WALNUT AND DRIED CHERRY BARS

Steps:
- Preheat oven to 350 degrees F. In a medium bowl, whisk together the oats, flour, wheat germ, cinnamon and salt.
- In another bowl, whisk together the honey, applesauce, oil, egg and egg white until well combined. Stir in the oatmeal mixture until well combined. Add the dried cherries and walnuts.
- Coat an 8-inch square baking pan with cooking spray. Spread the mixture into the prepared pan and bake until a toothpick inserted in the center comes out
- clean, 30 to 35 minutes. Put the preserves in a small saucepan and bring to a boil. As soon as the bars come out of the oven, brush with the preserves. Cool completely and cut into 12 bars, about 4 by1 1/2 inches each.

CHERRY CHOCOLATE NUT BARS RECIPE
Cherry chocolate nut bars are the perfect treat. They have all of the crunch along with sweet and chewy marshmallow textures.

Steps:
- Melt chocolate chips and peanut butter on low in the microwave. Stir well and add the chopped peanuts. Spread half of this mixture in a 9 x 13 inch glass pan sprayed very lightly with non stick cooking spray. Place in fridge to set up.
- Melt marshmallows in the microwave on very low stirring every 20 seconds. When melted and smooth, stir in the frosting.
- Spread this mixture carefully on top of the chocolate layer. Let cool in the fridge.
- Top with remaining chocolate for the last layer. If it has set up a little, just microwave it for about 30 seconds and stir well. Be sure to spread each layer to the edges of the pan.
- Refrigerate until firm. Cut into pieces - about 48.
- Store in refrigerator.

- Preheat oven to 350 degrees F (180 degrees C).
- Mix together flour, white sugar and butter or margarine. Mix until crumbly. Press into a 9 x 13 inch pan. Bake for 20 minutes or until lightly browned.
- Beat eggs, sugar, salt, baking powder, and vanilla. Drain and chop cherries, reserving liquid. Stir chopped cherries, nuts, and coconut into egg mixture. Pour on top of crust.
- Bake 25 min. Cool.
- Combine 1 teaspoon butter and 1 cup confectioner's sugar with enough liquid from cherries until spreadable. Frost bars. Sprinkle with coconut when icing is set.

Steps:
- Arrange 9 of the whole graham crackers in the bottom of a 8 inch square buttered pan.
- In a saucepan place, butter, brown sugar, and milk.
- Bring this to a boil.
- Add the crumbs, coconut, nuts, and cherries.
- Remove from heat.
- Blend well.
- Pour this mixture evenly over the crackers in the pan.
- Press the last 9 crackers over top, pressing slightly.
- Blend the icing sugar, butter, evaporated milk, and vanilla.
- Make a frosting smooth and creamy.
- Frost the top layer of crackers.
- Melt your square of chocolate, and drizzle over the frosting.
- Chill well before cutting into squares.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla. Combine the flour, baking powder and salt; stir into the creamed mixture. Reserve 1 1/2 cups of the dough and spread the rest into the bottom of the prepared pan. Cover this layer evenly with cherry pie filling. From Land o' Lake. I think it is unique because of the marshmallows in it. You don't really taste them (in fact everyone surprised when I said they were in there) but they add a wonderful creamy note that compliment the cherries beautifully. - In a small bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into a lightly greased 13x9-in. baking pan. Bake at 350° for 10-12 minutes or until lightly browned. - In a large bowl, combine flour and sugar. Cut in butter until mixture resembles coarse crumbs. Pat into an ungreased 13-in. x 9-in. baking pan. Bake at 350° for 18-22 minutes or until edges are lightly browned., Meanwhile, in a small bowl, combine the eggs, brown sugar, salt, baking powder and vanilla.
