CHERRY TOMATOES WITH BUTTERMILK BLUE CHEESE DRESSING



Cherry Tomatoes with Buttermilk Blue Cheese Dressing image

Number Of Ingredients 9

½ cup blue cheese crumbles
½ cup buttermilk
2 tablespoons extra-virgin olive oil
2 tablespoons freshly squeezed lemon juice
½ teaspoon salt
¼ teaspoon ground black pepper
1 bunch fresh chives (minced (reserve some for garnish))
3 cups cherry or grape tomatoes (or use a mix of the two!)
1 tablespoon fresh rosemary (finely chopped, for garnish)

Steps:

  • Mix blue cheese crumbles, buttermilk and olive oil in a medium bowl and stir together with a fork. Mash blue cheese crumbles until creamy, leaving some blue cheese chunks. Add lemon, salt, pepper and chives and mix well. Set aside.
  • Rinse and dry tomatoes. Cut in half. Add tomatoes to the dressing mixture and toss to combine.
  • Garnish with reserved chives and freshly chopped rosemary.

1 cup mayonnaise
1/2 cup crumbled Maytag or other blue cheese (about 3 ounces), divided
1/2 cup half and half
2 tablespoons sour cream
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon Worcestershire sauce
1/2 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • In a medium bowl, whisk together the mayonnaise, 1/4 cup blue cheese, half and half, sour cream, lemon juice, Worcestershire, and salt, until smooth. Gently stir in the remaining 1/4 cup blue cheese and season with pepper to taste. Use now or store in the refrigerator for up to 3 days.

1 cup mayonnaise
1/2 cup sour cream
1-1/2 teaspoons minced chives
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/4 teaspoon Worcestershire sauce
1/4 to 1/2 cup buttermilk
1/2 cup crumbled blue cheese
Torn mixed salad greens

Steps:

  • In a small bowl, combine the first six ingredients. Stir in enough buttermilk to achieve desired consistency. Stir in blue cheese. Cover and store in the refrigerator. Serve with salad greens.

This is an excellent dressing for wedge salads, and for ones of grilled romaine. I love it drizzled over a pile of really, really ripe tomatoes. It's a great dip for spicy chicken wings. And it is also good with steak. The amounts listed below are merely starting points. Adjust them as you like, to achieve the flavors you like.

4 ounces blue cheese, like Roquefort, crumbled
1/4 cup buttermilk
2 tablespoons mayonnaise
1 tablespoon olive oil
1 teaspoon hot sauce
1 teaspoon lemon juice
1 dash Worcestershire sauce, to taste

Steps:

  • Sprinkle the cheese into a medium-size bowl, and mash with a whisk. Add the buttermilk, mayonnaise, olive oil, hot sauce, lemon juice and Worcestershire sauce, then mash and whisk the dressing until it is mostly smooth. You may wish for a little more hot sauce, or lemon juice or Worcestershire sauce, to taste. Then whisk again, and set aside.
