Steps:
- Drain cherries, reserving juice and 9 cherries; set aside. Chop remaining cherries., In a large bowl, combine the cheese, sugar, Amaretto, vanilla and 1 tablespoon cherry juice. In another bowl, beat whipping cream until stiff peaks form; gently fold into cheese mixture., Combine water and remaining cherry juice. Arrange 14 ladyfingers in an ungreased 9-in. square pan. Brush with 3/4 cup cherry juice mixture. Spread 1-1/3 cups cheese mixture over ladyfingers. Sprinkle with half of the chopped cherries and grated chocolate. Repeat layers., Top with remaining ladyfingers and cheese mixture. Garnish with chocolate curls and reserved cherries. Refrigerate for 1 hour before serving.

Steps:
- Combine ricotta cheese, confectioners' sugar, sour cream and coffee liqueur in a large mixing bowl; mix well.
- Set aside. In the container of an electric blender or food processor, process cookies, in small batches, until finely crushed.
- Remove 6 cherries from cherry filling; reserve for garnish. To assemble dessert, spoon 2 tablespoons ricotta cheese mixture into six 8-ounce parfait glasses.
- Add 2 tablespoons cookie crumbs to each glass; top each with 2 tablespoons cherry filling. Repeat ricotta, crumb and cherry layers. Finish each serving with an equal portion of the remaining ricotta cheese mixture.
- Garnish with reserved cherries, grated chocolate and mint leaves, if desired. Let chill 2 to 3 hours before servings.

INDIVIDUAL CHERRY TIRAMISU DESSERT CUPS
Pretty finish to an Italian themed meal. Also would be so lovely as a Valentine's Day treat. You will need 6 pretty clear serving dishes for this recipe. Use a food processor to turn some shortbread cookies into the 1 1/2 cups cookie crumbs needed.

Steps:
- Mix ricotta, powdered sugar, sour cream, and coffee liqueur well.
- Spoon 2 Tbsp ricotta mixture into each of six (8 ounce each) decorative clear serving dishes.
- Sprinkle 2 tablespoons cookie crumbs on top of each.
- Spoon 2 Tbsp cherry filling on top next.
- Repeat layers once more, plus one more ricotta layer (last layer will be more like a small dollop on top).
- Chill, covered, 2-3 hours.
- When ready to serve, garnish each with some grated chocolate, a cherry, and a sprig of fresh mint leaves.

CHERRY TIRAMISU CUPS
I prepared these for my girlfriend and I for Valentine's Day, 2007. Easy to make, and visually stunning, this cherry tiramisu can be served in martini glasses, as a perfect finish to a perfect meal. Note that the cherry sauce should be made a few hours earlier, as it will need time to cool in the fridge.

- To make the cherry sauce, bring the water to a boil in a small saucepan.
- Add as much sugar as will dissolve into the water, then add the Amaretto and lemon juice.
- Just before it starts to boil, add the cherries, and stir it over a high heat until the liquid takes on the color of the cherries.
- Reduce the heat, and simmer until most of the liquid has evaporated.
- Place the mixture in a small bowl, cover tightly, and place in the fridge.
- To make the coffee cream, simply combine the cheese, Kahlua, and coffee in a bowl, and stir until the mixture is uniform in color.
- Add sugar to taste, if necessary.
- Once the cherry sauce has cooled, arrange the three components in layers in a martini glass, with the biscuit crumbs on the bottom, cherry sauce in the middle, and coffee cream on top.
- Refridgerate until the coffee cream is firm.
- Decorate with powdered sugar, and place a cherry on top.

- Pit all the cherries (except those for decoration). In a large bowl combine Kirsch, sugar and 40g / 1.4 oz of water. Add the cherries and leave for about 10 minutes to soak. Meanwhile prepare the coffee and melt the chocolate with a pinch of salt in a glass bowl over gently simmering water.
- Drain the cherries. Pour the remaining cherry syrup into your coffee, then pour half of the mixture over half of ladyfingers. Line a large, deep glass bowl with ladyfingers, then drizzle half of the melted chocolate all over the ladyfingers. Arrange half of the cherries over the chocolate and set aside.
- Separate your eggs, put the egg yolks into a large bowl with mascarpone cheese, lemon juice, zest of 1 lemon and 120g / 4.2 oz of caster sugar. Whisk with and electric mixer on high speed for about 4 - 5 minutes or until fluffy and pale. Add the Vin Santo, stir well. Clean the whisk and whisk the whites with 50g / 1.7 oz of caster sugar until they form soft peaks. Add 1/3 of the egg whites to the egg yolk mixture and fold it in, then very gently fold in the rest of the egg whites. You will get a fluffy creamy mixture.
- Spoon half of the cream on top of the cherries. Pour the remaining cherry - coffee syrup over the remaining ladyfingers. Line them over the cherries and drizzle them with the rest of the melted chocolate. Add the cherries and then spoon over the rest of the cream. Place in the fridge for at least 1 hour.
