CHICKEN APPLE BREAKFAST SAUSAGE
This was not my favorite dish of the class, but it was a very close second. The best breakfast sausage I have ever tried! Eating raw meat is a HUGE NO NO - so to make sure you have added enough salt and/or seasoning, fry up a small piece of the sausage mixture to taste before you make the whole batch. This recipe will make 8 good sized patties or 16 small patties. These patties can be seared in a skillet, placed on a baking sheet lined with parchment paper and popped into a 400ºF oven for 10 min or so to finish the cooking.

- In a large, heavy skillet heat 2 Tbs of olive oil over medium-high heat.
- Add the onions and apples.
- Cook, stirring for 3-4 min or until onions have softened.
- Add the garlic and cook for 30 sec to 1 minute.
- Remove from the heat and cool.
- In a large bowl combine the chicken, pork, thyme, sage, salt and pepper.
- Add the cooled onion mixture and mix well.
- At this point take a small piece of the mixture and cook in a skillet with a little vegetable oil, taste to test the salt and seasoning - add more is necessary.
- On a plastic-covered surface, form the mixture into 8 good sized patties or 16 smaller patties.
- Heat 2 Tbs of vegetabel oil in a 12-inch skillet over high heat.
- Add 4 patties (or more if smaller) to the pan and cook until golden brown, about 3-4 min per side.
- Place cooked patties in a warm oven while you cook the rest of the patties.
- Add more oil if necessary and continue cooking patties in the same manner.

- Preheat broiler and preheat a medium skillet over medium-high heat with 1 tablespoon oil and 1 tablespoon butter. Mix chicken with apple, syrup, grill seasoning, poultry seasoning, cinnamon and nutmeg and score the meat into 4 sections. Form 4 large, thin patties and set into hot butter and oil. Cook 5 minutes on each side.
- Place fork split muffins on broiler pan and toast. Butter toasted muffins and reserve.
- Heat a second nonstick skillet over medium heat and melt a tablespoon of butter in the pan. Beat eggs with milk, salt and pepper and scramble to desired doneness.
- Pile 1 sausage patty, 1/4 of the eggs and Cheddar cheese on each of 4 muffin halves. Return muffins to broiler to melt cheese, 1 to 2 minutes, then set tops into place and serve.

- Clean and prepare your meat and fat. Chill it in the freezer till it gets to be almost frozen but not quite.
- Once your meat is chilled (34f -37F) then it's time to grind it all together. With a 4.5mm or 5mm plate on your grinder, grind together the thigh meat, breast meat, and chicken fat. Once done place back in the freezer to chill a bit more. You want to keep this really cold. (especially if you are mixing by hand)
- Peel and dice the granny smith apples and place them in a bowl with water so they don't oxidize too fast.
- In a skillet with a little butter saute the diced onions and add the brown sugar to them. Cook for about 5 minutes on medium low heat till soft. Remove from the fire and let cool.
