SOFT PINEAPPLE COOKIES

These cookies are soft and fruity. Whenever I take them to a dinner or church event they always disappear. The recipe is an old one that has been used by many family membes. I really can't tell you where it originated.

COOKIES:
1/2 c crisco or shortening
1 c brown sugar, firmly packed
1 large egg
1 tsp vanilla extract
1 can(s) (8 ounces) crushed pineapple
2 c all purpose flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1 pinch salt
OPTIONAL FROSTING:
2 c powdered sugar
1 Tbsp soft butter
just enough water to make a thin frosting

Steps:

  • 1. Preheat the oven to 325 degrees. Grease cookie sheets. In a large bowl, cream together the shortening and sugar until light and fluffy. Add the egg, beat well, then stir in the vanilla and pineapple. In a separate bowl, combine the flour, baking powder, baking soda and salt. Gradually stir the flour mixture into the creamed mixture. Drop by rounded spoon fulls onto the prepared cookie sheets.
  • 2. Bake for 8 to 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. OPTIONAL FROSTING: Stir together ingredients adding water slowly until a thin frosting is achieved. Spread over cooled cookies.

1 cup shortening
1 1/2 cups sugar
1 egg
9 ounce can crushed pineapple with juice (1 cup)
3 1/2 cups flour
1 teaspoon soda
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup chopped nuts

Steps:

  • Mix shortening, sugar and egg. Stir in pineapple. Sift together and stir in: flour, soda, salt and nutmeg. Stir in nuts. Chill at least 1 hour.
  • Drop rounded teaspoonfuls about 2 inches apart on lightly greased baking sheet. Bake at 400 degrees for 8-10 minutes or until, when touched lightly with finger, no imprint remains.

1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.

Combine the flour, baking powder, baking soda and salt; gradually stir into the creamed mixture. Drop by rounded spoonfuls onto the prepared cookie sheet.

1/2 cup butter, softened
1 (8 ounce) package cream cheese, softened
2 large eggs
1 (18 1/4 ounce) box pineapple cake mix
1/2 cup chopped walnuts
3/4 cup chopped candied red cherries
1 cup flaked coconut

Steps:

  • Preheat oven to 375*.
  • In a large mixing bowl, combine butter and cream cheese. With an electric mixer on medium speed, beat until creamy. Add eggs; beat 2 minutes scraping bowl after 1 minute. Add cake mix. Reduce mixer speed to low; beat until well combined. Fold in walnuts, cherries and coconut.
  • On an ungreased cookie sheet, drop dough by rounded tablespoons 2 inches apart. Bake for 13 to 15 minutes, until lightly browned. Remove from oven. Cool on pan 2 minutes before removing to a wire rack to cool completely.

6 egg yolks
4 eggs
2 cups butter, softened
2 1/2 cups white sugar
7 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 tablespoon vanilla extract
3/4 teaspoon almond extract
4 cups confectioners' sugar
1/4 cup vegetable oil
1/2 teaspoon vanilla extract
1 tablespoon hot water or as needed

Steps:

  • In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs, one at a time, mixing well after each. Add almond extract and beat until just combined. Combine flour, baking powder, and salt; stir into the sugar mixture. Cover dough and chill for at least 1 hour. Preheat the oven to 375°F. Grease cookie sheets or line with parchment or baking sheet liners. On a floured surface, roll the dough out to 1/2-inch-thick and cut into desired shapes using cookie cutters. Place 2-inches apart on to the prepared baking sheets. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. These tasty little cookies melt in your mouth. They taste just like he Cheryl & Co. sugar cutouts, however these are made with a cookie press (much easier!!). So good!!

1 cup butter or 1 cup margarine, softened
3/4 cup sugar
1 egg
1/2 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter or 1/2 cup margarine, softened
3 -4 cups confectioners' sugar
1 teaspoon vanilla extract
1/3 cup milk
desired food coloring

Steps:

  • In mixing bowl, cream together butter and sugar. Add egg, vanilla; mix well. Combine flour, baking powder and salt; add to creamed mixture and mix well.
  • Put dough into cookie press with desired plate; form cookies onto ungreased cookie sheets. Bake at 375 degrees for 6-8 minutes or until set, not brown (this part is important! DO NOT OVER COOK!). Cool on wire racks.
  • Beat together butter, vanilla and 2 cups powdered sugar in mixing bowl. Add milk. Continue adding sugar in 1/2 cup increments until desired consistency is reached. Add food coloring to all or a portion of frosting and frost cookies. Enjoy!
