STARBUCKS MICHIGAN CHERRY OAT BARS
Steps:
- Prepare the cherry filling in advance as it needs to cool. Place cherry filling ingredients in medium sauce pan and stir well. Turn the heat to medium and bring to a boil. Reduce heat to low and simmer, stirring frequently, for 8-10 minutes. Remove from heat and let cool completely. If you want the filling to be smoother and less chunky, use a hand blender to slightly break the cherries into smaller pieces.
- Preheat the oven to 350F.
- Line a 9 x 12 inch baking pan with parchment paper and set aside.
- Next prepare the base and the top dry layers. In a large bowl, stir together the oats, flour, brown sugar, baking powder and salt. Cut in the butter to form a crumbly mixture.
- Spread 2/3 of the oat mixture and pat firmly and evenly into the bottom of the baking pan.
- Spread the cherry filling evenly over the base.
- Spread cherry pie filling over oats.
- Crumble the rest of the oat mixture evenly over the cherry filling.
- Bake at 350F until light golden brown, about 40 minutes. Transfer to a cooling rack and cool completely before cutting.

- Heat oven to 350 degrees. Brush an 8-by-8-inch pan with oil and line with parchment paper.
- Combine oats, cherries, dates, cinnamon, and salt in a medium bowl. In another bowl, combine almond butter, flaxmeal, applesauce, honey, orange juice, and vanilla and stir to combine. Add wet mix to dry one and stir to combine. Press mixture evenly into pan with your fingers and bake on middle rack until golden brown and firm, 30 minutes. Let cool completely, then remove from pan and cut into 9 squares.

- Heat oven to 350ºF.
- Line 9-inch square pan with foil, with ends of foil extending over sides; spray with cooking spray. Mix cornstarch and water until blended.
- Bring cherries, lemon juice and 1/4 cup granulated sugar to boil in medium saucepan on medium-high heat, stirring frequently; simmer on medium heat 5 min. or until cherries are softened, stirring occasionally. Add cornstarch mixture; cook and stir 1 to 2 min. or until thickened. Remove from heat.
- Mix flour, oats, brown sugar and baking soda in large bowl. Cut in butter with pastry blender or 2 knives until mixture forms coarse crumbs; press half onto bottom of prepared pan. Bake 10 min. Meanwhile, mix cream cheese, egg and remaining granulated sugar until blended.
- Pour cream cheese mixture over crust; top with cherry mixture and remaining crumb mixture.
- Bake 25 to 30 min. or until golden brown. Cool completely. Use foil handles to lift dessert from pan before cutting into bars.

- Add all cherry filling ingredients to small sauce pot (2.5 c frozen cherries, 3 T water, 1/4 c white sugar, 1 T corn starch, 1 T lemon juice, pinch of salt). Cook, stirring occasionally until sauce thickens. This should take between 5-8 minuets. Break up cherries with a spoon or your rubber scraper if you desire smaller chunks of cherries. Add 1-2 T more lemon juice depending on how sweet the filling is. Place in refrigerator to cool.
- Preheat oven to 350 degrees. While cherry filling is cooling, prepare oatmeal mixture. This will be used for the base and for the topping. Add 3/4 c whole wheat flour, 1 c old fashioned rolled oats, 1/2 c dark brown sugar, 1/2 tsp baking powder and 1/2 tsp salt to large mixing bowl. Mix together. Add 1/2 cup chopped cold butter. Cut into flower/oat mixture with two knives or with a pastry cutter until butter is pea sized. (watch video to learn how to cut butter into flour mixture.
- Prepare bars by placing parchment paper in an 8x8 metal baking pan, then add 1/2 of the flour/oatmeal mixture into baking pan. Press down with a measuring cup or your clean hands to form a pressed crust with an even thickness. Pour cooled cherry mixture over base, spread over crust. Sprinkle remaining flour/oatmeal mixture to make crumbly topping. Do not press down topping. Bake for 20-30 minutes, or until cherry filling is bubbling and topping is golden brown. Remove and cool before serving. Eat as is or serve with vanilla ice cream or yogurt. Refrigerate leftovers for 3-5 days.
