4 boneless skinless chicken breasts
8 ounces ground mild Italian pork sausage
1 (1 1/4 ounce) envelope alfredo sauce mix
1 cup shredded mozzarella cheese
1 cup shredded parmesan cheese
1 (10 ounce) package frozen chopped spinach, thawed and drained
1/2 cup ricotta cheese
2 plum tomatoes, diced

Steps:

  • Place chicken between 2 sheets of heavy-duty plastic wrap, and flatten to 1/4-inch thickness using a meat mallet or rolling pin; Set aside.
  • Cook sausage in a large skillet over medium-high heat 10 minutes or until it crumbles and is no longer pink; drain and set aside.
  • Prepare Alfredo sauce according to package directions; set aside.
  • Combine shredded mozzarella and Parmesan cheeses.
  • Stir together sausage, spinach, ricotta cheese, and 1/2 cup mozzarella cheese mixture.
  • Spoon mixture evenly down center of each chicken breast, and roll up, jellyroll fashion.
  • Arrange chicken rolls, seam side down, in a lightly greased 2-quart baking dish. (Secure with toothpick if needed).
  • Pour Alfredo sauce over chicken, and sprinkle evenly with remaining 1 1/2 cups mozzarella cheese mixture.
  • Bake at 350° for 50 minutes to 1 hour or until chicken is done. Let stand 10 minutes.
  • Cut chicken rolls into slices.
  • Serve with sauce; sprinkle evenly with diced tomatoes just before serving.

1 loaf French bread
1 1/2 cups alfredo sauce
1 cup mozzarella cheese, shredded
1 teaspoon italian seasoning
1 teaspoon salt
1 teaspoon garlic powder
2 cups cooked chicken, chopped
1 cup cooked bacon, chopped
1 cup tomatoes, diced
1/2 cup green onion, thinly sliced
1 cup parmesan cheese, shredded
chopped parsley, garnish (optional)

Steps:

  • INSTRUCTIONS.
  • 1) Pre-heat oven to 400 degrees Fahrenheit.
  • 2) Cut the top of the French bread, off, and remove the bread inside to hollow it out. Place on a large baking sheet.
  • 3) Spread 2/3 of your Alfredo sauce evenly inside the loaf. Cover with a layer of mozzarella cheese. Mix together Italian seasoning, salt and garlic powder and sprinkle over cheese.
  • 4) Continue layering: chicken, bacon, tomatoes, remaining Alfredo sauce, green onions and top with Parmesan cheese.
  • 5) Bake for about 15 minutes or until cheese melts.
  • 6) Remove from oven, top with chopped parsley if desired, cut into slices and enjoy! Make sure to serve warm!

1 cup water
½ cup whole milk
2 ½ cups all-purpose flour, plus 3 tablespoons, divided
1 tablespoon sugar
1 teaspoon salt
1 tablespoon garlic powder
½ cup grated parmesan cheese
1 teaspoon yeast
2 tablespoons olive oil, plus more as needed
2 ½ cups chicken, cooked, shredded
2 ½ cups shredded mozzarella cheese, divided
½ cup grated parmesan cheese
1 tablespoon garlic powder
½ teaspoon pepper
2 cups alfredo sauce
1 egg, beaten
3 tablespoons fresh parsley, chopped

Steps:

  • In a microwave-proof liquid measuring cup, combine the water and the milk. Microwave on high for 45 seconds.
  • In a large bowl, combine the flour, sugar, salt, garlic powder, Parmesan, and yeast. Mix thoroughly. Pour the milk mixture over the dry ingredients. Stir to combine. Knead the dough on a clean surface for 5 minutes until smooth, if the dough is sticking to the surface add olive oil 1 teaspoon at a time, then form into a tight ball.
  • Drizzle 2 tablespoons olive oil in a large bowl. Place the dough in the bowl and cover with plastic wrap. Let rise for 1 hour.
  • Preheat the oven to 450˚F (230˚C).
  • In a separate large bowl, combine the chicken, 2 cups (200 g) mozzarella, Parmesan, garlic powder, pepper, and alfredo sauce. Mix thoroughly.
  • Place the risen dough onto a floured surface. Roll out the dough so it is twice as long as it is wide and about ¼ inch (½ cm) thick.
  • Transfer the dough to a parchment-lined baking sheet. Roll up all of the sides of the dough to create an oval shape. Pinch the dough and pull it while twisting, wrapping the dough into little spirals and placing it onto the rolled edge of the dough. Continue all the way around until you have several little spirals of dough.
  • Pour the chicken alfredo mixture over the dough and spread it until it reaches the edges of the dough. Brush the sides of the dough with egg wash. Sprinkle the rest of the mozzarella on top of the chicken alfredo mixture.
  • Bake for 30 minutes, until the crust is golden brown.
  • Sprinkle with parsley. Serve immediately.

