This recipe, given to me by a friend years ago, was one I used to save just for Christmas. But friends and family began to request them regularly, and now I buy extra candied cherries when they go on sale in December so I can make the treats all year long.

1/2 cup shortening
1 cup packed brown sugar
1 egg
1/4 cup buttermilk
1-3/4 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup halved candied cherries
1 cup chopped dates
3/4 cup chopped pecans
36 pecan halves

Steps:

  • In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in egg and buttermilk. Combine the flour, salt and baking soda; gradually add to creamed mixture and mix well. Stir in the cherries, dates and chopped pecans. , Drop by heaping tablespoonfuls 2 in. apart onto lightly greased baking sheets. Top each with a pecan half. Bake at 350° for 12-15 minutes or until golden brown. Remove to wire racks.

This is a lower-fat, lower calorie version of an old favorite. You may use any kind of dried fruit you wish.

1/2 cup packed brown sugar
1/2 cup sugar substitute
1 (8 ounce) container non-fat vanilla yogurt
1/2 cup egg substitute
2 tablespoons canola oil
2 tablespoons nonfat milk
2 teaspoons vanilla
1 1/4 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/4 teaspoon salt
3 cups oatmeal, uncooked (old-fashioned or quick)
1/2 cup dried apricot, diced
1/2 cup dried plum, diced
1 cup walnuts

Steps:

  • In a large bowl, combine sugars, yogurt, egg substitute, oil, milk and vanilla.
  • Blend well.
  • In a medium bowl, combine flour, baking soda, cinnamon, cardamom, and salt.
  • Blend well.
  • Add to liquid mixture and mix well.
  • Stir in oats, fruit& nuts, blending well.
  • Spread dough into ungreased 9x13 pan.
  • Bake in preheated 350 degree oven for 30 minutes or until lightly browned.
  • Cool completely.
  • Cut into bars and store in a tightly covered container.

1-2/3 cups quick-cooking oats
3/4 cup sugar plus 2 tablespoons sugar
1/3 cup oat flour
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 cup chopped dried apricots
1/2 cup each dried cherries and cranberries
1/2 cup flaked coconut
1/2 cup chopped pecans or walnuts
1/2 cup unsalted sunflower kernels
1/4 cup honey or maple syrup
2 tablespoons butter, melted
2 tablespoons light corn syrup
1 teaspoon vanilla extract
1 tablespoon water

Steps:

  • In a large bowl, combine oats, sugar, oat flour, salt and cinnamon; mix well. Stir in apricots, cherries, coconut, pecans and sunflower kernels; set aside., In another bowl, whisk together honey, butter, corn syrup, vanilla and water. Add the honey mixture to the fruit mixture; mix until crumbly. Pat into a lightly greased 13-in. x 9-in. baking pan. Bake at 350° for 25-30 minutes or until golden brown on the edges. Cool in pan for 5 minutes., While still warm, cut into bars. Remove bars to a wire rack to cook completely. Wrap bars individually in plastic wrap or store in an airtight container with parchment paper separating layers.

Starbucks Chewy Fruit and Nut Bars image

In fall 2008, Starbucks added several "healthy" breakfast items to their bakery case. My husband commented to me, "Look, they have a granola bar that looks exactly like the ones you make!" I checked their list of ingredients and then made modifications to my Recipe #236509 #236509, so that they are as close to the Starbucks version as possible. Take them to breakfast meetings at work, when you need something MORE than a donut, muffin or bagel.

2 cups rolled oats
2 cups crispy rice cereal (see note below)
1 cup dried apricot, chopped
1/2 cup dried cranberries, chopped
1/2 cup sliced almonds
1/2 cup pecan halves, chopped
1/2 cup golden raisin
1/4 cup sunflower seeds
1/2 teaspoon cinnamon
1/4 cup brown sugar
1/2 cup corn syrup or 1/2 cup honey
1 teaspoon vanilla
1/2 cup peanut butter

Steps:

  • Ingredient note: look in your health food aisle for a healthy alternative to Rice Krispies. The brand I found is made by Enviro-Kidz and uses BROWN rice.
  • Prepare 9x13 pan with non-stick spray (or line with parchment paper).
  • In a large mixing bowl, toss all dry ingredients. Feel free to substitute your preferred nut or dried fruit.
  • In a saucepan, combine brown sugar and corn syrup. Bring to a boil and allow to boil one minute. (Note: boiling the sugars is what helps the bars become firm and not sticky, so this step is important).
  • After boiling, turn off heat; add vanilla and peanut butter. QUICKLY pour this hot mixture over the dry ingredients and toss to combine.
  • Pour warm mixture into prepared pan. Wet your fingers and press the mixture down into the pan to compress the bars so they will slice evenly.
  • When cool, use a sharp knife to cut into 18 bars (1 long lengthwise cut and 9 cuts across). Enjoy with a hot cup of Starbucks coffee for an authentic experience!
  • Note: Starbucks does not list corn syrup in their ingredients, but the sweetener in their list is not readily available. I tried using Maple Syrup, but the bars were very crumbly and would not stay together in bars. Therefore, I found that Corn Syrup is the best ingredient that is readily available.

  • Preheat oven to 325°. Spread nuts on a rimmed baking sheet and bake until light golden, 10 to 12 minutes.
  • Warm honey in a microwave until the consistency of thin syrup. In a food processor, pulse honey, dates, cinnamon, and oats until oats are coarsely chopped.
  • Scrape oat mixture into a medium bowl. Break up any clumps of dates and, if needed, chop any large date chunks. Stir in nuts, cranberries, and apples. Squeeze mixture into a ball. Line baking sheet with foil and oil foil. Using damp hands, firmly pat mixture onto foil into a compact 6- by 12-in. rectangle.
  • Freeze until rectangle is firm enough to cut, about 20 minutes. Lift rectangle from foil to a work surface and cut into 16 bars. Wrap bars individually. They get moister and chewier after standing at least a day.
