CHICKEN WITH PEPPERS AND TOMATOES



Chicken with Peppers and Tomatoes image

Number Of Ingredients 11

2 tablespoons olive oil
2 boneless and skinless chicken breasts, sliced into 1/2-inch strips
1 small onion, peeled and sliced
1 green bell pepper, seeded and sliced into strips
1 yellow bell pepper, seeded and sliced into strips
1/2 cup white wine
2 cups whole tomatoes, chopped
1 teaspoon dried oregano
Salt and pepper
3 tablespoons fresh basil
1 package instant couscous

Steps:

  • Heat oil in large skillet and cook chicken until it begins to brown. Stir in onions and cook for 2 minutes. Stir in peppers and cook for 3 minutes. Stir in wine, tomatoes and oregano and bring to a simmer. Cover and cook for 10 minutes. Season to taste and garnish with fresh basil.
  • Follow package instructions.

1 jar (24 ounces) garden-style spaghetti sauce
1 medium onion, sliced
1/4 cup grated Parmesan cheese
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 each small green, sweet yellow and red peppers, julienned
6 boneless skinless chicken breast halves (4 ounces each)
Hot cooked pasta
Shaved Parmesan cheese, optional

Steps:

  • Mix first eight ingredients; stir in peppers. Place chicken in a 3-qt. slow cooker. Top with sauce mixture., Cook, covered, on low until a thermometer inserted in chicken reads 165°, 3-4 hours. Serve with pasta; if desired, top with shaved cheese.

1 lb boneless chicken breast
1 teaspoon red pepper
1 teaspoon black pepper
1/2 cup soy sauce
2 tablespoons cornstarch
1 tablespoon chopped garlic
1/4 cup brown sugar
1 big onion, cut in cubes
1 green pepper, cut in cubes
1 egg, beaten
2 tablespoons vegetable oil
2 teaspoons tomato ketchup
salt, as per taste

Steps:

  • Cut the chicken into small size piece and mix with soy sauce, corn starch and beaten egg.Marinade it for at least 10 minutes.
  • Heat the wok or large pan. Put the vegetable oil and fry the chicken until it becomes golden.
  • Put the onion, garlic , green pepper, black pepper, red pepper, soy sauce, tomato ketchup and brown sugar in the wok or pan.
  • take corn starch and mix it with water and put in the pan.
  • Mix everything well, adjust salt and spice as per your taste then let it cook for 5 more minutes and it is ready!

4 -6 chicken thighs, bone in
1/4 cup olive oil
1 yellow onion, sliced in strips
1 red bell pepper, sliced in strips
1 green bell pepper, sliced in strips
1 bulb of garlic, peeled and rough choped
15 ounces chopped tomatoes with garlic and herbs
1 1/2 teaspoons dry basil
1 1/2 teaspoons dry oregano
1 lemon, juice of
salt and pepper

Steps:

  • Preheat oven to 400°F.
  • In a 9x13 rectangle pan, pour olive oil into bottom of pan. Place chicken on bottom, season with salt and pepper.
  • Spread onion, garlic and bell pepper slices on top.
  • Pour tomatoes over chicken and vegetables.
  • Sprinkle with herbs, lemon juice, and salt and pepper to taste.
  • Bake uncovered for 45-55 minute, till chicken is cooked through and peppers are very soft. Serve over rice or mashed potatoes.

1 tablespoon canola oil
1 each medium green, yellow and sweet red peppers, cut into 1-inch pieces
1/4 cup water

Steps:

  • In a large bowl, combine the broth, soy sauce, garlic, cornstarch, ginger and cayenne pepper. Add chicken; stir to coat. Heat oil in a large skillet over medium-high heat. Add chicken mixture. 4 boneless skinless chicken breasts
1/2 teaspoon garlic salt
2 green bell peppers, sliced into strips
1 large white onion, sliced into strips
2 garlic cloves, minced
1 cup mozzarella cheese
2 tablespoons butter
4 tablespoons olive oil
1/2 cup water

Steps:

  • Sprinkle chicken with garlic salt. In skillet, melt 1 tablspoon butter and add 1 tablespoon olive oil.
  • Cook chicken over medium high heat until done. Sprinkle 1/4 cup mozzarella on each breast. Remove from heat and allow cheese to melt.
  • To another skillet, add remaining olive oil and butter.
  • Add onions, peppers and minced garlic and cook on medium high. Add water and cover.
  • Cook until peppers and onions are tender, stirring often. Remove lid and cook until water evaporates.
  • Place peppers and onions over chicken and serve.

¼ cup olive oil, divided
4 skinless, boneless chicken breast halves - cut into strips
salt and pepper to taste
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
1 medium onion, thinly sliced
4 large cloves garlic, finely chopped
1 tablespoon dried basil
¼ cup balsamic vinegar, divided

Steps:

  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Place the chicken in the skillet, season with salt and pepper, and brown on both sides. Remove from heat, and set aside.
  • Heat remaining oil in the skillet over medium heat, and stir in the red bell pepper, yellow bell pepper, orange bell pepper, and onion. Cook about 5 minutes, until tender. Mix in the garlic, and cook and stir about 1 minute. Mix in the basil and 2 tablespoons balsamic vinegar.
  • Return the chicken to the skillet. Reduce heat to low, cover, and simmer 20 minutes, or until chicken is no longer pink and juices run clear. Stir in remaining balsamic vinegar just before serving.
