CLASSIC CHERRY DELIGHT

This Classic Cherry Delight comes together in just minutes and is made of three simple layers. If you want a dessert that's not overly sweet yet delicious, this is it!

7 tablespoons unsalted butter
1 1/2 cups graham cracker crumbs (about 9 whole crackers)
3 tablespoons granulated sugar
8 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon pure vanilla extract
1 container cool whip, 8 ounces
1 can cherry pie filling, 21 ounces

Steps:

  • Add the butter to a medium bowl. Microwave for 30 seconds or until melted. Add the graham cracker crumbs and sugar and mix well to combine. Pat the crumb mixture firmly into the bottom of a sprayed 8 x 8 baking dish. Set aside.
  • Add the cream cheese to a large bowl. Mix with a mixer until the cream cheese of smooth and free of any lumps. Add the powdered sugar and vanilla and mix well. Add the cool whip and mix until the cool whip and cream cheese are combined, but don't overmix.
  • Spread the filling evenly over the graham cracker crust, using a spoon or offset spatula. Spoon the cherry pie filling over the top and carefully spread it evenly over the filling.
  • Refrigerate for at least 2 hours before serving. I like to leave it overnight.
  • Refrigerate leftovers.

1 1/4 cups graham cracker crumbs* ((10 full graham cracker sheets))
1/3 cup butter (melted)
1/4 cup sugar ((I use slightly less than 1/4 cup))
1 (8 ounce) package cream cheese (softened)
1 (8 ounce) container Cool Whip (thawed)
3/4 cup confectioners' sugar
2 tablespoons fresh lemon juice
1 teaspoon pure vanilla extract
1 (21 ounce) can cherry pie filling ((or other favorite pie filling))

Steps:

  • Combine all crust ingredients and firmly press with fingers into a 9x9-inch pan or 9-inch pie dish.
  • Using a stand or hand-held electric mixer, whip softened cream cheese until fluffy. Stir in the Cool Whip, confectioners' sugar, lemon juice and vanilla with the cream cheese until smooth.
  • Spread cream cheese mixture over graham cracker crust.
  • Pour cherry pie filling over cream cheese mixture and spread in an even layer. Refrigerate until firm, at least 1 hour or overnight. I chill mine overnight for best results. The longer this dessert is refrigerated, the better it will set up.
  • Cut into squares and serve!

3 (3 ounce) packages cherry gelatin
2 3/4 cups cold water
1 (15 ounce) can dole mandarin orange segments, drained
4 ounces cream cheese, softened
2 tablespoons sugar
1 (8 ounce) container Cool Whip Topping, thawed

Steps:

  • STIR boiling water into dry gelatin mix in medium bowl at least 2 minute until completely dissolved. Stir in cold water. Refrigerate 1-1/4 hours or until slightly thickened (consistency of unbeaten egg whites). Reserve a few orange segments for garnish. Gently stir remaining orange segments into gelatin; set aside.
  • BEAT cream cheese and sugar in separate medium bowl with wire whisk until well blended. Stir in whipped topping. Spoon into 2-1/2-qt. serving bowl; cover with gelatin mixture.
  • REFRIGERATE 2 hours or until firm. Top with the reserved orange segments. Store in refrigerator.

2 1/2 c boiling water
12 oz cherry jello
2 3/4 c cold water
15 oz mandarin oranges, drained
4 oz cream cheese
2 Tbsp sugar
8 oz cool whip

Steps:

  • 1. In a bowl all jello and boiling water; stir until dissolved. Add cold water and stir. Refrigerate until it starts to set.
  • 2. To the partially set jello add oranges; stir gently, set aside.
  • 3. In mixer, beat cream cheese and sugar; add cool whip and beat until mixed. Spoon cream cheese mixture on to the bottom of a 8x8 baking dish; smoothing the mixture out evenly. Pour jello mixture over the cream cheese. Refrigerate until firm.
