Wonderful homemade chewy snack bars ready with maple-flavored syrup, peanut butter, quick-cooking oats and dried cranberries - perfect for a dessert.

1/2 cup butter or margarine
2/3 cup firmly packed brown sugar
2/3 cup maple-flavored syrup
2/3 cup crunchy peanut butter
1 teaspoon vanilla
3 cups quick-cooking oats
1 cup wheat germ
1 cup graham cracker crumbs
1 cup cherry- or orange-flavored sweetened dried cranberries

Steps:

  • Grease bottom and sides of 13x9-inch pan with shortening. Melt butter in 2-quart saucepan over medium heat. Stir in brown sugar and maple syrup; heat to boiling. Boil 1 minute, stirring frequently; remove from heat. Stir in peanut butter and vanilla until mixture is smooth.
  • Stir remaining ingredients into peanut butter mixture, mixing well. Press evenly in pan. Cover and refrigerate about 2 hours or until firm. For bars, cut into 6 rows by 4 rows. Store covered in refrigerator.

2 cups old-fashioned rolled oats
⅓ cup packed brown sugar
1 tablespoon white sugar
1 ½ teaspoons baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
1 cup milk
2 eggs
2 tablespoons canola oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square pan.
  • Combine oats, brown sugar, white sugar, baking powder, salt, and cinnamon together in a bowl. Whisk milk, eggs, canola oil, and vanilla extract together in a separate bowl. Stir egg mixture into oats mixture until well combined; set aside until flavors blend, about 20 minutes. Spread oats mixture into prepared square pan.
  • Bake in the preheated oven until edges are golden brown, about 30 minutes.

Steps:

2/3 cup crunchy peanut butter

2 tablespoons skim milk
2 teaspoons vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon

3 cups oats (quick or old fashioned, uncooked)
1 cup raisins or 1 cup dried cranberries

Steps:

  • Heat oven to 350°F degrees.

1 1/2 cups whole wheat flour
1/2 cup soy flour
2 cups quick-cooking rolled oats
1 1/3 cups brown sugar, packed
1/2 teaspoon salt (optional)
2 tablespoons flax seeds (optional)
1/2 cup oil or 1/2 cup butter
1/2 cup applesauce
1 cup apricot preserves or 1 cup your favorite preserves
1/4 cup nuts (optional) or 1/4 cup coconut (optional)

Steps:

  • Directions, Oven at 350 degrees, have a baking pan ready.
  • Mix the dry ingredients together, add the oil and apple sauce and mix.
  • Separate about 2 cups of the mixture. Put the mixture into a pan or two - we used 1 14"x12" pan. You can grease the sides of the pan, but it isn't necessary on the bottom.
  • You want to pack the mixture down and have it be about 1/4 inch thick.
  • Spread on the preserves and then crumble the remaining dry mixture on the top.
  • Bake at 350 degrees for 25-30 minutes.
  • Let cool 10+ minutes and enjoy.
  • Oats & whole wheat are good for fiber, the soy adds some protein, and the apple sauce is a good partial substitute for oil/butter, keeping it pretty moist.

1 cup butter, cut up (2 sticks)
4 cups old fashioned oats, uncooked
1 cup packed brown sugar
1/2 cup light corn syrup
1 cup semi-sweet chocolate chips or 1 cup milk chocolate chips
3/4 cup creamy peanut butter

Steps:

  • Preheat oven to 350°; grease 15 1/2" by 10 1/2" jelly-roll pan.
  • In microwave-safe large bowl heat butter in microwave oven on High until butter melts, stirring once.
  • Stir in oats, sugar, and corn syrup until well combined.
  • With fingers, press oat mixture evenly into prepared pan.
  • Bake 20 to 23 minutes or until edges are set and center is slightly jiggly; cool completely on wire rack.
  • In a 1-quart sauce pan , heat chocolate chips and peanut butter over low heat until chocolate is melts and mixture is smooth, stirring frequently.
  • Spread chocolate mixture evenly over oat crust.
  • Cover loosely with plastic wrap and refrigerate 1 hour or until chocolate is firm.
  • Cut lengthwise into 4 strips, then cut each strip crosswise into 10 bars--40 bars.
  • If bars are difficult to remove from pan; place pan on a very hot damp towel for a few minutes to warm slightly.
  • Store bars in covered container, with wax paper between layers, in refrigerator up to 1 month or in freezer up to 3 months.
