RASPBERRY CHIA SEED JAM

Steps:
- Bring 4 cups raspberries, 1 cup sugar and 2 tablespoons lemon juice to a simmer in a saucepan over medium heat. Cook, stirring and mashing the berries, until thickened, 20 minutes. Remove from the heat and stir in 1 tablespoon chia seeds. Refrigerate until cool.

Steps:
- Stir together the water, lime juice and sugar until the sugar is dissolved. Stir in the chia seeds and garnish with the optional sage sprigs. Serve in tall glasses over ice.

- Put the limes, water, and sugar in a blender and pulse 3 to 4 times, just enough to extract the juice from the limes but not crush the skins (which would make the drink too bitter). Strain through a fi ne-mesh sieve into a pitcher. Taste and add more sugar if you like.
- Whisk in the chia seeds and refrigerate for at least 30 minutes, until completely chilled. Stir before serving, then serve over ice.
