Add half of them, along with a teaspoon of sugar, when you first turn the chicken breasts (after one side has been browned). Add the other half to the sauce after removing the chicken.
CHICKEN BREAST WITH SAGE AND BALSAMIC VINEGAR

Steps:
- Pound chicken breasts with the flat side of a meat mallet to flatten out and ensure even cooking.
- Heat olive oil in a skillet over medium-high heat. Add chicken breasts and season with salt and pepper. Cook until chicken breasts are browned and no longer pink in the middle, 5 to 8 minutes per side. Transfer to serving plates and keep warm.
- Add butter, bacon, sage leaves, balsamic vinegar, maple syrup, and chopped hazelnuts to the same skillet. Bring to a quick boil. Reduce heat and simmer, stirring regularly, until sauce thickens slightly, 3 to 4 minutes. Season with salt and pepper. Pour sage sauce over chicken.
