How to Make Chia Pudding image

Creamy, thick chia pudding that's easy to make, nutritious, and so delicious! Just 4 ingredients required for this tasty breakfast, snack, or dessert!

1 1/2 cups dairy-free milk
1/2 cup chia seeds
1-2 Tbsp maple syrup ((more or less to taste))
1 tsp vanilla extract
Compote
Mint
Fresh Fruit

Steps:

  • To a mixing bowl add dairy free milk, chia seeds, maple syrup (to taste), and vanilla. Whisk to combine.
  • Cover and refrigerate overnight (or at least 6 hours). The chia pudding should be thick and creamy. If not, add more chia seeds, stir, and refrigerate for another hour or so.
  • Enjoy as is, or layer with compote or fresh fruit! Will keep covered in the refrigerator up to 5 days.

Better stock up on those chia seeds cause you're going to love this Very Berry Chia Pudding. Made with a triple berry punch, this healthy snack or breakfast recipe is full of protein and fiber to keep you full for hours.

Number Of Ingredients 7

2 cups non-dairy milk (I like almond or coconut)
1/2 cup + 2 tbsp chia seeds
1/2 cup strawberries, fresh or frozen
1/2 cup blueberries, fresh or frozen*
1/2 cup raspberries, fresh or frozen
2-3 tbsp pure maple syrup, to taste
1/2 tsp vanilla extract

Steps:

  • Mix together all ingredients in a large bowl or mason jar. If using a bowl transfer to a large container or mason jar once mixed.
  • Store in the refrigerator overnight or for at least 8 hours.
  • Serve cold.

Oats With Amaranth, Chia Seeds and Blueberries image

Fresh blueberries are not in season at the moment, so I put my frozen organic wild blueberries to good use in this hearty mix. The chia and the amaranth pump up the nutritional value of this cereal -- both are high in calcium, amaranth is high in protein, and chia seeds are a great source of healthful omega-3s. They also contribute texture. For even more great texture, top the cereal with chopped toasted hazelnuts or almonds.

Number Of Ingredients 8

1/4 cup regular or quick cooking steel-cut oats
1 tablespoon amaranth seeds
1 teaspoon chia seeds
Salt to taste (I use a generous pinch)
1 heaped tablespoon fresh or frozen blueberries, or more to taste
3/4 cup water
1 teaspoon honey or maple syrup, plus more as desired for drizzling
Optional toppings: milk, chopped toasted skinned hazelnuts, chopped toasted almonds, grated apple or pear, freeze-dried blueberries

Steps:

  • The night before, stir together steel-cut oats, amaranth seeds, chia seeds, salt and blueberries in a medium microwave-proof bowl. Bring water to a boil and pour over mixture. Add honey or maple syrup and stir, then cover bowl with a plate.
  • In the morning, microwave mixture for 2 minutes on 100 percent power. Remove bowl from microwave and carefully remove plate (bowl will be hot and steam will rise from cereal). Stir mixture, cover again and return to microwave. Heat for 2 minutes more, or until mixture is no longer watery.
  • Transfer to a serving dish and sprinkle on toppings of your choice.
