Athenian Chicken: Inspired by the Flavors of Greece image

Our Greek-inspired Athenian chicken cooks quickly retaining the essence of fresh herbs and the feta adds a hint of tartness.

2 boneless, skinless chicken breasts
4 tablespoons fresh thyme (minced)
4 tablespoons fresh oregano (minced)
4 tablespoons fresh parsley (minced)
1 large clove garlic (minced)
3 ounces feta (crumbled)
1​ tablespoon​ olive oil
1/3 cup white​ wine
1/2 cup​ half and half
Ground​ white pepper (to taste)
Juice from 1/4 lemon (or more to taste)

Steps:

  • Gather the ingredients.
  • Preheat oven to 375 F.
  • Pound chicken breasts flat*-they should uniformly be about 3/8-inch thick.
  • Combine 3 tablespoons of minced herbs with garlic and 1/3 of the cheese.
  • Lay out breasts with what was the skin-side down, lightly season breasts with salt and pepper then spread half of cheese/herb mixture on each breast, roll up, and either tie with twine or pin with toothpicks.
  • Heat oil in a medium cast-iron skillet over medium-high heat, then, treating the breasts as though they're 3-sided, brown on 2 sides-about 3 minutes per side. Turn unbrowned side down and place skillet in the oven on the middle rack and cook for another 6 to 8 minutes.
  • Remove skillet from oven and place breasts on a plate and tent with foil.
  • Being very careful of the hot handle, add wine to the cast-iron skillet over medium heat and scrape up browned bits. Reducing wine by about half.
  • Add half and half and bring to a simmer. Add remaining herbs (reserving a couple of pinches for a final garnish), feta, white pepper to taste, and lemon juice. Cook for about 30 seconds.
  • Plate chicken breasts, removing twine or toothpicks, pour the sauce over them and sprinkle with a final pinch of herbs. (For a colorful and nutrient-rich meal, you might want to serve this with roasted cherry tomatoes, microgreens, fresh peas, and either orzo , couscous or rice.)
  • Serve and enjoy.

Found this recipe in Bon Appetit Too Busy to Cook. I don't always have aniseed and ouzo around but the combination is intoxicating! Great accompanied by orzo.

3 tablespoons olive oil
3 1/2 lbs chicken, cut into 8 pieces
6 cloves garlic, chopped
1 1/2 teaspoons anise seed, crushed
1 (28 ounce) can Italian plum tomatoes
1/2 cup low sodium chicken broth
1/4 cup Pernod or 1/4 cup ricard liqueur
1 tablespoon dried oregano, crumbled
12 black oil-cured olives, pitted
4 ounces feta cheese, crumbled

Steps:

  • Heat olive oil in heavy large skillet over medium-high heat.
  • Season chicken with salt and pepper.
  • Sauté chicken in batches if necessary until brown, about 5 minutes per side.
  • Transfer to plate.
  • Pour off all but 2 Tbs drippings from skillet.
  • Add garlic and aniseed and stir 30 seconds.
  • Add tomatoes, broth Ouzo and oregano.
  • Bring mixture to simmer, breaking up tomatoes with back of spoon.
  • Return chicken to skillet.
  • Bring to simmer and cook uncovered 15 minutes.
  • Transfer chicken breasts to plate.
  • Turn chicken pieces in skillet over and simmer 5 minutes longer.
  • Transfer chicken in skillet to same plate.
  • Increase heat to high, add olives and cook until liquid is reduced to sauce consistency, stirring occasionally, about 6 to 8 minutes.
  • Season with salt and pepper to taste.
  • (Can be prepared 1 day ahead. Cover and refrigerate. Reheat gently before continuing.) Sprinkle feta cheese over and serve.

4 boneless skinless chicken breast halves (6 ounces each)
2 tablespoons butter
4-1/2 teaspoons lemon juice
4-1/2 teaspoons Worcestershire sauce
1/2 teaspoon Dijon mustard
1/4 teaspoon salt
1 tablespoon minced chives
1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes
Lemon wedges

Steps:

  • Flatten chicken breasts to 1/2-in. thickness. In a large skillet, cook chicken in butter over medium heat for 5-6 minutes on each side or until a thermometer reads 170°; remove and keep warm., In the same skillet, add the lemon juice, Worcestershire sauce, mustard and salt. Bring to a boil. Remove from the heat; stir in chives and parsley. Spoon over chicken and serve with lemon wedges.

ATHENA'S KOTO KAPAMA (GREEK STEWED CHICKEN)

This Greek recipe is a favorite dish of Chef Cat Cora. It is probably not the actual recipe she grew up with since it's from a local Greek restaurant.

3 1/2 lbs chicken pieces
2 teaspoons kosher salt
1 teaspoon ground black pepper
1 teaspoon ground cinnamon
2 tablespoons extra virgin olive oil
2 cups onions, chopped
2 tablespoons garlic, minced and divided
1/2 cup dry white wine
1 (14 1/2 ounce) can diced tomatoes, undrained (Hunts, use Fire Roasted)
1 tablespoon fresh oregano, chopped
1 tablespoon tomato paste (Hunts)
1/2 cup kasseri cheese (optional) or 1/2 cup parmesan cheese (optional)

Steps:

  • Mix salt, pepper and cinnamon in small bowl; rub chicken pieces with salt mixture.
  • Heat oil in 11-inch skillet with high sides over high heat until hot. Add chicken, skin side down. Cook 4 to 5 minutes on each side or until brown. (Cook chicken in 2 batches if pan is too small for chicken to brown properly.).
  • Remove chicken from skillet and place on plate; keep warm. Reduce heat to medium-high. Add onion and 1 tablespoon garlic. Cook 3 minutes or until onion is tender, stirring occasionally.
  • Add wine and scrape bottom of skillet with wooden spoon to loosen any cooked-on brown bits. Continue cooking until wine has evaporated. Add undrained tomatoes, remaining garlic and oregano to skillet; stir.
  • Return chicken, skin side down, and juices to skillet. Cover; reduce heat to low. Cook slowly 25 to 30 minutes or until chicken is tender and no longer pink.
  • Remove chicken from skillet; keep warm. Stir tomato paste into sauce. Cook uncovered over medium heat 10 minutes or until sauce reduces by about half.
  • Serve chicken with sauce. Sprinkle each serving with cheese, if desired.

1 can Del Monte original recipe stewed tomatoes
1 jar (6 oz) marinated artichoke hearts
1/4 tsp crushed rosemary
1/3 cup feta cheese

Steps:

  • Brown meat in oil, add onion and cook 2 minutes. Stir in tomatoes, rosemary and artichoke marinade. Cook over medium heat 10 -15 minutes, stirring frequently. Stir in artichoke hearts. Serve over angel hair pasta. Top with feta cheese. • I also use mushrooms and capers. I sauté the mushrooms with the meat and onion and I add the capers at the end with the artichoke hearts. • I use two can of tomatoes instead of one to give more sauce