1 soft loaf french bread, unsliced
2 c cooked chicken breasts, chopped or shredded
1/2 c onion, diced
3 clove garlic, finely minced
1/2 tsp black pepper
1/4 tsp red pepper flakes, optional
2 c grated mozzarella cheese
1/2 c parmesan cheese, grated
1/3 c fresh italian parsley (or 1 t dried)
14 oz alfredo sauce (or garlic/parmesan sauce)
8 oz mushroom stems and pieces, well drained (optional)
1/4 c sliced black olives, well drained (optional)

Steps:

  • 1. Lay foil on a sheet pan. Spray the foil with cooking spray.
  • 2. Cut the loaf of french bread in half horizontally (like a big submarine sandwich bun.) Pull out the soft bread in the center of both sides. Both halves should look like a shallow bowl. Spray the insides with cooking spray.
  • 3. In a microwave soft bowl place the 3 cloves of minced garlic and the onions. Micro until the onions and garlic are soft.
  • 4. In a larger bowl add the diced or shredded chicken, the red and black peppers, italian parsley, the softed onions and garlic. Stir in the mushrooms and/ or black olives if using. Add both cheeses.
  • 5. Add about half of the jar of alfredo sauce. Mix well. At this point look at the mixture and add more sauce as needed to have the mixture hold together. It should be spoonable, not too sloppy or soupy. This is a sandwich filling and you want it to hold together rather than ending up in your lap. ;-) I usually use under 2/3 of the jar total.
  • 6. Center the bottom half of the hollowed french loaf on the sprayed foil. Spoon the filling end to end. Place the top on it. Spray the top of the finished loaf.
  • 7. Wrap the stuffed bread with Heavy-Duty Aluminum Foil. Bake at 400 degrees for 25-30 minutes until heated through. (For crisper bread, bake uncovered for the last 5 minutes.)
  • 8. Unwrap the loaf carefully. Let sit at least 5 minutes before cutting into slices. Serve and enjoy!

1 large baguette
10 slices mozzarella cheese
marinara sauce
⅓ cup butter, melted
3 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 tablespoon grated parmesan cheese

Steps:

  • Slice the chicken breast into ½ inch (1 ¼ cm) thick strips.
  • Place the flour, eggs, and bread crumbs into 3 separate bowls.
  • Roll a chicken strip in the flour, dusting off excess. Dip the strip into the egg, then place into the bread crumbs, coating it completely.
  • Repeat with the remaining chicken.
  • Heat the oil in a pan over medium heat to 350˚F (180˚C).
  • Preheat oven to 350°F (180˚C).
  • Fry the breaded chicken strips until both sides are golden brown.
  • Remove from heat and drain on a paper towel.
  • Slice the baguette into thirds or fourths (each baguette piece should be roughly the same length of the fried chicken strips).
  • Hollow out the insides of the baguette pieces with a knife.
  • Lay two slices of mozzarella on top of each other with a 1 inch (2 ½ cm) overlap. Place a chicken strip on the overlapping region, then fold the mozzarella tightly around the chicken.
  • Push the rolled chicken strips into a baguette piece.
  • Slice the stuffed baguette pieces into 1 inch (2 ½ cm) slices, then place them tightly side-by-side on a baking sheet lined with foil.
  • In a small bowl, mix together ingredients for garlic butter.
  • Brush the garlic butter evenly over the baguette slices, making sure some drips in between the slices.
  • Wrap the foil over the re-assembled baguette and bake for 20-25 minutes, until cheese is melted and the top is starting to brown.
  • Remove the foil and serve with marinara!
