Says Joanna Iovino of Commack, New York: "Chicken and rice was a staple at my parents' house, but the chicken never turned out quite right. I enjoy this recipe much more now that I use tasty skinless chicken and kielbasa."

Number Of Ingredients 12

1/2 pound boneless skinless chicken breasts, cubed
1/2 teaspoon dried thyme, divided
1/4 teaspoon pepper, divided
1-1/2 teaspoons canola oil
1/4 pound smoked turkey kielbasa, cut into 1/4-inch slices
1 small onion, finely chopped
1 small green pepper, finely chopped
2 garlic cloves, minced
2 cups water
1 cup uncooked long grain rice
1/2 teaspoon reduced-sodium chicken bouillon granules
1/2 teaspoon hot pepper sauce

Steps:

  • Sprinkle chicken with 1/4 teaspoon thyme and 1/8 teaspoon pepper. In a large nonstick skillet, saute chicken in oil until no longer pink. Remove and keep warm. , In the same skillet, saute the kielbasa, onion and green pepper until vegetables are tender. Add garlic; cook 1 minute longer. Stir in the water, rice, bouillon, hot pepper sauce, and remaining thyme and pepper. Bring to a boil. Reduce heat; cover and simmer for 18-20 minutes or until liquid is absorbed and rice is tender., Return chicken to the pan; heat through.

My sister Mary, an excellent cook, shared this wonderful recipe-I've always loved its tantalizing blend of ingredients. It came to mind immediately when I saw the announcement for CW's Savory Stir-Fry and Skillet Suppers contest. (I didn't tell Mary I entered it. What a nice surprise it will be when she sees her recipe printed in the magazine!)

Number Of Ingredients 12

1 medium onion, thinly sliced
1 medium green pepper, thinly sliced
1 cup sliced fresh mushrooms
1 cup sliced zucchini
2 tablespoons olive oil
1/2 to 3/4 pound boneless skinless chicken breasts, thinly sliced
1/2 to 3/4 pound Italian sausage links, cut into 1/2-inch pieces
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 garlic clove, minced
3/4 teaspoon dried basil
3/4 teaspoon dried oregano
Hot cooked rice

Steps:

  • In a large skillet, saute the onion, green pepper, mushrooms and zucchini in oil until tender. Remove vegetables with a slotted spoon; set aside. , Add chicken and sausage to skillet; cook until meat is no longer pink. Drain. Stir in the tomatoes, garlic, basil and oregano. , Return vegetables to pan. Bring to a boil. Reduce heat; cover and simmer for 10 minutes or until heated through. Serve with rice.

8 oz uncooked spaghetti
1 1lb mild Italian sausage, casings removed
1 med onion, diced
1 medium green bell pepper, diced
1 medium size red bell pepper, diced
2 to 3 garlic cloves
1 TBSP olive oil
1- 28 oz diced tomatoes wiht basil, oregano & garlic
1/2 tsp salt
1/4 tsp pepper
1/2 cup grated parmesan cheese

Steps:

  • Prepare pasta according to package. Meanwhile cook sausage in a large dutch oven over medium high heat 8 to 10 minutes until meat is no longer pink. Remove sausage and drippings and drain well on paper towels. Saute onion and next 3 ingredients in hot oil in Dutch oven over medium high heat 5 to 6 minutes or until vegatables are crisp tender. Stir in tomatoes, salt, and pepper. cookd 4 minutes or until thoroughly heated. Stir in sausage, pasta and cheese. Transfer to mixutre To freeze cook 20 minutes. place in 13 x9 dish Cover tighty with plastic wrp and aluminum foil. Free up to 2 mo. Thaw in frig 24 hours. Preheat oven to 350. Cover with foil and bake for 40 to 45 minutes.

Necessity is the mother of invention. This recipe was created by me because I had a 1 1/2 hour commute to/from work. I have two teenage boys who require a hearty meal to sustain them for at least 1 hour (maybe less). This recipe can be varied; use pork italian sausage if you like (cook longer), veal or pork cutlets or cubes (be careful to cook pork products thoroughly). Serve as a sandwich, skip the pasta, mix with leftover cooked rice; add small green peas or broccoli. I doubt if anything you try will go wrong. Mangia!

1 (16 ounce) package uncooked farfalle pasta
2 skinless, boneless chicken breasts
1 pound hot Italian turkey sausage, casings removed
1 tablespoon olive oil
2 cloves garlic, sliced
1 (14.5 ounce) can crushed tomatoes
½ cup red wine
2 tablespoons chopped fresh basil
1 teaspoon dried rosemary

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Wash chicken breasts and cut into large bite-size pieces. Cut sausages into large pieces. In a large, deep skillet over medium low heat, combine oil and garlic; and cook just enough to flavor the oil. Remove garlic from oil.
  • Add chicken and sausage to skillet and brown both lightly until they are opaque. Add the tomatoes and the wine. Bring to a boil and let simmer for 20 minutes. Season sauce mixture with basil, rosemary and salt and pepper to taste. Add cooked, drained pasta to the skillet mixture. Toss and serve.
